1/2 cup granulated sugar
1/3 cup brown sugar, packed
1/2 tablespoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups unsweetened applesauce
1/2 cup vegetable oil or melted coconut oil
2 eggs (room temp if using coconut oil)
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour

Steps:

  • Preheat oven to 350°F.
  • Line muffin pan with muffins liners and set aside.
  • In a large bowl combine both sugars, baking soda, spices, and salt.
  • Add the applesauce and mix well (mixture should be completely smooth).
  • Beat in the oil, eggs, and vanilla extract.
  • Add the flour and mix until incorporated. Do not over mix!
  • Scoop the batter into the muffin pan filling the cups to the top.
  • Bake for 20 - 21 minutes until a toothpick inserted comes out with a few crumbs.
  • Cool in pan 5 minutes then transfer to a wire rack (or large plate if you don't have a rack) to continue cooling.
  • Serve warm or cooled completely.

1/2 cup whole wheat flour
3/4 cup packed brown sugar
1/4 cup baking cocoa
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4-1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/3 cup butter or 1/3 cup margarine, melted
1 cup chunky applesauce
1/4 cup half-and-half cream or 1/4 cup milk
1 egg
3/4 cup raisins
1/2 cup butter or 1/2 cup margarine, softened
2 tablespoons icing sugar (powdered)
1/8-1/4 teaspoon cinnamon

Steps:

  • Set oven to 400 degrees.
  • Grease the bottoms, or line 2-1/2-inch muffin cups with paper liners.
  • In a large bowl, stir together, the flours, brown sugar, baking cocoa, baking powder, baking soda, salt, cinnamon and nutmeg.
  • In a small bowl, stir together, melted butter, applesauce, half and half cream or milk (if using), and the egg until well blended.
  • Add to dry ingredients; stir with a wooden spoon JUST until dry ingredients are moistened.
  • Stir in raisins.
  • Fill muffin cups about 3/4 full with the batter.
  • Bake for 20-22 minutes, or until the muffins test done.
  • Remove from pans to wire racks.
  • Cool slightly.
  • Serve muffins warm with cinnamon butter.
  • To make cinnamon butter: In a small mixing bowl, beat butter, powdered sugar and cinnamon until well blended.

1 ½ teaspoons baking soda
¼ teaspoon salt
½ teaspoon ground cinnamon
¼ cup brown sugar
⅓ cup applesauce
1 egg white
½ teaspoon vanilla extract
⅔ cup milk
1 tablespoon all-purpose flour
¼ cup semisweet chocolate chips
⅓ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 8 muffin cups or line with paper muffin liners.
  • Stir together 1 cup flour, baking soda, salt and cinnamon. In a separate bowl, cream together brown sugar and applesauce. Beat in egg white and vanilla.
  • Stir flour into egg mixture alternately with milk. Mix in an additional 1 tablespoon of flour. Fold in chocolate chips and walnuts. Spoon batter into prepared muffin cups so that cups are half full.
  • Bake in preheated oven for 13 to 15 minutes, until a toothpick inserted into the center of a muffin comes out clean.

Steps:

  • In a small bowl, stir together the oats and buttermilk and let sit for 20 minutes.

1 cup applesauce
3 tbsp oil OR applesauce or mashed banana
2 tbsp milk of choice
2 tsp pure vanilla extract
2 tsp white or cider vinegar
1 cup spelt,
1/4 cup sugar or unrefined sugar
1/2 tsp salt
1/2 tsp each: baking soda and baking powder
1/4 tsp cinnamon
optional handful raisins, (crushed walnuts, shredded coconut, etc.)

Steps:

  • *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise. Bake on the center rack, 20 minutes or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. (If you loosely cover overnight on the counter or refrigerated, the liners peel off easily the next day and flavor and texture are even better.) Leftovers can be frozen if desired. Nonstick spray or paper muffin cups
2 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup Dutch process cocoa powder
1 tablespoon baking powder
1/2 teaspoon table salt
2 large eggs (at room temperature)
1 1/4 cups milk ((whole or low-fat but not nonfat))
1/3 cup mild vegetable oil
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 400°F (200°C). Position an oven rack in the center of the oven. Spray the muffin tin or line them with paper muffin cups.
  • In a medium bowl, whisk the flour, sugar, cocoa powder, baking powder, and salt.
  • In a large bowl, whisk the eggs until lightly beaten, then whisk in the milk, oil, and vanilla until smooth. Stir in the flour mixture with a wooden spoon until moistened.
  • Fill the prepared tins about 3/4 full. Reserve any leftover batter for a second batch. Bake for 20 to 23 minutes, or until the muffins have firm, rounded tops, and a toothpick inserted into the center of one muffin comes out with a few moist crumbs attached.
  • Set the pan on a wire rack to cool for 10 minutes.
  • Gently rock each muffin back and forth to release it. Remove the muffins from the pan and let them cool on the rack for 5 minutes.
  • Make them disappear. You can keep them in an airtight container or in resealable plastic bags for up to 24 hours at room temperature or stash them in the freezer for up to 2 months.

  • In a small bowl, comine the cocoa and oil, stirring until smooth.
  • Add the applesauce and egg, blending well.
