Enjoy all the great flavors of a traditional Cobb salad, wrapped up in a tortilla. It's a tasty lunch or supper in 15 minutes!

1 cup chopped deli rotisserie chicken (from 2-lb chicken)
1 1/2 cups torn romaine lettuce
1/4 cup blue cheese dressing
1 small tomato, chopped (1/2 cup)
2 tablespoons cooked real bacon bits (from 3-oz jar)
1 hard-cooked egg, chopped
2 flour tortillas (10 inch)
1/2 avocado, peeled, sliced

Steps:

  • In medium bowl, toss chicken, lettuce and dressing to coat. Stir in tomato, bacon and egg.
  • Place tortillas on large microwavable plate; cover with microwavable plastic wrap. Microwave on High 15 to 30 seconds to soften.
  • Spoon chicken mixture down center of each tortilla to within 1 inch of edges. Top with avocado slices. Fold opposite sides of tortilla up toward center about 1 inch over filling (sides will not meet in center); roll up tortilla, beginning at 1 open end. Cut diagonally in half. Secure with toothpick, if necessary. Serve immediately.

2 cups cubed cooked chicken breast
1/2 cup chopped avocado
4 bacon strips, cooked and crumbled
1 celery rib, thinly sliced
1 green onion, sliced
2 tablespoons chopped ripe olives
2 tablespoons crumbled blue cheese
2 tablespoons lemon juice
1 tablespoon honey
1-1/2 teaspoons Dijon mustard
1 garlic clove, minced
1/4 teaspoon dill weed
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil
4 romaine leaves, torn
4 whole wheat tortillas (8 inches), warmed
1 medium tomato, chopped

Steps:

  • In a small bowl, combine chicken, avocado, bacon, celery, onion, olives and cheese. In another small bowl, combine lemon juice, honey, mustard, garlic, dill weed, salt and pepper. Whisk in oil. Pour over the chicken mixture; toss to coat. , Place romaine on each tortilla; top with 2/3 cup chicken mixture. Sprinkle with tomato; roll up.

1/4 cup blue cheese salad dressing
2 spinach or whole wheat tortillas (8 inches)
1 cup shredded cooked chicken
1 cup spring mix salad greens
1 medium tomato, halved and sliced
4 cooked bacon strips
1/2 medium ripe avocado, peeled and sliced
1 tablespoon sliced ripe olives
1 tablespoon crumbled blue cheese

Steps:

  • Spread dressing over tortillas to within 1/2 in. of edges. Layer with the remaining ingredients. Roll up tortillas.

1 boneless skinless chicken breast, cooked and chopped
12 slices bacon
4 flour tortillas, burrito size
4 cups mixed salad greens
1 1/3 cups grape tomatoes, halved
1 cup cucumber, sliced
1/4 cup red onion, thinly sliced
4 tablespoons blue cheese, crumbled (or any other cheese)
1/2 cup ranch dressing
2 hard-boiled eggs, chopped (optional)
avocado, sliced (optional)

Steps:

  • In a skillet over medium heat, cook bacon until crispy.
  • Remove and place on paper towel-lined surface to drain.
  • Chop bacon.
  • Heat wraps until pliable and layer wrap with lettuce mix and vegetables.
  • Sprinkle lettuce mix and vegetables with chicken, cheese, bacon, and any optional ingredients and drizzle with dressing.
  • Fold in sides of wrap, then fold forward to seal.

1 1/2 cups shredded cooked chicken breast
1 small avocado, pitted, peeled, cut into thin wedges
1 medium tomato, cut into thin wedges
1/4 cup finely chopped red onion
1/2 cup light blue cheese dressing
1 tablespoon red wine vinegar
4 slices bacon, crisply cooked, crumbled

Steps:

  • Place lettuce leaves on plate. Divide chicken among lettuce leaves, placing lengthwise in center. Layer with avocado and tomato wedges. Sprinkle with red onion.
  • In small bowl, mix dressing and vinegar. Drizzle over lettuce wraps. Top with crumbled bacon.

1/3 cup canola oil
1/3 cup white wine vinegar
1 garlic clove, finely minced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon Dijon mustard
2 boneless skinless chicken breasts
4 (8 inch) flour tortillas
1 (3 ounce) package cream cheese, at room temperature
2 tablespoons mayonnaise
1 cup blue cheese, crumbles
4 leaves lettuce leaves
8 slices bacon, cooked until crisp
4 slices tomatoes, cut in half (thin slices)
1 avocado, thinly sliced
4 teaspoons Italian dressing

Steps:

  • Whisk together oil, vinegar, garlic, 1 teaspoons salt, 1/2 teaspoons pepper and Dijon mustard in a shallow dish. Add chicken and marinate, refrigerated, 30 minutes to overnight.
  • Preheat grill.
  • Remove chicken from marinade and discard marinade. Grill chicken until cooked through. Remove from grill and let stand for 10 to 15 minutes before slicing thinly. Set aside.
  • Warm tortillas according to package directions when ready to serve. While tortillas are warming combine softened cream cheese, mayonnaise and blue cheese crumbles in small bowl, spread over warmed tortillas.
  • Top each tortilla with one lettuce leaf.
  • Place 2 slices bacon, 2 tomato slice halves and several slices of avocado along one half of each tortilla; top with grilled chicken slices.
  • Drizzle 1 teaspoon Italian dressing over contents of each wrap.
  • Roll up tortilla tightly, starting on side with chicken and toppings.
  • Serve immediately.
