TEXAS COUNTRY CLUB CORN CHOWDER

Texas Country Club Corn Chowder image

The peppers in this soup give it just the right amount of spice, while the half & half and bacon give it just the right amount of richness. A creamy, comforting meal. The recipe is from Barton Creek Country Club in Austin, TX. I clipped it from the Austin-American Statesman many years ago.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 13

1/2 small onion, diced
1 large celery rib, diced
1 large carrot, chopped
3/4 lb bacon, chopped
1 anaheim chilies or 1 red bell pepper
1 -2 fresh jalapeno pepper, diced
1 (10 ounce) box frozen corn
1/2 cup flour
2 large russet potatoes
2 (14 1/2 ounce) cans chicken broth (or equivalent chicken stock)
1 quart half-and-half
salt
pepper

Steps:

  • Peel and dice potatoes. Bring a pot of water to boil. Parboil potatoes by placing in boiling water for 5 minutes. Pour off water and set potatoes aside.
  • In a large pot, saute bacon until well done. Add onion, celery, carrot, peppers, and corn to bacon and bacon fat. Saute until tender.
  • Add flour to bacon and vegetables to make a roux. Stir until smooth and thickening. Add potatoes. Gradually add chicken broth and stir until smooth. Bring to a boil. Add half & half and simmer for 5 minutes. The starch from the potatoes helps thicken the soup, and the parboiled potatoes will finish cooking in the soup.
  • Salt and pepper to taste.

Crab and Corn Chowder image

I started cooking at a local restaurant when I was 16 years old. This creamy chowder was one of the soups we made. The recipe had been passed from cook to cook- but had never been written down, until now!

Quick and Easy Crab and Corn Chowder image

I ate a version of this that was made by a coworker of mine, She told me how you made it but it took to much time for my taste (3 hours). So I simplified it and spiced it up.

Time 1h5m

Yield 8-10 serving(s)

Number Of Ingredients 12

1 (24 ounce) bag frozen corn
3 (10 ounce) cans condensed cream of potato soup
3 (14 ounce) cans creamed corn
1 medium onion, diced
30 ounces milk (I used whole but any will work)
1 (10 ounce) can Rotel Tomatoes
1 (16 ounce) can lump crabmeat
1 (16 ounce) can crab claw meat
salt
pepper
garlic powder
tony's seasoning

Steps:

  • In a large pot sauté your onions, once they are soft add frozen corn. Cook until corn is a bit soft. Add your cans of creamed corn and rotel tomatoes. Add your cans of creamed potato, fill each can with milk and add to pot. Add your crab meat and seasonings (to taste). Stir to combine. Bring to a gentle boil then turn on low and cover. Allow chowder to simmer on low for at least 30-45 min so flavors can marry, stirring occasionally. Serve with a sweet cornbread or crackers.

CAJUN CORN CHOWDER

Cajun Corn Chowder image

I used to work at an Old Country Buffet restaurant and this is my version of their Corn Chowder. The cheez whiz really is the secret ingredient. This recipe makes a lot of soup, but I have never been able to make less.

Number Of Ingredients 12

  • Add chicken stock, mix until smooth.

  • Add the potatoes, potato water, ham, both kinds of corn, the milk and the raw macaroni.
  • Be sure to stir so that the noodles don't stick to the bottom and burn.
  • When noodles are cooked and soup is nice and thick, (add more milk or chicken stock if it thickens too much) add cajun spices to your liking.
