Number Of Ingredients 11

4 cups all-purpose flour
1 1/2 teaspoons salt
1 1/2 teaspoons baking soda
20 ounces shortening
2 cups granulated sugar
14 ounces brown sugar
5 eggs, lightly beaten
1 1/2 teaspoons vanilla
1/2 lb coconut
1 1/2 cups rolled oats
8 cups corn flakes

Steps:

  • Sift together flour, salt and baking soda and set aside to add later.
  • Cream together shortening and both sugars in mixing bowl for one minute. Mix at medium speed until light and fluffy, about three minutes. Add eggs and vanilla to flour mix while on low speed until combined. Add coconut, oats and corn flakes to dough. Mix at low speed until combined.
  • Let dough rest 30 minutes.
  • Divide into five equal parts and form into rolls.
  • Slice each roll into 20 pieces; place on ungreased pan. Flatten to 1 /4 inch.
  • Bake in oven preheated to 375 degrees for 12 to 14 minutes, or until lightly brown. Remove from pan while still warm. Recipe makes about 100 cookies.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups quick-cooking oats
2 cups crisp rice cereal
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, baking soda, baking powder and salt; gradually add to creamed mixture and mix well. Stir in oats, cereal and coconut., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 7-9 minutes. Remove from pans to wire racks to cool.

1 ½ cups brown sugar
1 cup white sugar
¾ cup butter, softened
2 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
1 cup oats
1 cup crispy rice cereal (such as Rice Krispies®)
1 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat brown sugar, white sugar, and butter together with an electric mixer in a large bowl until smooth. Add 1 egg one at a time, allowing the first to blend into the butter mixture before adding the next with the vanilla.
  • Stir flour, baking soda, salt, and baking powder together in a bowl. Beat into the butter mixture until just incorporated into a dough. Fold oats, crispy rice cereal, and coconut into the dough; mixing just enough to evenly combine.
  • Drop cookie dough by teaspoonful onto baking sheets.
  • Bake in preheated oven until browned, 8 to 9 minutes. Cool cookies slightly on baking sheets before moving to cooling racks to cool completely.

1 cup crushed cornflakes cereal
1 cup rolled oats

1 ⅓ cups flaked coconut

Steps:

Steps:

  • In a large bowl, beat shortening and sugars until blended. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture. Stir in oats and coconut., Divide dough into 4 portions. On a lightly floured surface, shape each into a 6-in.-long log. Wrap in waxed paper; freeze 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices, reshaping as needed. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 5 minutes.
