1 1/4 cups beer
3/4 cup all-purpose flour
1/2 cup cream of wheat (uncooked)
1 teaspoon salt
2 teaspoons ground paprika
2 cups unsweetened dried shredded coconut, divided
1 lb uncooked shrimp, cleaned, peeled and deveined
peanut oil (for frying)
Chinese duck sauce or other dipping sauce

Steps:

  • Preheat oil in deep fryer or heavy sauce pan to 360°F.
  • Combine beer,flour, Cream of Wheat, salt and paprika in a medium bowl, Stir in 1 cup coconut; mix well and let stand 5 minutes.
  • Place remaining coconut in a shallow bowl.
  • Place shrimp in batter and stir to coat. Remove shrimp individually and dip into coconut, covering evenly. Fry shrimp in batches 4 minutes or until golden brown. Remove with slotted spoon and drain on paper towels.
  • Serve with your favorite dipping sauce.

1 pound of peeled tail on, cleaned and deveined shrimp. (I used the 31-40 count size)
1 tsp sea salt and cracked black pepper
1 cup of Panko bread crumbs
1 cup of flaked coconut, unsweetened or sweetened, your choice
3/4 cup of all purpose flour
1/2 tsp baking powder
1/2 tsp sea salt
1 medium egg
3/4 cup of your favorite beer

Steps:

  • Clean and devein the shrimp. Leave the tail on. Season with salt and pepper and set aside.
  • Place a silicone baking mat or parchment paper on two large baking sheets.
  • Mix the Panko bread crumbs and flaked coconut in a shallow baking pan and set aside.
  • In a medium sized bowl, combine the flour, baking powder, sea salt, egg and beer. Mix well until a thick batter forms.
  • Hold the shrimp by the tail and dip into the beer batter. Tap it to the side of the bowl to get rid of excess batter. Drop into the pan with the coconut/Panko crumbs and spoon over mixture so both sides are coated.
  • Place the coated shrimp on the prepared baking pans and place in the fridge for 1/2 hour to set.
  • Heat the oil in a deep fryer or deep sided pan to 350 º F.
  • Cook the shrimp in batches, turning once for 2-3 minutes until light golden brown. Remove with tongs or a slotted spoon to paper towels to drain excess oil.
  • Serve with your favorite dipping sauce.

½ cup all-purpose flour
⅔ cup beer
1 ½ teaspoons baking powder
¼ cup all-purpose flour
2 cups flaked coconut
24 shrimp
3 cups oil for frying

Steps:

  • In medium bowl, combine egg, 1/2 cup flour, beer and baking powder. Place 1/4 cup flour and coconut in two separate bowls.
  • Hold shrimp by tail, and dredge in flour, shaking off excess flour. Dip in egg/beer batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes. Meanwhile, heat oil to 350 degrees F (175 degrees C) in a deep-fryer.
  • Fry shrimp in batches: cook, turning once, for 2 to 3 minutes, or until golden brown. Using tongs, remove shrimp to paper towels to drain. Serve warm with your favorite dipping sauce.

1 c beer
3 tsp Creole seasoning
1 1/4 c flour
2 Tbsp baking powder
48 large raw shrimp, peeled and deveined with tails
1 bag sweetened coconut, shredded
2 c oil
SWEET AND SOUR SAUCE
2 c orange marmalade
1/4 c Dijon mustard
1 1/2 Tbsp horseradish

Steps:

  • 1. Combine eggs, beer, 3 teaspoons Creole seasoning, flour and baking powder.
  • 2. Blend well.
  • 3. Dip the shrimp in beer batter and roll in coconut.
  • 4. Fry in oil heated to 350 in deep fryer, wok or deep saucepan.
  • 5. The oil should be at least 1-1/2" deep.
  • 6. Drop shrimp in a few at a time and fry until golden brown.
  • 7. Remove and drain on paper towel.
  • 8. SAUCE - Blend together dipping sauce ingredients.

  • Slowly add the beer and whisk to form a smooth batter.
  • Place the coconut flakes in a shallow bowl.
  • One at a time, holding them by the tail, dip the shrimp into the batter to coat, then dredge in the coconut, turning to coat evenly and pressing to make the flakes adhere.
  • Fry in batches in the oil until golden, 3 to 4 minutes.
