1 1/2 cups sweetened shredded coconut
1 cup granulated sugar
1 tablespoon baking powder

1 cup unsweetened coconut milk ((the kind in a can))
1/4 cup unsalted butter, (melted)
1 large egg
1 teaspoon coconut extract
1 teaspoon vanilla extract
1 cup unsweetened coconut flakes
1 1/2 cups powdered sugar
1/4 cup unsweetened coconut milk ((the kind in a can))
1 teaspoon coconut extract

Steps:

  • Preheat the oven to 375 degrees F and mist a loaf pan with non-stick spray.
  • Place the flour, coconut, sugar, baking powder, and salt in a medium bowl and stir to combine.
  • Place the coconut milk, melted butter, egg, and extracts in a large liquid measuring cup, and whisk to combine.
  • Pour the liquid ingredients into the dry, and fold together just until combined.
  • Transfer the batter to the prepared pan, and bake for 55 to 65 minutes, or until a toothpick inserted in the thickest part of the bread comes out clean or with a few moist crumbs.
  • Cool for 20 minutes in the pan, then invert onto a wire rack to cool completely.
  • Lightly toast the coconut flakes in a dry pan over medium heat, until just beginning to turn brown. Set aside.
  • Place the powdered sugar in a medium bowl and add the coconut milk and coconut extract.
  • Stir together until smooth, then drizzle over the coconut bread and top with toasted coconut flakes.

6 organic eggs, at room temperature
1/2 cup coconut oil, melted and cooled
1 tablespoon raw honey (optional)
3/4 cup coconut flour
2 tablespoons arrowroot powder (optional, makes a lighter loaf)
1/2 teaspoon sea salt
1 teaspoon baking powder

Steps:

  • Preheat oven to 350° F. Line an 8-by-4-inch loaf pan with parchment paper.
  • Use a medium bowl, mix together all the wet ingredients, eggs, coconut oil, and honey (if using).
  • In a separate bowl, mix together all the dry ingredients, coconut flour, arrowroot starch, salt, and baking powder.
  • Mix the dry ingredients into the wet ingredients and whisk until the batter is lump-free.
  • Pour the batter into the loaf pan and allow the batter to sit for 5 minutes. This helps the coconut flour absorb all of the liquid.
  • Bake for 30-40 minutes, until the top is golden brown, until a toothpick inserted into the middle comes out dry.
  • Allow the bread to cool in the pan for 10 minutes, then remove from the pan and let cool completely on a cooling rack before slicing for at least an hour.
  • Store the bread in an airtight container in the fridge for up to 5 days, or slice the bread and store it in the freezer for up to 3 months.
  • To unthaw frozen bread slices, remove the slices from the freezer and either leave them in a container in the fridge and they will be unthawed within a few hours or microwave at intervals of 30 seconds until thawed.

1/2 cup unsweetened finely grated coconut
2 tablespoons sugar
1 (1/4 ounce) package active dry yeast
1/2 cup warm water
3 1/2 cups flour, plus more for kneading
3/4 teaspoon salt
1 cup coconut milk
3 tablespoons butter or 3 tablespoons non-hydrogenated vegetable shortening, melted

Steps:

  • Put coconut, sugar, yeast and water into a small non-reactive bowl and stir briefly.
  • Set aside until mixture is swollen and bubbly, about 15 minutes.
  • Mix flour and salt together in a large bowl.
  • Add yeast mixture, coconut milk and butter; using your hands or a wooden spoon, stir until well combined.
  • Turn dough out onto a well-floured surface and knead, dusting with more flour as necessary, until soft and elastic, 5 to 6 minutes.
  • Form dough into a ball, dust generously all over with flour and transfer to a clean large bowl.

3 cups all-purpose flour
1 teaspoon baking powder

1 cup chopped walnuts

Steps:

  • In a large bowl, combine the sugar, oil, eggs and extract. Combine the flour, baking powder, baking soda and salt; add to sugar mixture alternately with buttermilk, stirring just until moistened. Fold in coconut and walnuts. , Pour into two greased 8x4-in. loaf pans. Bake at 325° for 60-65 minutes or until toothpick inserted in the center comes out clean. 1/3 cup ground flax (flax meal)
1/4 cup arrowroot powder/tapioca flour* (optional)
2 teaspoons baking powder**
1/2 teaspoon sea salt
4 eggs
1/2 cup flavorless oil (like avocado oil or melted refined coconut oil)
1/3 cup dairy free milk (unsweetened almond milk, coconut, etc.)
2 tbsp honey (optional***)
sesame seeds (or other seeds of choice - like sunflower seeds, chia, flax, etc.)
ground flax

Steps:

