Keto Apple Cake with Coconut Flour (nut-free) image

Keto Apple Cake with Coconut Flour is utterly moist, tender, sweet and delicious! Nut-free, Gluten-free and Primal, this cake is such a fun fall and winter treat, but also great year round. The crumb topping makes the cake extra special.

4 large eggs (ideally at room temperature (if you use cold eggs, your batter will look more curdled but will bake up fine))
1 cup coconut cream ( melted if solid and cooled to room temperature, or heavy cream)
1 cup erythritol (the brown sugar version is preferred, but not necessary) ( granulated (OR coconut sugar/maple sugar for Primal))
3/4 cup zucchini (, peeled and diced, for Keto/Low Carb; for Primal: diced apple)
2/3 cup + 1/4 cup coconut flour
1/2 cup butter (room temperature)
2 ounces cream cheese (1/4 cup, room temperature)
1 Tablespoon molasses ((does not add much in the way of carbs at all!))
1 teaspoon vanilla extract (optional)
1 teaspoon apple extract (optional (ideal for the Keto/Low Carb version of this recipe that uses zucchini))
1/2 teaspoon cinnamon
1/2 teaspoon baking soda (sifted)
1/4 teaspoon sea salt
1/4 cup coconut flour
1/4 cup coconut cream (warm or soft room temperature, or heavy cream)
1/4 cup granulated sweetener: (erythritol for Keto/Low Carb OR maple sugar/coconut sugar for Primal and Gluten-free)
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 325 degrees Fahrenheit. Grease a 9" cake pan (square or round). Set aside.

When I was doing the baking for the Autism gala back in October, I also wanted to give something to the coordinator of the event who has asked me each year to donate! I adapted this apple and coconut cake from glutenfreegoddess.blogspot.com/2010/09/coconut-flour-apple-cake.html to use up the GFCF starches and flours I had and the outcome was decadent!

3 tablespoons ground flax seeds
1/4 cup hot water
1/2 cup sorghum flour
1/2 cup rice flour
1/2 cup organic coconut flour
1/2 cup cornstarch
1 teaspoon guar gum
1/2 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon pumpkin pie spice
1 cup brown sugar
1/2 cup coconut oil
1 cup coconut milk
2 teaspoons bourbon vanilla extract
2 apples, peeled and chopped small
1/4 cup shredded unsweetened coconut
1 apple, peeled and sliced medium-thick
1 teaspoon raw sugar

Steps:

  • Preheat the oven to 350 F and line the bottom of a 10" spring form pan.
  • In a small bowl, whisk together the flaxseed and hot water. Set aside.
  • Whisk together flours, starch, guar gum, baking powder, baking soda, salt and spice. Set aside.
  • In a large bowl, beat together flax mixture, brown sugar, oil, coconut milk and vanilla until the batter is smooth.
  • Fold in the chopped apples and coconut.
  • Spread in the prepared pan and lightly press sliced apple pieces in a decorative pattern on top.
  • Sprinkle the top of the cake with raw sugar.
  • Bake 55 - 60 minutes. Do not open the oven door before 45 minutes.
  • Cool in the pan twenty minutes, then loosen the sides of the cake from the pan and remove the ring. Cool completely before slicing (although this is delicious gently reheated).

1 1/2 cups vegetable oil
2 cups white sugar
3 eggs
3 cups plain flour
3 cups diced apples
1 cup dark raisin
1 cup finely grated coconut
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla extract
3/4 cup chopped pecans (optional)

Steps:

  • Cream oil, sugar, and eggs with an electric mixer until it is well-blended.
  • Sift together flour, salt, baking soda and cinnamon.
  • Add dry ingredients to the creamed oil, sugar, and eggs, and mix thoroughly.
  • Blend in apples, coconut, raisins, pecans, and vanilla extract.
  • Mix the entire mixture very well.
  • Bake in a greased and floured "Bundt" pan at 350 for 1 hour and 15 minutes.
