3-Ingredient Creamy Coconut-Lime Ice Pops image

These refreshing pops blend two kinds of coconut for an extra rich, creamy flavor, and lime zest lends a lovely floral note.

1 (13.5-ounce) can full-fat unsweetened coconut milk
1 cup cream of coconut, such as Coco Lopez
1 tablespoon finely grated lime zest
Special Equipment
10 (2.5-ounce) ice-pop molds and sticks

Steps:

  • Whisk coconut milk, cream of coconut, and lime zest in a medium bowl. Divide mixture among ice-pop molds, leaving about 1/2" space at the top. Freeze until slushy, about 30 minutes.
  • Stir to redistribute lime zest, cover molds, insert sticks, and freeze until ice pops are solid, at least 2 hours.
  • Do Ahead
  • Ice pops can be made 3 months ahead. Freeze until solid, then transfer to an airtight container and keep frozen.

1 cup thai unsweetened coconut milk (Can well shaken before opening)
1/2 cup fresh lime juice
1 tablespoon lime zest
1 cup mashed fresh avocado (1 1/2 avocados)
1 teaspoon minced fresh ginger
4 tablespoons maple syrup
1/2 teaspoon coconut extract
1/2 teaspoon minced cilantro (optional) or 1/2 teaspoon lime basil (optional)
1/8 teaspoon himalayan salt
1/4 cup coconut rum (optional)

Steps:

  • Blend all ingredients till smooth and creamy.
  • Taste and add more syrup if desired.
  • Pour onto pop containers and place tops on.
  • Freeze at least 4 hours.
  • Enjoy as is or dip into melted chocolate with a touch of butter for a even more decadent treat!
  • After dipping may need to refreeze to harden.

¼ cup agave nectar
¼ cup lime juice
2 teaspoons vanilla extract
¼ teaspoon salt

Steps:

  • Blend avocado, coconut milk, agave nectar, lime juice, vanilla extract, and salt in a blender until smooth, about 1 minute. Pour mixture into ice pop molds and freeze until solid, 2 to 3 hours.

  • In a blender or in a bowl with a whisk, mix together the coconut milk, lime juice and zest, and maple syrup. Pour the mixture into a popsicle mold, filling it about 3/4 full if you’re planning to make the coconut topping. Fill to the top if foregoing the topping. Place the molds in the freezer for 40 minutes.
  • Remove the pops from the freezer. If you’re not making the coconut topping, insert popsicle sticks into each popsicle mold and freeze for an additional 4-5 hours.
  • Mix together the shredded coconut, melted coconut oil and maple syrup. After removing the popsicles after the initial 40 minutes of freezing time, top each popsicle with a tablespoon and a half of the shredded coconut mix. Insert a popsicle stick into each mold, and freeze the pops for an additional 4-5 hours.
  • To remove the popsicles from the mold, run hot water over the plastic part of the mold and gently lift the popsicles out. Enjoy immediately or place the popsicles in a freezer-safe bag for later.
