SUPER-EASY INDIAN COCONUT LADOO
This delicious and easy Indian dessert is a great way to say thank you to friends and neighbors.

- Combine coconut and cardamom in a pan over medium heat. Mix well and heat for 1 minute, but do not let coconut brown. Add food coloring. Add condensed milk. Cook and stir until coconut begins to stick together, 5 to 8 minutes. Add rose water; cook and stir until flavors blend, 8 to 10 minutes more.
- Let mixture cool until safe to handle, but still warm. Roll mixture into balls; place ladoos in cupcake liners or on a baking sheet. Serve immediately or refrigerate up to a week.

Steps:
- Place 2 cups coconut into a pan and heat over low heat until lightly toasted, making sure not to burn or change color, 2 to 3 minutes. Remove from heat.
- Bring a pot of water to a boil over high heat. Place unopened can of condensed milk into the middle of the pot; boil for 3 to 4 minutes. Remove using tongs; let cool slightly, about 5 minutes. Pour into coconut and add cardamom and vanilla extract. Mix well. Let cool enough to handle, about 5 minutes.
- Form mixture into small balls using oiled hands, as mixture will be very sticky, adding semolina as needed if very wet and runny.
- Place remaining coconut into a shallow bowl or on a plate. Roll ladoos in coconut and serve.

- First take a large pan and saute the coconut until it is slightly warm to touch. This basically removes excess moisture from the coconut. But take care to not change the color of the coconut.
- Now add the milk and sugar and mix well. Stir at regular intervals and Continue to cook in medium low flame until the mixture becomes dry.
- Now add the ghee and give a quick mix. Add the cardamom powder and mix well. Cook until the mixture turns slightly sticky starts to bind with itself.
- Turn off the flame and let it cool down until it is cold enough to touch. Grease your palm with more ghee and roll out the coconut mixture into balls. Roll the coconut ladoos into some more desiccated coconut. Leave it to cool completely to room temperature.

- Boil the milk and coconut in heavy bottom pan over medium high heat (I am using heavy non stick pan), do stir occasionally.
- After milk comes to boil reduce the heat to medium and cook for 25-30 minutes, until all the moisture is absorbed and coconut is thick and creamy consistency.
- Add sugar and cardamom to the coconut and cook for 7-8 minutes stir continuously, until all the moisture is absorbed. Coconut mix will be thick and crumbly in consistency. Turn off the heat.

- To begin with measure 1/2 cup and keep aside. Now in a pan brush ghee then add dessicated coconut roast it for 2 mins.
- After that add condensed milk,and cook in low flame till it comes together. Do not scrap the bottom too much. First it may look crumbly after sometime it forms a dough like, at this stage switch off. Let it cool down now form small balls.
- Roll the ladoos in dessicated coconut. Place them in mini cupcake liners and let it to set. Coconut ladoo is ready.
