COCONUT FLOUR BREAD RECIPE
Coconut flour bread is one of the easiest recipes to start with when you start baking with coconut flour! This recipe is gluten-free, grain-free and dairy-free.

- Preheat oven to 350° F. Line an 8-by-4-inch loaf pan with parchment paper.
- Use a medium bowl, mix together all the wet ingredients, eggs, coconut oil, and honey (if using).
- In a separate bowl, mix together all the dry ingredients, coconut flour, arrowroot starch, salt, and baking powder.
- Mix the dry ingredients into the wet ingredients and whisk until the batter is lump-free.
- Pour the batter into the loaf pan and allow the batter to sit for 5 minutes. This helps the coconut flour absorb all of the liquid.
- Bake for 30-40 minutes, until the top is golden brown, until a toothpick inserted into the middle comes out dry.
- Allow the bread to cool in the pan for 10 minutes, then remove from the pan and let cool completely on a cooling rack before slicing for at least an hour.
- Store the bread in an airtight container in the fridge for up to 5 days, or slice the bread and store it in the freezer for up to 3 months.
- To unthaw frozen bread slices, remove the slices from the freezer and either leave them in a container in the fridge and they will be unthawed within a few hours or microwave at intervals of 30 seconds until thawed.

- Preheat the oven to 375 degrees F and mist a loaf pan with non-stick spray.
- Place the flour, coconut, sugar, baking powder, and salt in a medium bowl and stir to combine.
- Place the coconut milk, melted butter, egg, and extracts in a large liquid measuring cup, and whisk to combine.
- Pour the liquid ingredients into the dry, and fold together just until combined.
- Transfer the batter to the prepared pan, and bake for 55 to 65 minutes, or until a toothpick inserted in the thickest part of the bread comes out clean or with a few moist crumbs.
- Cool for 20 minutes in the pan, then invert onto a wire rack to cool completely.
- Lightly toast the coconut flakes in a dry pan over medium heat, until just beginning to turn brown. Set aside.
- Place the powdered sugar in a medium bowl and add the coconut milk and coconut extract.
- Stir together until smooth, then drizzle over the coconut bread and top with toasted coconut flakes.

- 1. Heat oven to 350^. Grease and flour 8x4-inch loaf pan; set aside. --- In a large bowl combine sugar and butter; add eggs. Beat at medium speed, scraping bowl often, until creamy. Add milk,lemon juice, butter extract and zest;continue beating until well mixed. Stir in flour, baking powder and salt until well mixed.
- 2. Filling: Reserve 2 Tablespoons of the toasted coconut. Combine cream cheese and the powdered sugar, cinnamon and nutmeg in a small bowl until well mixed. Stir in remaining coconut.

- 4. Glaze: Combine the powdered sugar, butter extract and enough rum in small bowl for desired glazing consistency. Spoon over bread, sprinkle with reserved coconut.

- Scoop the coconut solids that have risen to the top of the can, and spoon it into a stand mixer fitted with the whisk attachment. Make sure the solids have separated from the coconut water in the can - if it mixes, your coconut cream will not whip. Save the leftover coconut water for smoothies.
- Beat the on high speed until it begins to thicken and and peaks form. Don't over-mix or your cream will soften too much.
- Add the maple syrup, vanilla, salt, and lemon zest, and mix until combined. If your coconut cream is very thick, add 1 to 2 tablespoons lemon juice, if desired. If your cream isn't thick enough for the additional liquid, skip the lemon juice.

COCONUT CREAM BREAD PUDDING

- Lightly butter the bottom of a 9-inch square flameproof baking dish. Arrange the bread cubes evenly in the dish. In a large bowl, whisk together the yolks, whole eggs, coconut milk, cream of coconut, salt, nutmeg and mace. Stir in 1 cup of the coconut flakes. Pour the custard over the bread cubes, pressing the bread cubes gently to soak up the custard. Let the mixture stand for 1 hour, covered, in the refrigerator.
- Preheat the oven to 325º.
- Sprinkle the top of the pudding with the remaining 1/2 cup coconut flakes. Cover the baking dish with foil, poking a few holes in the top to release the steam. Put the baking dish into a roasting pan on the oven rack. Pour hot water into the roasting pan to come halfway up the sides of the baking dish. Bake until the pudding is firm to the touch, about 1 hour and 15 minutes. Remove the foil and bake for 15 minutes more. Remove the baking dish from the water bath and run it under the broiler, at least 4 inches from the heat, until golden, 1 to 2 minutes. Let the pudding cool completely. Cover tightly with plastic wrap and refrigerate.
- Pour the sauce over individual pudding servings, as desired. Top with toasted coconut and serve.
- Chocolate Velvet Sauce:
- Make the chocolate sauce right before serving the pudding. Put the chocolate chips in a medium heatproof bowl. In a small saucepan, bring the cream to a simmer over low heat; immediately remove it from the heat and pour it over the chocolate chips. Whisk until smooth.
- Notes:
- The chocolate sauce can be reheated in a saucepan over low heat. Add more cream, 1 tablespoon at a time as needed, to return it to the desired consistency.
