3 tablespoons raw cacao powder
1 1/2 cups Medjool dates, pitted
3 tablespoons (or more) unsweetened shredded coconut or quick-cooking oats
Pinch of sea salt
Flavoring options: (choose one)
1 tablespoon unsweetened shredded coconut
1 teaspoon finely grated orange zest
1 teaspoon instant espresso powder
Coating options: (mix and match)
1/2 cup unsweetened shredded coconut
1/4 cup lightly toasted sesame seeds
1/2 cup crushed lightly toasted pistachios
1/2 cup crushed lightly toasted hazelnuts
Ingredient info: Raw cacao powder and unsweetened shredded coconut can be found at natural foods stores, specialty foods stores, and some supermarkets.

Steps:

  • Purée cacao powder, dates, 3 tablespoons coconut, and salt in a food processor until almost smooth, adding water by teaspoonfuls if too dry and crumbly and coconut by teaspoonfuls if too wet and sticky. Add desired flavoring and pulse to combine.
  • Scoop date purée by the tablespoonful and roll into 1" balls. DO AHEAD: Can be made 1 week ahead. Cover and chill.
  • Roll truffles in desired coatings to cover.

Easy Cocoa Date Truffles image

Easy cocoa date truffles require only four ingredients and are ready in under 30 minutes. These decadent truffles are a perfect after dinner treat or a snack when you are craving something sweet!

1 cup dates, (pitted)
1/3 cup cocoa powder
1/3 cup dark chocolate, (chopped)
1 tablespoon coconut oil,* (optional)
1/2 teaspoon flavored extract, such as raspberry, orange, coconut or peppermint
1/4 cup flaky sea salt, shredded coconut, chopped nuts or freeze dried fruit, ** (for topping or rolling)

Steps:

  • Soak the dates in boiling water for five minutes in order to soften them and make them easier to blend. Drain and reserve the soaking water.
  • Add the dates, cocoa powder and 2 tablespoons of the date soaking water to the bowl of a food processor. If you are using any extracts, add them in here too. Process for 4-5 minutes, scraping down the sides of the bowl several times, until very smooth. Add more water a teaspoon at a time as needed to aid in blending. You want this to be a bit thinner than the texture of cookie dough.
  • Use a cookie scoop or tablespoon to scoop the truffle batter onto a sheet pan lined with parchment paper. Don't worry about making them look nice and round right now because the batter will be too soft to roll into balls. Place the truffles in the freezer for 10 minutes, or until they are firm enough to roll between your palms into balls.
  • While the truffles are chilling: Add the dark chocolate and optional coconut oil to a microwave safe bowl. Microwave for 60 seconds, remove and stir. You will likely be able to get all the chocolate to finish melting just by stirring it. If lumps remain, microwave in 15 second intervals, stirring in between, until completely melted. Set aside
  • Once the truffles have firmed up slightly, roll each truffle between the palms of your hands into balls. Using a fork, put one truffle ball into the melted chocolate and roll around to coat completely. Place the fork under the truffle and tap on the edge of the bowl to remove excess chocolate. Gently nudge the truffle off the fork and back onto the parchment paper. Repeat with remaining truffles and chocolate. If you are topping the truffles with sea salt or anything else, sprinkle it on top right after coating because the chocolate will set quickly. Place back in the freezer for 5 minutes for the chocolate to harden completely and then enjoy!

1 cup (semi-packed/ 180 g) whole pitted dates
1/4 cup (28 g) coconut flour
3 tablespoons (15 g) unsweetened cocoa powder
(Optional) 1/8 teaspoon fine sea salt

Steps:

  • Place the dates in a small bowl; add enough boiling water to just cover the dates. Let stand for 10 to 15 minutes.
  • Drain the dates, RESERVING 1/4 cup (60 mL) of the soaking water.
  • Place the dates, coconut flour, cocoa powder, 3 tablespoons (45 mL) soaking water and (optional) salt into a food processor. Pulse, stopping to scrape the sides and bottom, until completely blended to a smooth, yet very thick, paste.
  • Using a small cookie scoop or teaspoon, divide the dough into 14 equal portions. Roll each portion into a ball (they will measure about 1-inch/2.5 cm in diameter).
  • The truffles can be enjoyed plain or rolled in coatings, such as cocoa powder, powdered sugar, finely chopped seeds or nuts, chopped unsweetened coconut flakes, natural sprinkles, cacao nibs, or Indian mukhwas.

These coconut date truffles are actually good for you! They are naturally sweetened with dates - no need for added sugar! 2 cups pitted dates
1 cup unsweetened coconut flakes
2 tbsp unsweetened cocoa powder
2 tbsp water

Steps:

  • Put dates, water, cocoa powder and 1/2 cup of coconut flakes in a food processor fitted with the steel blade (reserve the remaining 1/2 cup of coconut flakes for coating the truffles).
  • Process for 1 minute. Scrape down the sides of the food processor. Process for 4 more minutes, or until the mixture forms into a ball. If it hasn't formed into ball or turned into a smooth paste, add more water 1 tbsp at a time and process some more until it does.
  • Put the remaining 1/2 cup of coconut flakes on a large plate.
  • Line another large plate with parchment paper.
  • Take 1 tbsp of date mixture from the food processor and roll with your hands into a ball. Put the ball on a plate with coconut flakes, and roll, pressing slightly, so it's coated with coconut flakes all over. Put the truffle on parchment paper. Repeat with remaining date mixture.
