- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Combine the dates, pecans, water, banana, egg, butter, and vanilla extract in a bowl.
- Whisk flour, baking powder, cinnamon, and salt together in a separate bowl. Add to the date mixture and stir until well combined.
- Drop dough by tablespoonfuls about 1 inch apart onto the prepared baking sheet and flatten lightly with the palm of your hand.
- Bake in the preheated oven until cookies start to brown around the edges, being careful not to over-bake, for 11 to 13 minutes. Transfer cookies immediately to a wire rack to cool.

SUGAR FREE DATE COOKIES
This Sugar Free Date Cookies recipe is a simple, diabetic friendly snack that is also gluten free and vegan! The dough is easy to come together with just three healthy, dairy free ingredients of oatmeal, dates and peanut butter. These sugar free cookies are the BEST if you want a guilt free treat.

- Set the oven to 350 and line a cookie sheet with parchment paper.
- Add the oats to the food processor and process it into a flour.
- Add the peanut butter and soaked dates and process until the dough sticks together when you pinch it in your fingers.
- Roll the dough into tablespoon sized balls and line them up on the parchment lined cookie sheet. Form the balls into a cookie shape - they won't spread out when they bake.
- Bake for 10 - 12 minutes, rotating the cookie sheet half way through. Check the bottoms at 10 minutes - they should be brown. The tops don't really change colour.
- Let cool on the cookie sheet for 10 minutes then transfer to a rack. Store covered at room temperature for 7-10 days.

- Bring this to a boil for 1 1/2 minutes butter, splenda, salt, cocoa, milk.
- In large bowl mix oatmeal, peanut butter, vanilla.
- Add boiled mixture, a little at a time until you have the consistency of a drop cookie. Put wax paper on a cookie sheet, use tablespoon to form balls, drop onto wax paper. Put cookies into freezer on the tray.
- After a few hours put them into zip lock baggies. Keep the cookies in the freezer and eat them. You can eat them frozen, or let them defrost a bit.

COCOA DATE COOKIES (NO ADDED/REFINED SUGAR)
This is heavily adapted from a recipe I found in a great cookbook called "Sweet and Natural" by Janet Warrington. The dates add enough sweetness that you don't need sugar. This is not a super fudgy or super sweet cookie. But it is a nice little drop cookie when you want something tasty and relatively healthy!

- Preheat your oven to 350°F.
- Spray a large baking sheet (or two small ones) with cooking spray.
- Mix together the flour through nuts. Set aside.
- In a blender combine the dates, the eggs, the water, and the vanilla. Mix until the dates are broken up and everything is combined. This might take a few minutes and you might need to use a spatula to mix it all up.
- Add the cocoa powder to the blender and mix again. It is ok if there are little date pieces.
- Pour the blender mix into the dry and mix well. It will be fairly stiff.
- Using two tablespoons, drop the cookies onto the sprayed cookie sheets.
- Bake for 10-14 minutes or until a toothpick inserted into a cookie comes out clean.

- Place dates in a small bowl and add enough hot water to cover. Allow to sit for 10 minutes to soften.
- Preheat the oven to 350 degrees F (175 degrees C). Line 2 large baking sheets with parchment paper.
- Remove dates from water, reserving soaking liquid. Combine dates, walnuts, and vegetable oil in the bowl of a large food processor. Pulse several times until mixture forms a paste and no large chunks of dates remain; this may take several minutes. If mixture is too dry, add soaking liquid, 1 tablespoon at a time, until a paste-like consistency is reached. Add egg and vanilla extract; pulse to combine. Add oats, cocoa powder, baking soda, cinnamon, and salt. Pulse until combined, scraping down the sides of the bowl as necessary. Fold in chocolate chips; dough will be very sticky.
- Use a medium cookie scoop to place rounded balls of dough 1-inch apart on the prepared baking sheets. Press tops of dough down with damp fingers to flatten slightly.
- Bake in the preheated oven until cookies are just set, 13 to 15 minutes. Allow to cool on the baking sheets for 5 minutes before removing to wire rack to cool completely. Keep stored in refrigerator until ready to serve.
