Mini Chocolate-Coconut Cakes image

Using sphere-shaped molds creates the look of snowballs, but these cakes can also be made in standard muffin tins.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Time 1h40m

Yield Makes 20

Number Of Ingredients 22

Vegetable oil cooking spray
1 1/2 cups all-purpose flour
1/2 cup almond flour
1 1/2 cups sugar
3/4 cup unsweetened Dutch-process cocoa powder
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
Coarse salt
1/3 cup vegetable oil
3/4 cup sour cream
3/4 cup warm water
1 large egg plus 1 large egg yolk
1/4 cup water
1/4 cup sugar
1/2 teaspoon pure almond extract
3/4 cup plus 1 tablespoon sugar
1/3 cup water
1 tablespoon light corn syrup
3 large egg whites, room temperature
1/2 teaspoons pure almond extract
Gel-paste food coloring in red or pink
2 1/2 cups sweetened shredded coconut

Steps:

  • Make the cakes: Preheat oven to 350 degrees. Generously coat two 6-compartment nonstick sphere-shaped silicone molds with cooking spray, and transfer to a rimmed baking sheet.
  • Sift flours, sugar, cocoa, baking soda, baking powder, and 3/4 teaspoon salt into the bowl of a mixer. Beat in oil, sour cream, warm water, egg, and egg yolk with mixer on low speed. Continue to beat until smooth, about 2 minutes.
  • Working in batches, divide batter among molds (3 tablespoons each). Bake, rotating sheet halfway through, until a toothpick inserted into center of each comes out clean, about 25 minutes. Let cakes cool in molds set on a wire rack for 15 minutes. Run a knife around edges of each cake to remove from molds. Let cakes cool completely on rack.
  • Meanwhile, make almond syrup: Heat water and sugar in a small saucepan over high heat, stirring, until sugar dissolves. Stir in almond extract. Brush cakes all over with warm almond syrup. Let stand for 15 minutes.
  • Meanwhile, make the frosting: Bring 3/4 cup sugar, the water, and corn syrup to a boil in a small saucepan over medium-high heat. Cook until a candy thermometer reaches 230 degrees.
  • Meanwhile, whisk egg whites to soft peaks with a mixer on medium-high speed. Whisk in remaining tablespoon sugar.
  • Once syrup reaches 230 degrees, immediately pour it down sides of bowl in a slow, steady stream with the mixer on medium-low speed. Raise speed to medium-high. Beat until cooled and stiff, but not dry, peaks form, about 5 minutes. Add almond extract and 1 drop food coloring. Continue to beat for 1 minute.
  • Frost cakes using a small offset spatula, then coat each with coconut.

COCONUT MINT CREAM CAKE

Coconut Mint Cream Cake image

Mint gives delicious lift to the coconut flavors in this cake, which gets moistness from sweetened condensed milk and coconut cream.

Provided by Clark Frasier

Yield Makes 8 to 10 servings

Number Of Ingredients 16

2 3/4 cups cake flour
4 teaspoons baking powder
3/4 teaspoon salt
1 cup whole milk
1 teaspoon vanilla extract
1 teaspoon coconut extract (optional)
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 1/2 cups sugar, divided
4 large egg whites
1 14-ounce can sweetened condensed milk
1 14-ounce can coconut cream
1/3 cup chopped fresh mint leaves
1/4 cup sugar
3 tablespoons water
1 1/2 cups heavy whipping cream, chilled
Sweetened flaked coconut

Steps:

  • Preheat oven to 350°F. Butter two 8-inch-diameter cake pans with 2-inch-high sides; dust with flour. Place round of parchment paper in each pan.
  • Sift cake flour, baking powder, and salt into medium bowl. Mix milk, vanilla extract, and coconut extract in small bowl.
  • Beat butter and 1 cup sugar in large bowl until well blended. Beat in flour mixture alternately with milk mixture in several batches, beginning and ending with flour mixture and beating just to blend after each addition.
  • With clean dry beaters, beat egg whites in another large bowl until soft peaks form. Gradually add remaining 1/2 cup sugar and beat until stiff but not dry peaks form. Fold egg whites into batter in 3 additions.
  • Divide batter between prepared pans. Bake until tester inserted into center of cakes comes out clean, about 35 minutes.
  • Meanwhile, combine condensed milk and coconut cream in medium bowl.
  • Remove cakes from oven and let cool 5 minutes. Poke holes all over top of each cake layer with skewer. Pour coconut cream mixture by half cupfuls over cakes, allowing mixture to be absorbed before adding more. Cool completely in pans.
  • Stir 1/3 cup mint, sugar, and 3 tablespoons water in small saucepan over low heat until sugar dissolves. Cook just until bubbles appear. Cover and remove from heat; let steep 30 minutes.
  • Strain syrup into large bowl, pressing on mint. Cool completely. Add 1 1/2 cups chilled whipping cream to syrup and beat until firm peaks form. Turn cakes out of pans onto separate plates. Peel off parchment.
  • Spread 1 cup mint whipped cream on 1 cake layer. Top with second cake layer. Spread remaining mint whipped cream over top and sides of cake. Sprinkle with sweetened coconut. DO AHEAD: Can be made 1 day ahead. Cover with cake dome and refrigerate.

CHOCOLATE COCONUT CAKE

Chocolate Coconut Cake image

Provided by Shiran

Number Of Ingredients 12

3/4 cup (105g) all-purpose flour
1/2 cup (50g) cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup desiccated or shredded coconut (unsweetened)
2 large eggs
1 cup (200g) granulated sugar
1 cup (240 ml) coconut cream
1/2 cup vegetable/canola oil
1/2 teaspoon pure vanilla extract
130 g/4.5 oz. semisweet or bittersweet chocolate (, finely chopped)
1/2 cup (120 ml) coconut cream

Steps:

  • Preheat oven to 350°F/180°. Grease an 8x8-inch pan
  • In a large bowl, sift together flour, cocoa powder, baking powder, and salt. Mix in coconut. Set aside.
  • In another medium bowl, whisk eggs and sugar until well combined. Add coconut cream, oil, and vanilla extract, and whisk until combined. Add egg mixture into flour mixture and fold with a rubber spatula just until combined. Do not overmix-the less you mix, the lighter the cake will be.
  • Scrape batter into prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow cake to cool completely on a wire rack.
  • To make the chocolate ganache: place chocolate and coconut cream in a medium heat-proof bowl, and microwave in 20-30 second-intervals, stirring in between each interval, until melted. Alternatively, set the bowl over a saucepan of simmering water, stirring occasionally, until melted. Pour ganache evenly over the cake. Refrigerate for 1 hour until the ganache is set.
  • Cake can be kept in the refrigerator in an airtight container for up to 5 days.
