2 eggs, lightly beaten
1 cup dry bread crumbs
1 cup sweetened shredded coconut
6 mahi mahi fillets (5 ounces each)
2 tablespoons peanut or canola oil
2 medium mangoes, peeled and cubed
1/4 cup white wine or chicken broth
2 tablespoons brown sugar
1 garlic clove, halved
1 teaspoon finely chopped crystallized ginger
1 teaspoon reduced-sodium soy sauce
1/8 teaspoon pepper
2 tablespoons minced fresh basil

Steps:

  • Place flour and eggs in separate shallow bowls. In another shallow bowl, combine bread crumbs and coconut. Dip fillets in flour, eggs, then bread crumb mixture., In a large skillet over medium heat, cook fish in oil for 4-5 minutes on each side or until golden brown on the outside and fish just turns opaque in the center., Meanwhile, in a food processor, combine the mangoes, wine, brown sugar, garlic, ginger, soy sauce and pepper; cover and process until blended. Stir in basil. Serve with fish.

2 tablespoons chopped fresh cilantro

Steps:

  • Heat a grill pan over medium heat.
  • Stir coconut milk, 2 tablespoons cilantro, 2 tablespoons green onion, lime juice, ginger, garlic, and fish sauce together in a saucepan; bring to a boil. Brush the mahi mahi fillets with enough sauce to coat. Cook the remaining sauce at a boil until slightly thickened, 3 to 4 minutes.
  • Cook the mahi mahi in the grill pan until the fish flakes easily with a fork, about 7 minutes per side. Transfer to a serving platter, top with the sauce, and garnish with 2 tablespoons cilantr and 2 tablespoons green onion to serve.

1 garlic clove, minced
1 1/2 teaspoons minced peeled fresh ginger
2 teaspoons curry powder
2 teaspoons Thai red curry paste
2 teaspoons paprika
3/4 teaspoon ground cumin
2 tablespoons soy sauce
2 tablespoons tomato puree
2 tablespoons packed light brown sugar
14 ounces unsweetened coconut milk
4 mahi mahi, filets (8 ounces each)
olive oil, for grilling
salt and freshly ground black pepper

Steps:

  • Prepare the grill. Measure all the ingredients and have them ready by the stove. In a large saucepan, heat the oil over medium heat. Add the garlic and ginger, and cook for 1 minute. Reduce the heat to low, and add the curry powder, curry paste, paprika, and cumin. Stir and cook for 2 minutes.
  • Raise the heat back to medium, and add the soy sauce, tomato puree, brown sugar, and coconut milk, whisking well after each addition. When small bubbles form around the edge of the saucepan, simmer very gently for 10 minutes, whisking frequently. Do not allow it to boil.
  • Brush the mahimahi with olive oil, sprinkle with salt and pepper, and grill until cooked through. Serve immediately with the sauce.

2 tablespoons finely chopped shallot
1-1/2 teaspoons minced fresh gingerroot
1 small garlic clove, minced
1 can (13.66 ounces) light coconut milk
1 teaspoon sugar
1/8 teaspoon salt
Dash pepper
1 tablespoon butter
MAHI MAHI:
6 mahi mahi fillets (3 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
4 teaspoons grated orange zest
1 tablespoon orange juice
1-1/2 teaspoons minced fresh gingerroot
2 teaspoons garlic powder
2 teaspoons ground cumin
3/4 cup panko bread crumbs
1/2 cup chopped macadamia nuts
3 tablespoons olive oil

Steps:

  • In a small saucepan, combine the orange juice, shallot, ginger and garlic. Bring to a boil over medium-high heat. Cook for 3 minutes. Stir in the coconut milk, sugar, salt and pepper. Simmer, stirring occasionally until mixture is reduced by half, about 20 minutes. Remove from the heat and whisk in butter., Pat fish dry; place on a parchment-lined baking sheet. Sprinkle with salt and pepper. , In a small bowl, combine the orange zest, juice, ginger, garlic powder and cumin. Spoon over fish. Let stand for 10 minutes. Combine the bread crumbs, nuts and oil; mound onto each fillet., Bake, uncovered, at 425° for 14-16 minutes or until fish just turns opaque and crumb mixture is golden brown. Cover loosely with foil if crust browns too quickly. Serve with sauce.

4 (8-ounce) fillets mahi-mahi
1/4 cup rice flour (for dredging)
1/4 cup olive oil
1 teaspoon red Thai curry
1 cup coconut milk
1 tablespoon honey
2 leaves fresh basil, finely chopped

Steps:

  • In a small bowl, mix shredded coconut with 1/2 cup rice flour. In another bowl, make an egg wash with eggs and water. Dredge fillets in 1/4 cup rice flour and dip in egg wash. Dip fillets in coconut-flour mixture. Sauté fillets in oil over medium-high heat until fork tender, browning both sides. Remove fillets and set aside. In same pan, add the Thai curry, coconut milk and honey. Simmer over high heat until reduced by 1/2. To finish sauce, add basil to taste. Return fillets to pan and spoon sauce to cover. Serve with steamed jasmine rice.
