COCA-COLA JELLO SALAD
Coca-Cola Jello Salad is a jiggly, fruity treat studded with chopped tart cherries and crushed pineapple, with a bit of kick from the Coca-Cola. It's especially fun made in a jello mold!

Steps:
- Combine the cherry pie filling, sugar, and water in a medium saucepan and bring to a boil just long enough to dissolve the sugar, about 2 minutes.
- Stir in both packages of gelatin powder until dissolved. Cool for at least 30-45 minutes in the fridge, but be sure not to forget and let it set.
- When the jello is cool but has not begun to set yet, pour in the coca-cola and crushed pinapple, stirring to combine.
- Pour the jello into a jello mold or serving dish, then cover with plastic wrap and chill in the fridge until completely set, at least 4 hours. Unmold and serve.

COCA-COLA SALAD
This is far from your ordinary jello salad. Absolutely delicious. I make this for Thanksgiving. No one in my family likes cranberries, and this is very colorful.

- Dissolve jello packs in boiling water. Add 8 oz of Coke.
- Drain the pineapple and cherries, then add to Jello. Top with chopped walnuts and refrigerate.
- I usually use a 8 x 12 pyrex dish to make this inches.

- Use Juices from fruit instead of water to make jello-- once it's hot, add Coke.
- Put in Mixing bowl and add cream cheese, fruit, and nuts.
- Pour into mold and allow it to set.

Steps:
- Drain pineapple and cherries; reserve juice.
- Heat 1-1/2 cups of reserved juice; most of the 1-1/2 cups should be pineapple juice and just a little cherry juice.
- Dissolve Jell-O in heated juice; add softened cream cheese; whip.
- Add pineapple, cherries, and pecans.
- Stir in Cola.
- Chill until firm.
- The ounce sizes are guesses; it is the big can of cherry and pineapple; the Jell-O is the small box. When I make it I will look at sizes and edit.

- Drain juice from pineapple and cherries, heat and add jello.
- Add coke and let set for 45 minutes or until slightly thickened.
- Add pineapple, cherries, cream cheese and nuts.
- Refrigerate until set.
COCA COLA SALAD
Steps:
- 1. Drain juice from fruits and add enough water to equal 2 cups. Heat this to a boil and dissolve jello in it. Then add cola, cherries, pineapple and pecans. Grate frozen cream cheese over the top and place in refrigerator to congeal.
LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.
