Super-Easy Indian Coconut Ladoo image

This delicious and easy Indian dessert is a great way to say thank you to friends and neighbors.

10 ounces unsweetened flaked coconut
½ teaspoon ground cardamom
3 drops orange food coloring
1 (14 ounce) can sweetened condensed milk
1 teaspoon rose water

Steps:

  • Combine coconut and cardamom in a pan over medium heat. Mix well and heat for 1 minute, but do not let coconut brown. Add food coloring. Add condensed milk. Cook and stir until coconut begins to stick together, 5 to 8 minutes. Add rose water; cook and stir until flavors blend, 8 to 10 minutes more.
  • Let mixture cool until safe to handle, but still warm. Roll mixture into balls; place ladoos in cupcake liners or on a baking sheet. Serve immediately or refrigerate up to a week.

Easy Coconut Ladoo image

Coconut, cardamom, and condensed milk star in this super quick and easy Indian dessert that's great for gifting.

2 cups flaked coconut
1 (14 ounce) can sweetened condensed milk
2 pinches ground cardamom
2 drops vanilla extract
2 tablespoons semolina flour
½ cup flaked coconut, or more as needed

Steps:

  • Place 2 cups coconut into a pan and heat over low heat until lightly toasted, making sure not to burn or change color, 2 to 3 minutes. Remove from heat.
  • Bring a pot of water to a boil over high heat. Place unopened can of condensed milk into the middle of the pot; boil for 3 to 4 minutes. Remove using tongs; let cool slightly, about 5 minutes. Pour into coconut and add cardamom and vanilla extract. Mix well. Let cool enough to handle, about 5 minutes.
  • Form mixture into small balls using oiled hands, as mixture will be very sticky, adding semolina as needed if very wet and runny.
  • Place remaining coconut into a shallow bowl or on a plate. Roll ladoos in coconut and serve.

  • First take a large pan and saute the coconut until it is slightly warm to touch. This basically removes excess moisture from the coconut. But take care to not change the color of the coconut.
  • Now add the milk and sugar and mix well. Stir at regular intervals and Continue to cook in medium low flame until the mixture becomes dry.
  • Now add the ghee and give a quick mix. Add the cardamom powder and mix well. Cook until the mixture turns slightly sticky starts to bind with itself.
  • Turn off the flame and let it cool down until it is cold enough to touch. Grease your palm with more ghee and roll out the coconut mixture into balls. Roll the coconut ladoos into some more desiccated coconut. Leave it to cool completely to room temperature.