  • Preheat your oven to 375° F. Prep a 8x4-inch loaf pan by greasing it with oil or by lining it with parchment paper.
  • One easy way to whip up the batter is by simply combining all ingredients in a blender. Pulse or blend on low speed until everything is fully combined. It will be easier for your blender, if you add the wet ingredients first.
  • If not using a blender, add all wet ingredients (eggs, oil, milk, optional honey) to a large bowl and whisk until they are well combined.
  • Next, add the dry ingredients (coconut flour, ground flax, arrowroot powder, baking powder, salt) to bowl. Then stir them onto the wet ingredients until no more pockets of dry mix remain.
  • Optionally: Separate the eggs and whip the egg whites until stiff. Proceed preparing the batter as usual otherwise. Then gently fold in the stiff egg whites as final step. (This makes for a lighter, fluffy coconut flour bread)
  • Fill the batter into the prepared loaf pan and sprinkle sesame seeds and a little ground flax over the top. Bake the Coconut Flour Bread for about 25-30 minutes until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then move to a wire rack to cool fully.
  • Store refrigerated for up to 1 week. Lightly toasting the bread slices is highly recommended.

  • In a large mixing bowl, combine the sugar, butter, eggs, coconut milk, and vanilla. Whisk well until combined.
  • Stir in the dry ingredients.
  • Fold in the coconut.
  • Transfer to a greased loaf pan.
  • Bake 45-55 minutes or until the toothpick test is clean.

  • Preheat oven to 325 degrees and spray a loaf pan with baking spray.

2 cups self-rising flour (not cake flour)
1 stick (1/2 cup) unsalted butter, softened
1/2 cup sugar
2 large eggs

Steps:

  • Preheat oven to 350°F. Butter and flour a 9- by 5- by 3-inch loaf pan, knocking out excess flour.
  • Toast and grind coconut:
  • Spread 3 cups coconut in a large shallow baking pan (1 inch deep) and toast in middle of oven, stirring occasionally, until evenly golden brown, 20 to 25 minutes. (Watch flakes carefully; edges burn quickly.) Cool completely in pan on a rack, about 15 minutes, then grind in a food processor to a coarse meal, about 40 seconds (you will have about 1 1/4 cups). Leave oven on.
  • Make batter:
  • Stir together self-rising flour, ground coconut, and remaining cup (untoasted) coconut in a large bowl. Beat together butter and sugar in another bowl with an electric mixer at medium speed until pale and creamy, 1 to 2 minutes. Add eggs 1 at a time, beating well after each addition. Whisk 1 cup water into flour mixture, then add egg mixture, whisking just until well blended.
  • Bake bread:
  • Pour batter into loaf pan, smoothing top with a spatula, and bake in middle of oven until a wooden skewer inserted in center comes out clean and top is evenly brown, 1 hour to 1 hour and 10 minutes. Cool bread to warm in pan on a rack, 10 to 15 minutes, then turn out of pan and set right side up on rack to cool completely, about 2 hours more. Cut into 1-inch-thick slices.

1 small fresh coconut
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup, plus 1 teaspoon, sugar
1/2 cup (1 stick) unsalted butter, softened
2 eggs
1/2 teaspoon vanilla
About 1/4 cup milk

Steps:

  • Using an icepick, pierce the three soft spots on the coconut. Drain the liquid and store in the refrigerator. Break the coconut into chunks and grate the flesh into a small bowl. You need at least 1 cup; more is even better.
  • Heat the oven to 325 degrees. Grease a 9-by-5-inch loaf pan.
  • In a small bowl, stir together the flour, baking powder, salt and coconut flakes.
  • In a large bowl of an electric mixer, cream 1/2 cup of the sugar with the butter until light and fluffy. Beat in the eggs, then the vanilla.
  • Measure out 1/4 cup of the coconut milk and combine it with the milk. Add the liquids to the egg mixture, alternating with the dry ingredients and stirring just until all the ingredients are blended. Spread into the prepared pan.
  • Sprinkle the teaspoon of sugar over the dough and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool on a rack before slicing.

  • Combine yeast and warm water in a large bowl. Let this stand for 5 minutes or until mixture is foamy. In a microwave-safe bowl, combine butter, 1 cup coconut milk, sugar, and salt. Microwave until the butter melts but the temperature does not exceed 110 F.
  • Whisk in the egg and powdered milk to the mixture and stir to combine. Add the resulting mixture to the bowl with the yeast. Use a wooden spoon to mix the ingredients. Add 3 and 1/2 cups of flour and continue mixing until incorporated. Add just enough of the remaining flour until a soft, shaggy dough is formed.
  • Turn dough onto a lightly floured surface and knead for 10-12 minutes. The dough should be smooth and elastic. Place it in a lightly greased bowl, cover and let rise for 1-2 hours, until the size is doubled.
  • Punch the dough down. Divide into 12 equal pieces. Shape each piece into a ball and arrange in 9-inch round pan that is lightly greased. Let the rolls rise for 45 minutes, covered with a kitchen towel or plastic wrap.
