3 tablespoons unsweetened cocoa powder

1 (16 ounce) package confectioners' sugar
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 16x20-inch baking pan or casserole dish.
  • Bring 1 cup butter, 3 tablespoons cocoa powder, and 1 cup cola-flavored carbonated beverage to a boil in a saucepan; stir until smooth. Combine white sugar and flour in a bowl.
  • Pour the hot butter mixture over the sugar and flour; stir until well blended. Mix buttermilk, eggs, baking soda, and vanilla extract into the mixture; fold in 1 cup pecans. Pour batter into the prepared baking pan.
  • Bake in the preheated 350 degrees F (175 degrees C) oven until a toothpick inserted in the center comes out clean, 35 minutes.
  • Melt 1/2 cup butter, 3 tablespoons cocoa powder, and 6 tablespoons cola-flavored carbonated beverage together in a saucepan over low heat until smooth; remove from heat. Steps:

  • Stir in the butter (1/2 cup), and cocoa (1/4 cup) until the butter has melted. Remove from heat, add vanilla (1 teaspoon) and Confectioners' Sugar (3 3/4 cups), and mix until smooth. Pour immediately over the hot cake.

10 tablespoons butter
5 ounces cream cheese
4 cups powdered sugar

  • Place the 4 cups of Coca Cola for the Frosting in a medium sized pot and boil over medium-high heat until the liquid is reduced to 1/3 of a cup, about 1 hour and 5 minutes. The liquid will be thick and syrupy. Set aside to cool to room temperature.
  • While the Coca Cola for the Frosting is boiling, make the Cake: Preheat oven to 350°F. Grease and line two 9-inch round cake pans with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix briefly to combine. Scatter butter across the surface of the dry ingredients and paddle on low until completely incorporated, about 2 minutes. In a separate bowl, whisk together 1 cup Coca Cola, vegetable oil, buttermilk, eggs, and vanilla. Add the liquid ingredients in 3 additions to the dry ingredients, beating the mixture on medium-low for 2 minutes between each addition. 250g/9oz self-raising flour
300g/10½oz golden caster sugar
3 heaped tbsp cocoa
generous pinch bicarbonate of soda
250g/9oz butter
250ml/8½fl oz cola drink
125ml/4¼fl oz milk
2 eggs, beaten
1 tsp vanilla extract
100g/3½oz butter
2 tbsp cola drink
2 tbsp cocoa
200g/7oz icing sugar
caramel chocolate bar (king size)
splash of double cream
2 tbsp mini marshmallows (optional)

Steps:

  • Heat the oven to 180C/350F/Gas4.
  • Sift the flour, sugar, cocoa and bicarbonate of soda into a bowl. Melt the butter and cola drink gently in a pan then add to the dry ingredients, together with the milk, eggs and vanilla.
  • Mix gently but thoroughly and tip into a buttered, loose based cake tin (24cm/9½ in diameter). Bake for about 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and leave for about 15 minutes while you make the topping. Put the butter, cola drink and cocoa into a pan and melt slowly. Bring the mixture to the boil and then pour onto the icing sugar. Beat until smooth and pour over the cake while still warm. Cool the cake in the tin.
  • Serve with the sauce, made by melting the chocolate bar gently in a pan with a splash of cream (you may want to add a little warm water to achieve a pouring consistency), stir in the marshmallows if using.
