So easy to make, these treats are healthy but still satisfy my chocolate-loving family. Stir in raisin bran instead of bran flakes for a little extra flavorful fun. -Tracy Chappell, Hamiota, Manitoba

Number Of Ingredients 11

1 cup all-purpose flour
1/2 cup sugar
2 tablespoons baking cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup bran flakes
2 large eggs, room temperature
1 cup mashed ripe bananas (about 2 medium)
1/3 cup canola oil
1/4 cup buttermilk

Steps:

  • Preheat oven to 400°. In a large bowl, whisk the first six ingredients. Stir in bran flakes. In another bowl, whisk eggs, bananas, oil and buttermilk until blended. Add to flour mixture; stir just until moistened., Fill foil-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 12-14 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

Rich, fudgy bran muffins featuring chocolate and banana -- so good you could eat them for dessert! I promise you can't even taste the bran ?

1 1/4 cups All-Bran Original cereal
1 cup milk
3 large overripe bananas
1 egg
1/2 cup packed brown sugar
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat flour
1/4 cup cocoa
1 tsp baking powder
1/4 tsp baking soda
pinch of salt
1/2 cup chocolate chips (plus additional for top if desired)

Steps:

  • Preheat oven to 350 degrees F. Line muffin pans with about 16 paper liners.
  • In a medium bowl, combine cereal and milk. Let sit 3-4 minutes until soft.
  • Add bananas to a large mixing bowl and mash with a whisk. Whisk in egg, brown sugar applesauce and vanilla.
  • Whisk in flour, cocoa, baking powder, baking soda and salt to the bowl. Add softened bran and whisk just until combined. Stir in chocolate chips.
  • Ladle into prepared muffin pans and bake at 350 degrees F for 15-20 minutes (Mine baked exactly 19 minutes) until a toothpick comes out clean or mostly clean.
  • Let cool to room temperature (you can dive in before that, but the paper liners are difficult to remove from warm muffins!).

½ cup butter, softened
½ cup brown sugar
3 bananas, mashed
¼ cup milk
1 teaspoon vanilla extract
2 eggs
1 ½ cups all-purpose flour
½ cup wheat bran
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a muffin pan or line with paper muffin liners.
  • In a large mixing bowl, cream butter and brown sugar together until fluffy. Add bananas, milk, vanilla and eggs; mix well. Stir in flour, bran, baking powder, soda and salt; blend just until moistened. Stir in walnuts. Pour batter into prepared muffin cups.
  • Bake at 375 degrees F (190 degrees C) for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool in the cups for 5 minutes, then remove muffins and place on a wire rack to cool completely.

1 ¼ cups All-Bran Original* cereal
¾ cup 1% milk
1 cup all-purpose flour
½ cup lightly packed brown sugar
¼ cup cocoa powder
1 tablespoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 egg
¼ cup canola oil
3 large very ripe bananas (reserve 12 thin slices, mash remainder)
⅓ cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly coat 12 (2/6.5 cm) non-stick muffin pan cups with cooking spray.
  • In medium bowl, combine cereal and milk. Let stand for about 2 minutes or until cereal softens.
  • In large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda and salt. Set aside.
  • Add egg, oil and mashed bananas to cereal mixture; beat well. Add liquid mixture to dry ingredients, stirring only until just combined. Fold in chocolate chips. Portion batter evenly into prepared muffin cups. Top each cup with a reserved banana slice.
  • Bake in preheated oven for 20 minutes or until tops spring back when lightly touched.

1/4 cup Splenda sugar substitute

2 cups mashed ripe bananas
2 large eggs
3/4 cup buttermilk
3 tablespoons vegetable oil
1 teaspoon vanilla
1 2/3 cups whole wheat flour
1/2 cup cocoa, sifted
3/4 cup dark brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Butter or put paper cups in muffin pan.
  • Mash bananas.
  • Whisk in eggs, buttermilk, vegetable oil and vanilla.
  • Mix the dry ingredients.
  • Be sure to sift the cocoa.
  • Mix wet and dry ingredients until just blended.
  • Spoon the batter into the muffin cups.
  • Bake for 20-25 minutes, until done.
  • If you like, lay a slice of banana over each muffin before baking.

  • Instructions
  • Preheat oven to 375°F
  • Grease and/or line a 12 cavity muffin tin and set aside
  • In a large bowl, combine all dry ingredients (both flours, oat bran, flax, baking powder, baking soda, cinnamon and salt), stirring to combine
  • In a medium bowl combine dairy free milk, brown sugar, applesauce, oil and vanilla and whisk together
  • Stir in dried blueberries
  • Add wet ingredients to dry, and gently mix until incorporated
  • Divide batter into prepped muffin tin
  • Bake in preheated oven for 15-18 minutes, or until a toothpick inserted into the centre of the muffins comes out clean
  • Allow to cool in pan for a few minutes, then remove to a wire rack to finish cooling
  • Enjoy!
