These do not look like Mounds or Almond Joys, but the taste is very similar. I make these every Christmas along with my cookies and they are very easy and quick to make. They are very pretty on a tray when placed in decorated mini muffin liners.

COCONUT JOYS

Coconut Joys image

This originally comes from one of the Southern Living Christmas Family Favorites. I like mine a lot smaller than in the original recipe and I use a lot more chocolate! I make these almost every Christmas I make cookies to give out!

Provided by Gaia22

Categories     Dessert

Time 43m

Yield 5 1/2 dozen joys

Number Of Ingredients 4

1/2 cup butter
2 cups sifted powdered sugar
3 cups flaked coconut (I like Mounds brand coconut)
2/3 cup semisweet chocolate morsel

Steps:

  • Melt the butter in large pot over low heat. Take the pot off the heat.
  • Stir in sugar and coconut.
  • Shape into 3/4-inch balls and place on a large cookie sheet or sheet pan.
  • Submerge chocolate morsels bag in simmering hot water until melted, about 5 minutes. Snip a tiny piece off one corner of the bag. Drizzle chocolate over the joys.
  • Chill on cookie sheet until balls are firm and chocolate is set before storing in bags or serving.
  • In general, try to store these in the refrigerator. I am okay with them out of fridge in gift boxes for a while though.

  • If using raw almonds (vs. pre-roasted), preheat the oven to 350 F (176 C) and place 20 raw almonds on a small baking sheet.
  • While the oven preheats, pit your dates and set on a small plate. Make a “well” in the center of each date to hold in the coconut butter, and close the ends together by pinching. Set aside.
  • Add coconut butter to a small mixing bowl. It should have a creamy, spreadable consistency. If too firm, very briefly heat in the microwave in 5-second intervals. It melts quickly, so don’t heat until liquid. If it’s too liquidy, simply place in the refrigerator for 5-10 minutes to allow it to firm up. If it’s melted, it will spill out of the dates.

VEGAN ALMOND-COCONUT CANDY BARS - SO YUMMY! - GFJULES
2020-04-01 The recipe is easy, and best of all, makes a darn good stand-in for Almond Joy Candy Bars, which, while gluten free, are not dairy-free or vegan. Real Almond Joys also contain loads of other ingredients — twenty-four (24) to be exact — many of which are unpronounceable, hydrolyzed and otherwise not the healthiest.
