1 14 oz bag sweetened coconut flakes
2 cups semi-sweet chocolate chips
2/3 cup chopped lightly salted almonds (I used Blue Diamond Low Sodium Lightly Salted - light blue bag)
1 14 oz can sweetened condensed milk (regular or fat-free works)

Steps:

  • Preheat the oven to 325F.
  • Line a large baking sheet with parchment paper and set aside.
  • In a large bowl combine coconut, chocolate chips, almonds, and sweetened condensed milk.
  • Stir until combined.
  • Scoop out dough with a cookie scoop onto prepared baking sheet.
  • Moisten the tips of your fingers with water and shape into discs. Pat the tops flat.
  • Bake cookies for 12 to 14 minutes or until tips of coconut are just starting to turn golden brown.
  • Let cool on baking sheet.
  • Store cookies in an airtight container.

Homemade Almond Joys with Dark Chocolate image

Rich, chocolatey and nutty with plenty of light, flaky coconut, Almond Joy candy bars are easier than you'd expect to make at home.

1 1/4 cup shredded sweetened coconut
1/4 cup sweetened condensed milk *
1/2 teaspoon vanilla
18-36 roasted almonds
2 cups dark chocolate chips (or the chocolate of your choice)
Optional: 2 tablespoons coconut oil
36 tiny cupcake liners (about 1" in size)

Steps:

  • Stir together the coconut, condensed milk and vanilla. It should be sticky and hold it's shape when pressed together.
  • Melt the chocolate (along with the optional coconut oil to thin it) in a glass bowl over a pan of water, or in the microwave at half power for about 2 minutes, stirring every 30 seconds or so.
  • Drizzle 1 teaspoon of chocolate into the bottom of each cup. Add 1 teaspoon of the coconut mixture. Press on the coconut slightly to make the chocolate slide up the sides of the liner.
  • Top the coconut with an almond and then pour a teaspoon of chocolate on top. Chill in the refrigerator until ready to eat. Store in the refrigerator for up to a week or in the freezer for a couple of months. Enjoy!

One of the most iconic of American candies, the Almond Joy, is famous for its creamy coconut filling topped with almonds and covered in milk chocolate. Its sibling, the Mounds bar, has the same coconut center but no almonds. Although the recipes for these two candies are top secret, it's possible to make wonderfully coconutty chocolate candies in your own home.

Yield candies

7 fluid ounces sweetened condensed milk
1 teaspoon vanilla extract
1/8 teaspoon salt
2 1/4 cups confectioners' sugar
14 ounces sweetened flaked coconut
1/2 cup whole almonds, toasted
16 ounces milk chocolate or coating chocolate

Steps:

  • 1. Line a 9-by-13-inch pan with foil and coat it with nonstick cooking spray.
  • 2. Combine condensed milk, vanilla extract, and salt in a bowl.
  • 3. Add confectioners' sugar 1 cup at a time and stir with a wooden spoon until fully incorporated.
  • 4. Add coconut and stir until combined.
  • 5. Pour the mixture into the baking pan and press it into an even layer. Then press the almonds into the mixture in even rows. Chill candy in refrigerator until firm, about 1 hour.
  • 6. Using a sharp chef's knife, cut the candy into small rectangles.
  • 7. Line a baking sheet with parchment or wax paper.
  • 8. Melt and temper the chocolate, or simply melt the coating chocolate.
  • 9. Dip the bars into the chocolate, covering completely, and place them on the prepared sheet.
  • 10. Refrigerate candy for 30 minutes or until the chocolate has set.

2 cups confectioners' sugar
3 cups sweetened flaked coconut
2 ounces semi-sweet chocolate chips or 2 ounces milk chocolate chips, melted

Steps:

  • Combine melted butter, sugar and coconut and mix well.
  • Shape rounded teaspoonfuls into balls and place on cookie or baking sheet lined with waxed paper.

1 bag (14 ounces) sweetened shredded coconut
1 can (7 ounces) sweetened condensed milk (NOT evaporated milk)
1 teaspoon pure almond extract
2 large egg whites
¼ teaspoon kosher salt
8 ounces semi-sweet chocolate chips
1½ teaspoons espresso powder
½ cup finely chopped slivered almonds
2 baking sheets with parchment paper
2 tablespoons or a tablespoon small melon scoop
2 large bowls
wooden spoon
rubber spatula
electric hand mixer
cooling rack
medium size microwave-safe bowl (for melting chocolate)
nut chopper (optional)
kitchen timer

Steps:

  • Preheat oven to 325-degrees Fahrenheit.
  • Mix the coconut and sweetened condensed milk in a large bowl until combined. Set aside.
  • In another large bowl, use the hand mixer to whip the egg whites on high until stiff peaks form.
  • Add the whipped egg whites into the coconut mixture and use a rubber spatula to gently fold the egg whites into the coconut mixture until thoroughly combined.
  • Use two tablespoons or a small melon scoop to drop the macaroon dough onto parchment-lined baking sheets, spacing about 1" apart.
  • Bake the macaroons in a preheated oven for approximately 25 minutes or until the cookies are lightly golden brown.
  • Remove the baking sheets to a cooling rack and cool completely.
  • Meanwhile, melt the chocolate chips on medium-low power in a microwave until melted. *NOTE - it is best to do this in 30 seconds intervals, stirring after each interval, until the chocolate is creamy. Trying to heat the chocolate too fast will harden the chocolate instead of turning it into a creamy consistency.
  • Stir in the espresso powder to the melted chocolate.
  • Once the cookies are cooled, dollop 1 teaspoon of melted chocolate on top of each cookie and sprinkle liberally with the chopped almonds.
