ALMOND JAGGERY BURFI SWEET
This simple Indian sweet is made with almonds and jaggery. It is flavored with cardamom powder.

Steps:
- Grease a tray, square pan or plate. I use a 8 inch brownie pan.
- Add almonds and cardamoms to a mixer jar. Grind them to a powder. Do not overgrind to the extent they begin to release oils.

An Indian candy-like sweet. The jaggery lends a unique carmel flavor. I use grated, desiccated coconut. Found this recipe on the internet.

Steps:
- In a small pan, toast the cashews in a tsp of the ghee. Set aside.
- In a medium saucepan (low heat) cook jaggery and coconut until blended being watchful that the coconut does not burn.
- Add milk and stir 'til well blended.
- Add the rest of the ghee, cardamom, salt, and nuts.
- Cook stirring frequently 'til mixture is slightly pliable and begins to pull away from the sides of the pan.
- Spread in a greased pan and refrigerate 'til firm or overnight.
- Remove from pan (place bottom of pan in hot water a minute).
- On a cutting board, cut into diamonds or rectangles. Wrap in waxed paper if desired.

- Roast 2 cups of coconut on a medium flame for about 5 minutes. You should get a nice, toasted smell. Stir well throughout and don't let the bottom burn.
- Add toasted coconut, 1/4 cup of jaggery syrup, elaichi powder and blend in a high powered blender. Do not add any water, just use the blender stick to thoroughly push down the mix until well grinded. If you have a traditional mixie, open the jar a few times, stir, blend again until well combined.
