These biscuits are light and fluffy, just like their name implies. Perfect for biscuits and gravy, breakfast sandwiches, or alongside fried chicken.

Number Of Ingredients 7

2 cups all purpose flour
1 tablespoon sugar
1/2 teaspoon salt
4 teaspoons baking powder
1/2 cup shortening
1 egg, beaten
2/3 cup milk

Steps:

  • Preheat the oven to 450 degrees F. Sift the flour, sugar, salt, and baking powder together into a bowl. Add the shortening and cut it into the flour mixture with a pastry blender until it resembles coarse crumbs. Whisk together the egg and milk. Add it to the flour mixture and stir until it forms a dough. Turn the dough out onto a floured work surface. Knead the dough approximately 20 times. Roll the dough out to a 3/4-inch thickness. Cut the biscuits using a floured 2-inch biscuit cutter. Place the biscuits on an ungreased baking sheet. Place the baking sheet in the oven and bake at 450 degrees F for 10-13 minutes or until lightly browned. Remove the baking sheet from the oven and transfer the biscuits to a wire rack to cool slightly. Serve the biscuits warm or let cool completely and store in an airtight container.

Steps:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Using your hands or a pastry cutter, work the butter into the dry ingredients until the butter breaks down to pea-sized pieces.
  • Add the milk and fold with a rubber spatula until fully incorporated and the dough comes together in a ball.
  • Scoop the dough into 12 portions onto the prepared baking sheet. Brush each biscuit with honey.
  • Bake for about 20 minutes, or until the tops are golden brown.
  • Serve the biscuits with raspberry preserves and whipped cream.

Cloud bread is soft and fluffy - like a cloud! It's a great substitute for 'regular' bread and is low in carbs. Although it's not firm enough to replace bread in a regular sandwich, I like to top one 'slice' with peanut butter and bananas, toast it with jam or with my favorite lunch meat and fillings!

3 large eggs, separated
¼ teaspoon cream of tartar
2 ounces cream cheese, very soft
1 tablespoon white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Beat egg whites and cream of tartar together in a bowl until stiff peaks form.
  • Mix egg yolks, cream cheese, and sugar together in a separate bowl using a wooden spoon and then mixing with a hand-held egg beater until mixture is very smooth and has no visible cream cheese. Gently fold egg whites into cream cheese mixture, taking care not to deflate the egg whites.
  • Carefully scoop mixture onto the prepared baking sheet, forming 5 to 6 "buns".
  • Bake in the preheated oven until cloud bread is lightly browned, about 30 minutes.

  • Preheat oven to 425.
  • In large bowl, mix dry ingredients.
  • Cut in butter with pastry cutter or two knives.
  • Stir in milk and egg together.
  • Sprinkle flour on a clean counter and knead dough briefly.
  • Roll out dough, not too thin.
  • With round cookie cutter, cut out biscuits.
  • Place on ungreased baking sheet and bake for 12-15 minutes.

1/2 cup shortening
2/3 cup milk

Steps:

  • Preheat oven to 450 degrees.
  • Mix dry ingredients.
  • Cut in shorting with a pastry blender or a couple butter knives.
  • Stir in milk and egg.
  • Knead with flour until doughy (not so sticky).
  • Roll out 3/4 to 1 inch and cut with biscuit cutter.
  • Place close together on an ungreased cookie sheet.
  • Bake for 10-15 minutes until the tops begin to brown.
  • (check the bottoms to make sure they're cooked through).
  • I usually double this recipe if I'm making them for a main course (biscuits & gravy) or use as is for a dinner bread with the meal.

2 cups all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup shortening
1 large egg, room temperature
2/3 cup 2% milk

Steps:

  • Preheat oven to 400°. In a bowl, whisk together first 4 ingredients. Cut in shortening until the mixture resembles coarse crumbs. Whisk together egg and milk. Add to dry ingredients; stir just until moistened. Dough will be wet. , On a well-floured surface, knead dough gently 8-10 times. Roll to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place on a lightly greased baking sheet. , Bake until golden brown, 10-12 minutes. Serve warm.
