CHEWY COCONUT-MACADAMIA NUT COOKIES

Steps:
- Heat oven to 375°F. In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until well blended. On low speed, beat in flour, baking soda, cinnamon and salt until well blended. Stir in oats, coconut and nuts.
- On ungreased cookie sheets, drop dough by rounded teaspoonfuls 2 inches apart.
- Bake 8 to 10 minutes or until golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks.

This recipe is from my girlfriends mom. She used to make these when we were kids. I have had this recipe for a long time and just recently ran across it. If you like coconut, you will like these.

Steps:
- Combine the first three ingredients and pack the mixture into a buttered 8 inch square pan.
- Bake at 350 degrees for 15 minutes.
- Combine ALL remaining ingredients and pour over baked layer.
- Return to oven and bake 30 minutes longer.
- Cool completely and cut into squares.

- Sift together flour and spices.
- Add brown sugar.
- Cut in butter till mixture is crumbly.
- Blend in egg yolk.
- Put 1/4 inch thick on 15x13 ungreased cookie sheet.
- Brush top with beaten egg white. Sprinkle on top with nuts.
- Cut into diamond shapes.
- Bake in moderate oven (350°F) for 20 25 minutes or until crisp around edges.

This is my original recipe,a combination of 3 other recipes. I put this together to enter into the JAP cookie contest. 2012 It is quick and very easy. Only 9 ingredients. And a delicious contender.

Steps:
- 1. Preheat oven to 350F. Grease and flour a 16x11x1 inch pan.
- 2. Cream butter, margarine and sugar. Add egg yolk,sifted flour, cinnamon and salt. Press batter into the prepared pan. Sprinkle coconut over the batter.
- 3. Beat egg white until foamy. Spread lightly over the coconut with a spatula. Press nuts on top of the coconut,press down onto the beaten egg white.
- 4. Bake at 325 for 30 minutes. Cool and cut into 48 delicious squares.
