Coconut Dukkah image

Adding coconut to dukkah introduces a sweetness to the nutty/spicy Middle Eastern mix. Serve it with crudités and flatbread, or sprinkled over a carrot purée.

Number Of Ingredients 8

1/2 cup toasted unsalted almonds or pistachios
1/4 cup lightly toasted sesame seeds
2 tablespoons coriander seeds
2 tablespoons cumin seeds
1/4 cup unsweetened shredded coconut
1 tablespoon nigella seeds
1/2 teaspoon kosher salt or sea salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Finely chop the toasted almonds and place in a small bowl. Add the sesame seeds. In a dry skillet, lightly toast the coriander seeds just until fragrant and immediately transfer to a spice mill and allow to cool. In the same skillet, toast the cumin seeds just until fragrant and transfer to the spice mill. Allow to cool. When the spices have cooled, grind and add to the nuts and sesame seeds.
  • Lightly toast the coconut over medium heat in the skillet until golden, about 2 minutes. Transfer to the spice mill and allow to cool completely. Pulse a few times to coarsely grind and add to the spices and nuts. Stir in the nigella seeds, salt and pepper.

  • In a large skillet over medium heat, combine the walnuts and almonds. Cook, stirring often, until the nuts are starting to smell fragrant, about 3 minutes.
  • Add the sesame seeds to the pan and continue cooking, stirring often, until the sesame seeds are turning lightly golden on the edges. Remove the pan from the heat, and transfer the nut and seed mixture to a food processor.
  • Add the coriander, cumin, allspice, salt and pepper. Run the food processor for about 10 seconds, or until the nuts are broken into a coarse, sand-like texture (don’t overdo it!).

  • Preheat oven to 400°. Heat oil in a large deep skillet over medium-high. Cook carrots, turning once, until golden brown in spots but still very firm and crunchy, about 6 minutes. Using a slotted spoon, transfer carrots to a plate. Reserve pan with oil.
  • Mash lemongrass, garlic, chile, and ginger to a coarse paste with a mortar and pestle. (Alternatively, you can chop very finely with a chef’s knife.)
  • Set reserved skillet over medium heat; add paste. Cook, stirring often, until paste starts to soften and is golden, about 3 minutes. Pour in coconut milk and fish sauce (if using). Season with salt; bring to a simmer. Remove from heat, add carrots, and bake in oven until carrots are tender and sauce is thickened, 25–30 minutes.
  • Meanwhile, toast coconut flakes in a dry small skillet over medium heat, shaking pan occasionally, until golden, about 3 minutes. Transfer to a small bowl; wipe out skillet.
