for everyone who can't find coarse grained mustard in your area- and apparently there's a bunch of you :))time doesn't include 3 hours of marinating

Number Of Ingredients 10

1 3/4 cups white wine vinegar
2 small onions, sliced
8 sprigs fresh tarragon
1/2 cup water
4 ounces white mustard seeds
3 tablespoons ground mustard powder
1 teaspoon black pepper
2 teaspoons soy sauce
1 tablespoon honey
1 teaspoon turmeric

Steps:

  • combine vinegar onions, and tarragon in a deep bowl.
  • boil water, and add to bowl.
  • let this marinate for 3 hours.
  • strain into a saucepan.
  • grind mustard seeds with a mortar and pestle or in a processor.
  • add ground mustard and remaining ingredients to saucepan.
  • bring to a boil and simmer for 5 minutes.
  • taste and add some water to tame the heat, if necessary.
  • pour into a sterile jar, seal, and store up to 1 month.
  • let it sit for 1 day before using.

This homemade coarse-ground mustard recipe is made with whole mustard seeds and dry red wine vinegar. It's a condiment with a little kick.

1/4 cup mustard seeds (white or brown)
1/4 cup red wine vinegar
1/4 cup dry red wine
1/2 cup dry mustard
2 teaspoons salt
1/4 teaspoon ground allspice
2 tablespoons cold water

Steps:

  • Place mustard seeds, wine vinegar, and wine in a small bowl and let stand for 3 hours.
  • Pour both the seeds and liquid into the container of a blender or food processor fitted with the steel blade. Process with several on-off motions until the seeds are bruised and broken.
  • Add the dry mustard, salt, allspice , and water and process for 30 seconds. Scrape down the sides of the container with a rubber spatula and process for 30 seconds longer.
  • Keep in a well-sealed container and allow to stand overnight before using.

1/4 cup brown mustard seeds
1/4 cup yellow mustard seeds
2/3 cup dry white wine
1/2 cup white wine vinegar
1/4 cup mustard powder
1/2 teaspoon kosher salt
1 teaspoon honey (vegans, use agave nectar or maple syrup)

Steps:

  • Place mustard seeds, wine, and vinegar in a small bowl or container, cover, and let soak at room temperature for two days.
  • Transfer mustard seeds and liquid to jar of a blender.
  • Add mustard powder, salt and honey.
  • Puree until a coarse paste forms, but whole seeds still remain.
  • Transfer to an airtight container and let rest in refrigerator for 2 days before use.

  • In a small food processor or with an immersion blender, process the remaining vinegar and mustard seed mixture, sugar, and salt until coarsely ground and thickened, 1 to 2 minutes, scraping down the bowl as needed.
  • Stir in the reserved vinegar and mustard seed mixture. Using a funnel and spoon, portion mustard into two 1 cup (237 ml) jars. Cover and let the mustard stand at room temperature for 1 to 2 days to allow the ingredients to meld and develop a well-rounded spiciness. The longer it rests, the spicier it gets.
