Baked oatmeal has never been so sinfully sweet: dark chocolate cherry baked oatmeal is a cross between breakfast and dessert. This recipe features dark chocolate baked oatmeal flavored with cocoa, sugar and vanilla extract, covered in a layer of cooked, sweet cherries. Dark chocolate cherry baked oatmeal is the perfect solution for a sweet tooth, or the perfect sweet, healthy and balanced breakfast.

2 bananas (overripe)
1/4 cup unsweetened applesauce
2 tbsp sugar (I used Cane Sugar; it is coarser)
1 tbsp unsweetened cocoa powder
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp kosher salt
1 cup cashew milk (unsweetened, or almond milk or skim)
1.5 cups old fashioned oats
2 cups cherries (frozen, about a 10-12 oz bag)
1 tsp corn starch
1 tsp sugar
1 tsp lemon juice
1/4 tsp unsweetened cocoa powder

Steps:

  • Add the topping ingredients (except for the cocoa powder) to a small saucepan.
  • Cook the cherries for 10 minutes on medium heat or until broken down and into a thick jam consistency. Set aside,
  • Preheat the oven to 375F.
  • Spray a small baking dish or casserole with cooking spray. I used an 8.5" x 11" 2.5qt casserole dish for this.
  • Add the bananas to the bottom of a mixing bowl, and mash them with a fork.
  • Add the applesauce, sugar, cocoa powder, baking powder, salt, and vanilla extract, and stir to combine.
  • Add the milk. Whisk together.
  • Add the oats. Fold in.
  • Pour the mixture evenly into the baking dish.
  • Pour the cooked cherry topping on top of the oatmeal. Spread in an even layer.
  • Sprinkle with the 1/4 tsp cocoa powder.
  • Bake at 375 for 35 minutes.

2 cups sugar
1/2 cup butter, cubed
6 tablespoons 2% milk
3 tablespoons baking cocoa
1 cup peanut butter
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups quick-cooking oats
1 jar (10 ounces) maraschino cherries, well drained and finely chopped

Steps:

  • In a large saucepan, combine sugar, butter, milk and cocoa. Bring to a boil, stirring constantly. Cook and stir 3 minutes., Remove from heat; stir in peanut butter and extracts until blended. Stir in oats and cherries. Drop mixture by tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate until set. Store in airtight containers.

75g dried cherries
1 tbsp chia seeds
500ml hazelnut milk
200g jumbo porridge oats
3 tbsp cocoa powder
1 tbsp cocoa nibs
1 tsp baking powder
1 tsp vanilla extract
50g blanched hazelnuts
fat-free yogurt and sugar-free cherry compote, to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Cover the cherries with boiling water and set aside for 10 mins. Meanwhile, mix the chia seeds with 3 tbsp warm water.
  • Drain the cherries and put in a large bowl with the soaked chia and the remaining ingredients, except the hazelnuts. Tip into a 2-litre ovenproof dish and scatter over the hazelnuts, then bake for 25-30 mins until piping hot in the middle. Serve with yogurt and cherry compote, if you like.

2 cups sugar
1/4 cup butter
3 cups quick-cooking oats
1/2 cup milk
1/3 cup cocoa
1 teaspoon vanilla
1/2 cup peanut butter
1 (10 ounce) jar maraschino cherries, DRAINED AND CHOPPED

Steps:

  • Mix together in large saucepan: Sugar, Milk, Butter and Cocoa.
  • Heat on high until boiling. Hard boil exactly one (1) minute.
  • Remove from heat and in the same saucepan add peanut butter, MIX TILL DISSOLVED, ADD CHERRIES THEN VANILLA AND OATS.
  • Do not let cool off. Spoon immediately onto wax paper and let cool.
  • Eat and enjoy!
