1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup old-fashioned oats
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. Stir in oats and coconut., Divide dough into 4 portions. On a lightly floured surface, shape each into a 6-in.-long log. Wrap in waxed paper; freeze 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices, reshaping as needed. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 5 minutes. Remove to wire racks to cool., Freeze option: Place wrapped logs in a freezer container; return to freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Prepare and bake as directed.

1 ¼ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup butter
½ cup packed brown sugar
½ cup white sugar
1 egg
½ teaspoon vanilla extract
1 ⅓ cups flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Combine the flour, baking soda, and salt; set aside.
  • In a medium bowl, cream the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased cookie sheet. Cookies should be about 3 inches apart.
  • Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.

2 cups sugar
2 cups Land O Lakes® Butter softened
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
1 cup sweetened flaked coconut

Steps:

  • Combine all ingredients except coconut in large bowl. Beat at low speed, scraping bowl often, until well mixed. Stir in coconut.
  • Divide dough in half; shape each half into 12x2-inch log. Wrap each log in plastic food wrap; refrigerate at least 2 hours until firm.
  • Heat oven to 350°F. Cut logs into 1/4-inch slices. Place 2 inches apart onto ungreased cookie sheets. Bake 10-14 minutes or until edges are lightly browned. Cool 1 minute on cookie sheet; remove to cooling rack.

3 oz unsweetened, chocolate - i used only 2 ounces
1/4 c hot strong coffee
1/2 c butter, softened
1 c brown sugar, firmly packed
1 egg
2 c flour
1/2 tsp each - baking soda & salt
1/2 c sour cream
1/2 c coconut
some coconut extract would be good in these cookies as well - optional
FROSTING
1 1/2 oz unsweetened chocolate
1/4 c sour cream
1 Tbsp softened, butter
1 1/2 - 2 c confectioners' sugar
flaked coconut for garnish

Steps:

  • 1. Preheat oven to 375 degree F. Spray baking sheet with non stick cooking spray. Set aside. In a small saucepan, combine chocolate with 1/4 cup hot coffee, melt over low heat, stirring constantly.
  • 2. In a medium mixing bowl, cream sugar with the butter.
  • 3. Add egg and chocolate / coffee mixture. Mix well.
  • 4. Sift flour, soda and salt - add to coffee mixture alternately with sour cream , ending with flour.
  • 5. Stir in coconut. Drop by spoonfuls onto prepared baking sheet.
  • 6. Bake for 10 - 12 minutes. Move to cooling racks.
  • 7. Frosting: In a medium saucepan, combine chocolate sour cream and butter, heat until chocolate melts.
  • 8. Remove from heat and stir in sugar, blending until consistency for spreading.
  • 9. Frost warm cookies and sprinkle with coconut. Enjoy these soft, yummy cookies.

Steps:

  • Sift the flour, salt and soda together.
  • melt the chocolate in the coffee over low heat.
  • Cream the shortening and gradually add the brown sugar.
  • Add the egg and the chocolate mixture, mixing until well blended.
  • Add the sour cream alternately with the dry ingredients.
  • Stir in the coconut.
  • Drop by spoonfuls onto greased sheet.
  • Bake 375.
  • 12-15 minutes.

2 cups white sugar
1/2 cup milk
1/2 cup margarine (butter, or shortening)
pinch of salt
1 tsp. vanilla
2 1/2 cups quick cooking rolled oats (not instant)
1/2 cup coconut
6 tbsp cocoa

Steps:

  • In medium-sized saucepan, combine sugar, milk, margarine, and salt. Bring to a boil over medium heat. Reduce heat to low and simmer for 5 minutes, uncovered, stirring occasionally.
  • Remove from heat and add vanilla. Stir.
  • In large bowl, combine rolled oats, coconut, and cocoa. Stir well to combine.
  • Pour liquid ingredients over dry ingredients in bowl. Stir to combine. Mixture may seem soft but resist the urge to add more rolled oats which will make the cookies hard and chippy. Let mixture stand, undisturbed, for 15-20 minutes and it will begin to firm up.
  • Drop by spoonfuls onto wax-paper lined baking sheet. Place in refrigerator for apx. 1 hour to firm up cookies.
  • Store in airtight container. These cookies also freeze well.

  • Bake coconut for 7-10 minutes until toasted. Remove from oven and let cool completely. Meanwhile, make dough.
  • In a mixing bowl, combine flour, soda, and salt. Set aside
  • In the bowl of an electric mixer, cream coconut oil and sugars together until fluffy, about 4 minutes.
  • Mix in the eggs one at a time until incorporated and then mix in the vanilla.
  • Add the dry ingredients and mix until just combined.
  • Fold in the chips, nuts, and toasted coconut until evenly dispersed.
  • Roll dough into balls and place on a baking sheet lined with silpat mat or parchment paper. Bake for 8-10 minutes until edges are golden. Leave cookies on pan for 5 minutes before moving to a cooling rack.
