The addition of sea salt takes these big, soft, chocolaty, fudgy cookies to another level. Chocolate lovers will find these cookies irresistible.

- Preheat the oven to 350 degrees F (175 degrees C). Line 2 large baking sheets with parchment paper and spray with cooking spray.
- Combine flour, cocoa powder, baking powder and 1/2 teaspoon sea salt in a bowl.
- Place butter in a saucepan over low heat and cook until melted, 3 to 5 minutes. Add chocolate chips and stir until completely melted. Remove from the heat.
- Combine brown sugar, white sugar, eggs, and vanilla extract in a bowl and beat with an electric mixer until creamy. Pour a small amount of the chocolate mixture into the egg mixture and stir until well combined. Slowly add remaining chocolate mixture, stirring constantly so the eggs don't curdle. Fold in the flour mixture until just combined. Do not overmix.
- Drop 6 large scoops of batter about 2 inches apart onto each of the prepared baking sheets.
- Bake in the preheated oven until cookies have spread and flattened to a diameter of 4 1/2 inches or larger, and the tops are crinkled and puffed, 12 to 14 minutes. Immediately sprinkle with sea salt.
- Place baking sheets on a wire rack and cool for 18 to 20 minutes. Remove cookies with a spatula onto serving platter.

BROWN BUTTER SEA SALT COOKIES

- Preheat oven to 325 degrees. Line a cookie sheet with parchment paper. In a saucepan over medium heat, melt butter until it starts to caramelize. It should smell nutty and you will see brown bits at the bottom of the pan. Be careful not to burn the butter - in which case you will have to start over. Pour browned butter into a medium bowl and stir in brown sugar and vanilla. In a small bowl, whisk flour and baking soda. Add flour mixture to butter mixture until combined. Let cool to room temperature. Using a tablespoon or small scoop, drop dough onto cookie sheet. Sprinkle with sea salt and lightly press into top of cookies. Bake 15 minutes or until lightly golden. Don't overcook, or cookies will be too dry and crumbly. If desired, melt chocolate in a double boiler or in the microwave at 15 second intervals, stirring in between. Dip cookies in chocolate and place on wax paper. Let harden in refrigerator but don't serve too cold or cookies will be very hard.

- In a small saucepan, melt butter on low to medium heat. Stir occasionally, until mixture has browned and has a nutty aroma, with small flecks at the bottom of the pan (more detailed instructions on how to brown butter here). Remove from heat and quickly stir in sugars and vanilla. Allow to cool to room temperature. In a large mixing bowl, add flour and baking soda. Stir in sugar mixture until well combined. Allow mixture to sit for at least 30 minutes, so the flour and butter can meld. Preheat oven to 325 degrees F. Scoop dough into 1″ balls and place evenly, about 2″ apart on a parchment-lined baking sheet. Sprinkle a small pinch of sea salt on each cookie, and lightly press in. If your palate errs on the saltier side, feel free to add more! Bake for 15 minutes, or until edges are crisped and middle is set. Allow to cool for 5 minutes on baking sheet, then transfer to wire rack to cool completely.

- To brown your butter start with placing your butter in a saucepan over medium high heat. Allow the butter to melt, stirring periodically. Butter will begin to bubble and foam. Keep a close eye on your butter so that it doesn't burn. Your butter will begin to show flecks and turn an amber color. Continue to watch your butter. As soon as it is caramel in color remove it from heat. Let the butter cool. You want it to solidify but remain soft.
- Place butter in the bowl of a stand mixer and cream butter together with sugars. Continue to beat until fluffy. Add eggs to batter one at a time, beating well after each addition.
- Combine flour, baking soda, baking powder and salt. Carefully add dry ingredients to your batter. Continue to mix until incorporated. Stir in oats coconut and chopped chocolate. Place batter in the refrigerator for at least an hour.
- Preheat oven to 350 degrees. Remove batter from refrigerator and scoop batter by tablespoon full and place on a lined baking sheet. Bake cookies for 8-10 minutes. Remove cookies and immediately sprinkle with just a pinch of salt. Let cookies rest on baking sheet for 3 minutes before removing to a rack to cool completely.

- Brown 1 stick of butter in a medium sized pan over medium heat. Allow the butter to melt completely Just before it starts to brown it will begin to foam up.
- Slowly whisk or swirl the butter until it begins to turn a warm chestnut color, tiny brown flecks start to form on the bottom of the pan. This is a delicate process, so stay vigilant, You want the butter browned but not burnt. Once you’ve browned the butter pour it into a bowl and allow to cool, I generally stick it in the fridge to hurry this process along (just don't leave it in too long; you still want it in liquid form).
- In your stand mixer with the paddle attachment, cream the other stick of butter with the brown sugar and granulated sugar. Mix on medium speed for 3 to 5 minutes, until light and fluffy. Add the vanilla and beat until incorporated. Be sure to scrape down the sides of the bowl periodically.
- Slowly add the brown butter, you don't want the brown butter too warm or it will melt the sugars prematurely and make for thin cookies. Mix on medium speed for another 2 minutes. Scrape the sides of the bowl.

- In a large bowl using a hand-held or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the granulated sugar and brown sugar and beat on medium high speed until fluffy and light in color. Beat in egg and vanilla on high speed. Scrape down the sides and bottom of the bowl as needed.

I always chill mine overnight.
- Remove cookie dough from the refrigerator and allow to sit at room temperature for 20 minutes– if the cookie dough chilled longer than 3 hours, let it sit at room temperature for about 30 minutes. This makes the cookie dough easier to scoop and roll.
