Provided by Alton Brown

Categories     dessert

Time 1h15m

Yield 16 brownies

Number Of Ingredients 10

Soft butter, for greasing the pan
Flour, for dusting the buttered pan
4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter
1 1/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.
  • In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.
  • Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

COCOA BROWNIES W/ HONEY AND APPLESAUCE

Cocoa Brownies W/ Honey and Applesauce image

For you chocolate freaks that want to get your chocolate fix on and still feel healthy about it. I created this recipe using raw honey and applesauce. You can also use homemade pear sauce and you might experiment with a mix of bananas, applesauce and pears. I have not tried it with other flours but you might experiment with that too. I top it with a pudding made from bananas, avocadoes, cacao powder and honey (in the food processor). The pudding tastes best if allowed to rest overnight. YUUMMM! Because it's fairly healthy, I like to serve with a brunch.

DOES IT WORK: MAKING BROWNIES WITH APPLESAUCE
I recently learned that applesauce is a replacement for oil, so I decided to put it to the test on a box mix of brownies without using any oil. I wanted to keep the recipe simple in order to see if this healthy cooking hack worked, so I picked up a box mix of brownies and followed all cooking steps except, of course, swapping the amount of oil for an equal amount of unsweetened applesauce.
