Steps:

  • Place Reddi-wip, juice, mango, pineapple, sugar and coconut extract in blender container. Blend mixture until smooth.
  • Pour mixture into popsicle molds. Cover; insert sticks. Freeze at least 8 hours or overnight. Remove from molds. Serve immediately.

3 large mangoes, coarsely chopped
1 can (14 ounces) light coconut milk
1/4 cup sugar
1/4 cup plus 1 tablespoon fresh lime juice
Pinch of salt

Steps:

  • Puree mango, coconut milk, sugar, lime juice, and salt in a food processor. Pour into 2 1/2-ounce capacity ice-pop molds. Freeze until firm, about 4 hours.

1 package (3.4 ounces) instant vanilla pudding mix
14 freezer pop molds or14 paper cups (3 ounces each) and wooden pop sticks

Steps:

  • In a blender, combine milk, pineapple, pineapple juice and extract; cover and process until smooth. Pour into a bowl; whisk in pudding mix for 2 minutes. , Pour 1/4 cup into each mold or paper cups. Top molds with holders. If using cups, top with foil and insert sticks through foil. Freeze until firm.

4 cups frozen mango chunks
2 cups frozen pineapple chunks
1 cup canned unsweetened coconut milk
1 ⅓ cups mango juice from concentrate ((see note))
1 tablespoon honey, plus more to taste ((see note))

Steps:

  • Combine all ingredients in a blender. Blend until smooth puree forms. Add more liquid if needed.
  • Fill popsicle molds with the mixture. I use a small spoon. Freeze overnight.
  • Run each popsicle under warm water for a few seconds to release.

¾ cup unsweetened coconut milk
1¾ cups diced ripe mango
1 cup canned light coconut milk
¼ cup sugar
2 tbsp honey

Steps:

  • Puree mango in the blender with ¼ cup of the coconut milk beverage and sugar and blend until smooth. Set aside.
  • In a medium bowl combine the remaining coconut milk beverage, canned coconut milk, and honey. Mix well until combined thoroughly.
  • Pour about 2 tablespoons of mango puree into each popsicle mold then pour coconut milk mix, until all the molds are filled.
  • Place the molds in the freezer and freeze until solid, about 5 to 6 hours.
