LEMON CLOUD PIE II

This is a great pie, and a little different to our usual lemon meringue.

Number Of Ingredients 10

5 eggs, separated
¼ teaspoon cream of tartar
2 teaspoons lemon zest
1 cup white sugar
3 tablespoons cornstarch
1 cup white sugar
1 ⅓ cups water
2 teaspoons lemon zest
⅓ cup lemon juice
1 cup heavy whipping cream

Steps:

  • Beat egg whites and cream of tartar until soft peaks form. Slowly beat in 1 cup sugar, then 2 teaspoons lemon rind; continue to beat until very stiff and glossy, about 10 minutes. Spoon meringue into well buttered pie plate, and spread evenly to form a shell. Bake at 300 degrees F (150 degrees C) for 50 minutes, until firm. Cool.
  • Beat egg yolks, slowly adding remaining 1 cup sugar, beat until thick. Mix cornstarch with lemon juice, and add to yolk mixture. Stir in water and 2 teaspoons lemon rind. Cook over low heat until thick and bubbling. Remove and chill, covering with plastic wrap to keep film from forming on surface.
  • Beat whipping cream, and fold into cold lemon custard. Spoon into meringue shell. Cover, and chill 3 to 4 hours before serving.

My kids really love this easy and very tasty pie.And it's something they can whip up in a few minutes together when they suddenly get a sweet-tooth.

1 small cantainer of fresh strawberries
1 bag of strawberry gel (in the fruit section)
1 large cantainer of cool whip
1 graham cracker pie crust

Steps:

  • 1. In a large bowl mix together cut-up strawberries,strawberry gel and cool whip until well blended.Then pour into graham cracker pie crust and garnish with remaining strawberries.Chill for about 2 hours,slice and enjoy!!!

My nephew first made this and I used to ask for him to make it all the time. I finally started making it this year. ALCOHOL within--- not cooked out --- Sooo yummy!

4 oz semi sweet chocolate baking bar
1 c whipping cream
1 1/2 oz cream cheese
1/4 c kahlua
1/8 c sugar
1/8 c powdered sugar
1 graham cracker pie crust
cool whip

Steps:

  • 1. Combine Chocolate and 1 1/2 Tablespoons cream in heavy saucepan; cook over low heat until the chocolate melts. Beat cream cheese in a small mixing bowl, add sugar, ! Tablespoon cream and the chocolate mixture ( I usually wait til it melts and cools a minute or so). Gradually add kahlua. Set aside.
  • 2. Whip remaining cream in separate bowl until stiff with electric mixer on high spped; add powdered sugar. Fold the chocolate mixture from step1 into this blending until smooth. Spoon into crust. Freeze until firm ( I usually leave all day or overnight). Add coll whip before serving to each slice. Store in freezer - if there is any left!

8 1/4 oz. crushed pineapple
8 oz. cream cheese
2 oz. whipped topping
3 T sugar
1/2 c maraschino cherries
1/2 c chopped pecans

Steps:

  • Drain pineapple, reserving 1/4 c syrup. Beat cream cheese; gradually add syrup. Prepare topping mix and fold into cream cheese mixture. Add sugar, nuts, pineapple and cherries. Chill 3 hours.

3 eggs white large, at room temperature
1/8 teaspoon cream of tartar
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup pecans chopped or walnuts
20 crackers round buttery, crushed
1 teaspoon baking powder
2 cups whipped cream sweetened or whipped topping
semi-sweet baking chocolate Grated (optional)

Steps:

  • Preheat oven to 350°. Butter a 9-inch pie plate.In a large mixer bowl at high speed, beat egg whites until foamy. Add cream of tartar and beat until soft peaks form when beaters are raised. Gradually beat in sugar and continue beating until stiff peaks form when beaters are raised. Add vanilla and beat into meringue. Fold in nuts, cracker crumbs, and baking powder. Spoon batter into pie plate, forming a high edge.Bake 25 minutes. Turn off heat and leave in oven 15 minutes. Cool on a wire rack.Spread with whipped cream. Cover with plastic wrap and refrigerate 12 hours. Garnish with chocolate if desired.

1 (9 inch) pie crust, baked
¾ cup white sugar
3 tablespoons cornstarch
1 cup water
1 teaspoon lemon zest
¼ cup lemon juice
1 (3 ounce) package cream cheese
2 eggs
¼ cup white sugar

Steps:

  • Combine 3/4 cup sugar, cornstarch, water, lemon peel and juice, and egg yolks in a saucepan. Beat well. Stir while cooking over medium heat until thick; it will thicken just as it starts to simmer.
  • Remove saucepan from heat. Add cream cheese to lemon mixture, and stir until incorporated.
  • In a small bowl, beat egg whites until stiff; add remaining 1/4 cup sugar. Fold sweetened egg whites into lemon mixture.
  • Spoon filling into shell and chill.
