COCONUT DROPS

Looks like a cookie, but it is much like a biscuit. Perfect for dinner and a snack.

Number Of Ingredients 10

2 ozs. Butter (unsalted)
½ cups sugar (granulated)
1 egg (lightly beaten)
½ tsp bitters
1 tsp. vanilla extract
3 cups flour
3 tsp baking powder
2 tsp cinnamon
½ cup raisins (seedless)
2 cups finely grated coconut

Steps:

  • Preheat oven to 350°F.
  • Cream the butter and sugar until smooth. Add egg, bitters and vanilla; beat well.
  • In a separate bowl, combine the flour, baking powder, and cinnamon. Add coconut and raisins.
  • Pour the liquid mixture into the dry ingredients and mix well. Add a little bit of water if necessary to moisten the batter. (However, the batter should be firm enough to hold their shape while baking).

2 cups grated coconut
1 cup all purpose flour (packed)
1/2 cup granulated or brown sugar
1 tsp aluminum-free baking powder
2 tbsp butter
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp coconut essence
1/2 tsp. vanilla essence
1 small egg

Steps:

  • Preheat the oven to about 400 degrees F.
  • Sift together the flour, baking powder, sugar, cinnamon, and nutmeg. Add the coconut.
  • Cut in the butter and mix into the flour. Add the essence to the egg and beat lightly.
  • Make a well in the middle of the flour and add the liquid. Mix into a stiff dough.
  • Drop about 2-tablespoon full of dough on a well greased sheet.
  • Bake for about 15 minutes or until golden in the oven at a lower temperature, 200 degrees F.
  • Remove and leave to cool before serving. Bake for approximately 15 minutes

OLD FASHIONED COCONUT DROPS

I like to glaze these coconut drops with sugar syrup and brown sugar.

1 cup sifted all-purpose flour
4 tablespoons butter
1 teaspoon baking powder
2 teaspoons ground cinnamon
½ cup white sugar
2 teaspoons vanilla extract
2 cups shredded coconut
½ cup raisins
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets.
  • Combine flour and margarine in a medium size mixing bowl. Mix in sugar, cinnamon and baking powder. Stir the egg into the mixture. Once the egg is well incorporated stir in the coconut, raisins and vanilla. Drop the dough in rough heaps the size of an egg onto cookie sheets.
  • Bake 8 minutes or until lightly browned.

This traditional coconut drops recipe is chucked full of grated coconut and spices. Light and delicious, the perfect sweet treat.

2 cups grated coconut (1 dry coconut)
1 teaspoon baking powder
1/2 cup sugar
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1 teaspoon nutmeg
1 cup flour
4 tablespoons butter
1 egg

Steps:

  • Set oven to 400F
  • In a large bowl, sift together the flour, cinnamon, nutmeg, and baking powder.
  • In your mixer, combine sugar and butter till creamed. Then add your egg and combine.
  • Take your dry ingredients and mix them together with the creamed mixture.
  • With a spatula, stir in the blended coconut, vanilla, and rind.
  • You would get a stiff batter.
  • Take tablespoons of dough, and drop them on a greased baking sheet. Do it in rough heaps.
  • Bake for about 18-20 minutes. Until lightly brown
  • Brush with a glaze or you can use some ginger simple syrup
