1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon freshly ground nutmeg
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups grated carrots
1/2 cup sweetened flaked coconut
1/2 cup chopped pecans
1 cup butter, softened
1 package (8 oz) cream cheese, softened
1/4 cup real maple syrup
1 teaspoon vanilla
2 cups powdered sugar
1/2 cup finely chopped pecans or shredded coconut

Steps:

  • Heat oven to 350°F. Line cookie sheets with parchment paper. In small bowl, stir together flour, baking soda, baking powder, cinnamon, ginger, salt and nutmeg; set aside.
  • In large bowl, beat 1/2 cup butter, the granulated sugar and brown sugar with electric mixer on medium speed about 5 minutes or until light and fluffy. Beat in eggs, one at a time, scraping bowl after each addition. Beat in 2 teaspoons vanilla. Add carrots, coconut and pecans; beat on low speed until combined.
  • Using ice cream scoop, drop batter onto cookie sheets at least 2 inches apart to make 30 cookies.
  • Bake 12 minutes or until cookies are set; do not overbake. Cool 5 minutes. Remove from cookie sheets to cooling racks. Cool completely, about 30 minutes.
  • To make filling, in small bowl, beat 1 cup butter and the cream cheese with electric mixer on medium speed about 5 minutes or until light and fluffy. Beat in syrup and 1 teaspoon vanilla. Slowly add powdered sugar, beating until filling is smooth.
  • To make whoopie pies, sandwich filling between 2 cookies. To garnish, roll whoopie pies in pecans or coconut. Store in refrigerator.

1 (5 ounce) package instant vanilla pudding mix
1 ½ cups milk
1 ½ cups flaked coconut
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • In a large bowl, combine the pudding mix and milk until the pudding mixture thickens. Fold 1 cup of coconut and half of the nondairy whipped topping into the pudding. Pour the combination into the prepared pie crust.
  • Spread the remainder of the nondairy whipped topping on top of the pie. Sprinkle with the remainder of the coconut. Refrigerate, and serve chilled.

1 cup raw almonds
1/4 tsp sea salt ((optional))
2 Tbsp coconut sugar
5 Tbsp melted coconut oil
3 Tbsp cornstarch*
1/3 cup coconut sugar
1 pinch sea salt ((optional))
1 2/3 cups light coconut milk ((1 can coconut milk yields 1 2/3 cup // do not use carton))
1 tsp pure vanilla extract
1/2 cup shredded coconut ((optional // toasted or untoasted // plus more for topping))
2 14-ounce cans coconut cream ((or two cans full-fat coconut milk // refrigerated overnight))
1/2 tsp vanilla extract
3-7 Tbsp organic powdered sugar ((organic often indicates vegan friendliness // check package for more information))

Steps:

  • Preheat oven to 350 degrees F (176 C) and either line an 8x8-inch baking dish with parchment paper, or grease a standard pie dish (adjust number/size of pan if altering batch size). Set aside.
  • Add oats, almonds, sea salt (optional), and coconut sugar to a high-speed blender and mix/pulse on high until a fine meal is achieved.
  • Remove lid and add melted coconut oil, starting with 5 Tbsp (amount as original recipe is written // adjust if altering batch size) and adding more if it's too dry. Pulse/mix on low until a loose dough is formed, scraping down sides as needed. You should be able to squeeze the mixture between two fingers and form a dough instead of it crumbling. If too dry, add a bit more melted coconut oil.
  • Transfer mixture to prepared pie pan or baking dish and spread evenly to distribute. Then place parchment paper on top and use a flat-bottomed object, such as a drinking glass, to press down firmly until it's evenly distributed and well packed on the bottom and up the sides. If using a pie pan, use your fingers to press it evenly as possible up the sides of the dish.
  • Bake for 17-22 minutes or until the edges are golden brown and there is some browning on the surface. Remove from oven and set aside to cool.
  • In the meantime, prepare pudding by adding cornstarch, coconut sugar, and salt (optional) to a small saucepan and whisk in coconut milk to avoid clumps.
  • Place over medium heat and cook until bubbling, whisking frequently. Then reduce heat to low and continue cooking for 4-6 more minutes, using a rubber spatula to scrape the sides and bottom almost constantly.
  • Once it appears "jiggly" and a visible ribbon forms when you drizzle some over the top with your spatula, remove from heat. Whisk in vanilla and coconut flakes (optional - will add a 'crunchier' texture) and transfer to a glass or ceramic bowl and cover with plastic wrap, making sure the plastic wrap is touching the surface or it will form a film. Refrigerate until cooled and set - about 2-3 hours.
  • In the meantime, place a medium-large glass mixing bowl in the freezer for your coconut whipped cream. Remove coconut cream cans from fridge, being careful not to shake or turn them and remove top.
  • Gently scoop out the top hardened "cream" into the chilled bowl, leaving any liquid watery portion behind. You can use this for smoothies or in baking, if you wish. Otherwise discard it.
  • Use a handheld mixer to whip the coconut cream until it begins to look like whipped cream - about 1 minute. Then add desired amount of organic powdered sugar. Beat again until light and airy - about 2-3 minutes - scraping down sides as needed. Set in refrigerator (covered) to chill.
  • Once the pudding is completely cooled, is jiggly and set, add half of the coconut whipped cream and stir lightly until just combined. Set in refrigerator.
  • Add custard-coconut whip mixture to the baked crust and smooth the top with a spoon, then cover with plastic wrap and set in the refrigerator for at least 4 hours, preferably overnight, to chill/set.
  • To serve, top with remaining coconut whipped cream and toasted coconut flake, slice, and enjoy! Store leftovers gently covered in the refrigerator up to 3 days, though best within the first 48 hours.

