CHOCOLATE CHERRY COCONUT BARS

Chocolate cherry coconut bars made in a loaf pan.

Number Of Ingredients 11

3 tablespoons unsalted butter, melted
1/2 cup light brown sugar
1 large egg yolk
1/2 teaspoon vanilla
1/4 teaspoon almond extract
pinch of salt
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 cup chocolate chips
1/4 cup coconut shreds (sweet or unsweet, your choice)
1/4 cup diced Morello cherries

Steps:

  • Preheat the oven to 350°.
  • Line a 9 x 5 x 3 loaf pan with enough parchment paper to overhang the sides and make handles for lifting the blondies out.
  • In a medium bowl, stir together the melted butter and brown sugar with a wooden spoon until well blended.
  • Stir in the egg yolk, vanilla, almond extract and salt.
  • Sprinkle the flour and baking powder evenly on top and stir it together.
  • Finally, stir in the chocolate chips, coconut and cherries.
  • Bake for 22-24 minutes. Use a toothpick to test for doneness you don't want the toothpick to come out dry; some moist crumbs clinging is what you're looking for. Immediately lift the blondies out of the pan and allow to cool completely on a wire rack before devouring.

1 cup all-purpose flour
3 tablespoons confectioners' sugar
1/2 cup cold butter, cubed
FILLING:
2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup quartered maraschino cherries
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well. Stir in walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool on a wire rack. Cut into bars.

1 cup Gold Medal™ all-purpose flour
1/2 cup butter or margarine, softened
3 tablespoons powdered sugar
2 eggs
1 cup granulated sugar
3/4 cup chopped nuts
1/2 cup flaked coconut
1/2 cup chopped maraschino cherries, drained
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Grease 8- or 9-inch square pan.
  • In medium bowl, mix 1 cup flour, the butter and powdered sugar with spoon until flour is moistened. Press mixture in pan. Bake 10 minutes.
  • In medium bowl, beat eggs. Stir in remaining ingredients. Spread over baked layer.
  • Bake 25 to 30 minutes or until golden brown. Cool completely, about 30 minutes. For bars, cut into 6 rows by 5 rows.

Original recipe uses chopped walnuts in place of the chips. I prefer the chips. Also, the filling will be spread very thin. It may not look like there is going to be enough to cover the crust, but it will, and they bake up, so it's all good!

  • Combine eggs, sugar and vanilla in a bowl, then add flour, baking powder and salt. Stir in chips, cherries and coconut. Spread over crust. Bake 20-25 minutes, until firm. Cool, and then cut into bars.

1 cup butter, softened
3/4 cup granulated sugar
3/4 cup firmly packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup uncooked quick oats
2 cups white chocolate chips, divided
1 cup sweetened flaked coconut
3/4 cup dried cherries

Steps:

  • Preheat oven to 375°F.
  • Cream the butter and both sugars with an electric mixer on medium speed until creamy.
  • Add the eggs and vanilla; blend until smooth.
  • Combine the flour, baking soda, and salt; gradually add to the butter mixture with the mixer now on low speed.
  • Mix just until blended.
  • Add the oats; stir until combined.
  • Stir in 1 1/2 cups of the white chocolate chips, the coconut, and cherries; beat just until well mixed.
  • Press the dough evenly into an ungreased 15 x 10 jelly-roll pan.
  • Sprinkle the remaining white chocolate chips on top; bake 16-18 minutes, or until the edges are golden and the center is almost set.
  • Cool completely on a wire rack before cutting into diamonds, squares, or strips.
