GRILLED CHEESE SANDWICHES



Grilled Cheese Sandwiches image

Number Of Ingredients 6

Eight 1/2-inch thick slices country-style sourdough bread
12 ounces Monterey jack, farmhouse cheddar, Gruyere, or imported Swiss cheese, thinly sliced
3 tablespoons unsalted butter
8 slices smoked bacon, cooked and broken into 1-inch pieces
2 vine-ripened tomatoes, sliced, and drained on paper towels for 5 minutes
8 slices baked ham

Steps:

  • Place 4 slices of bread on a cutting board. Lay half the cheese slices on the bread. Lay the bacon, tomato, or ham on top of the cheese. Cover with the remaining cheese. Top with the remaining slices of bread and press down slightly.
  • Heat a large skillet over medium-low heat and melt a tablespoon of the butter. Carefully place 2 of the sandwiches in the pan, and cook until the bread browns and the cheese is slightly melted, about 5 minutes. Turn the sandwiches with a spatula and add a small hazelnut-size piece of butter to the pan. Cook until the other side of the sandwiches is toasted and the cheese is melted, about 3 to 5 minutes more.
  • Repeat with the other sandwiches. (If at any time the bread starts to brown too quickly, lower the heat to prevent the bread from scorching before the cheese melts.) Serve.

4 slices sourdough bread
2 slices Swiss cheese
2 slices cheddar cheese
2 slices sweet onion
1 medium tomato, sliced
6 cooked bacon strips
2 tablespoons butter, softened

Steps:

  • Combine mayonnaise and mustard; spread over 2 bread slices. Layer with cheeses, onion, tomato and bacon; top with remaining bread. Spread outsides of sandwiches with butter., In a small skillet over medium heat, toast sandwiches until cheese is melted, 2-3 minutes on each side.

Number Of Ingredients 4

1 (1 lb) package sliced sourdough cocktail bread or 1 (1 lb) package rye bread
1/4 cup butter, softened
1/4 cup orange marmalade or 1/4 cup raspberry preserves
6 ounces monterey jack cheese or 6 ounces mozzarella cheese, shredded

Steps:

  • Preheat oven to 400*F.
  • Lightly spread 1 side of each piece of bread with about 1/4 teaspoons butter.
  • Place half the bread slices onto foil-lined cookie sheets, buttered side down.
  • Top each with a dab of mustard and 1 tablespoons cheese; top with another bread slice, buttered side up.
  • Bake the sandwiches, turning once, for 10-13 minutes, or until golden and the cheese is melted.
  • Cut each sandwich in half diagonally and serve immediately.

2 tablespoons butter or margarine
24 slices cocktail rye or sourdough bread
12 slices cracker-cut sharp Cheddar cheese (from 6-oz package)
3 slices (about 1 oz each) American cheese, cut into quarters

Steps:

  • Set oven control to broil. Place butter in small microwavable bowl; cover with microwavable paper towel. Microwave on High 30 to 50 seconds or until melted. Brush butter on 1 side of each bread slice.
  • On ungreased cookie sheet, place 12 bread slices, buttered sides down. Top each with 1 slice Cheddar cheese and 1 quarter-slice American cheese. Add remaining bread slices, buttered sides up.
  • Broil with tops 4 to 6 inches from heat 2 minutes. Turn sandwiches over. Broil about 1 minute longer or until golden brown and cheese is melted.

Although almost everyone seems to have their own version of the "best" grilled cheese sandwich, this one defines grilled cheese as it was meant to be. The crunchy texture of the bread and the perfectly melted cheese ensure that. To create the perfect sandwich, be sure to press it firmly after you've turned it. This compresses and crisps the bread and makes the cheese-bread ratio just right.

8 slices sourdough bread, 1/4-inch thick
2 tablespoons butter, softened
6 ounces cheddar cheese, coarsely grated

Steps:

  • Butter one side of each of the bread slices. Place 4 slices of bread, buttered side down, on your work surface. Distribute the cheese over the bread slices. Place remaining bread, buttered side up, on top of the cheese.
  • Heat a large nonstick pan over a medium-high heat for 2 minutes. Put the sandwiches into the pan, cover, and cook for 2 minutes. Remove the cover and turn the sandwiches, pressing each one firmly with a spatula to flatten slightly. Cook for 1 minute or until underside is golden brown. Turn the sandwiches once more, press with the spatula again, cook for 30 seconds, and remove from the pan. Cut in half and serve immediately.