4 tablespoons, unsalted butter, melted
3 cups, whole milk
5 , large egg yolks
5 tablespoons, cornstarch
1/4 teaspoon, salt
1/2 cup (3 1/2 ounces; 99 grams), sugar
1/2 cup (1 1/2 ounces; 43 grams), sweetened shredded coconut
1/2 teaspoon, vanilla extract
1 1/2 cups, heavy cream, chilled

Steps:

  • FOR THE CRUST: Adjust oven rack to middle position and heat oven to 325 degrees. Process cookies, coconut, sugar, flour, and salt in food processor until finely ground, about 30 seconds. Add melted butter and pulse until combined, about 6 pulses. Transfer mixture to 9-inch pie plate. Using bottom of dry measuring cup, press crumbs firmly into bottom and up sides of plate. Bake until fragrant and set, 18 to 22 minutes. Transfer plate to wire rack and let crust cool completely.
  • FOR THE FILLING: Whisk 1/4 cup milk, egg yolks, cornstarch, and salt together in large bowl. Bring sugar and remaining 2 3/4 cups milk to simmer in large saucepan over medium heat. Slowly whisk half of hot milk mixture into yolk mixture to temper.
  • Return milk-yolk mixture to remaining milk mixture in saucepan. Whisking constantly, cook over medium heat until custard is thickened and registers 180 degrees, 30 to 90 seconds. Remove from heat and stir in coconut and vanilla. Pour filling into cooled crust and spread into even layer.
  • Spray piece of parchment paper with vegetable oil spray and press flush onto surface of custard to cover completely and prevent skin from forming. Refrigerate until cold and set, at least 3 hours or up to 24 hours.
  • FOR THE TOPPING: Using stand mixer fitted with whisk attachment, whip cream, sugar, and vanilla on medium-low speed until foamy, about 1 minute. Increase speed to high and whip until stiff peaks form, 1 to 3 minutes. Spread whipped cream evenly over pie. Sprinkle coconut over top. Serve.

  • For filling: Marinate chopped dry apples and apricots in wine overnight in refrigerator or at room temperature for 1 hour. Combine grated apples, raisins and walnuts in food processor or blender, then add in the soaked dried fruit-wine mixture and process until combined. Drain and press excess moisture from carrots, zucchini and beets and mix into apple mixture along with coconut, cinnamon and nutmeg. For pie crust: Place almonds and oats in food processor and process until very finely ground. Add dates and process until chopped and mixed well. Add chia seed gel and pulse to mix in. Press mixture into a pie plate to form shell. (More chia seed gel may be added if mixture is too dry) Add filling to prepared pie crust. * to make chia seed gel, mix 3 tablespoons chia seed in 3/4 cup water and let stand for at least 15 minutes.
