3 avocados, almost-ripened
½ cup sour cream
1 bunch fresh cilantro
2 tablespoons chicken broth, or veggie broth
1 teaspoon tuscan truffle oil

Steps:

  • Blend sour cream, broth, and avocado cubes on high until a purée is formed.
  • Then, add cilantro leaves and blend on low until cilantro is minced.
  • Empty into a medium bowl and drizzle oil on top.
  • Serve alongside chips, crackers, or tacos.

12 oz coconut yogurt
1 lemon, juiced
1 tablespoon white wine vinegar
1 teaspoon salt
¼ teaspoon pepper
2 cloves garlic, chopped
2 tablespoons olive oil
1 cucumber, grated
1 tablespoon fresh dill, chopped

Steps:

  • In a blender or food processor, combine coconut yogurt, lemon juice, vinegar, salt, and pepper. When creamy, add chopped garlic and oil. Blend again.
  • Seed and grate cucumber and wrap in towel.
  • Squeeze excess water out of cucumber.
  • Add cucumber to coconut yogurt dip, and stir to blend.
  • Cover and chill 2-3 hours.
  • Garnish with dill.
  • Serve with chips, crackers, or veggies.
  • Enjoy!

1 red chili pepper (deseeded and finely chopped) (optional)
1 garlic clove (crushed or minced)
salt and pepper (to taste)

Steps:

  • Put all ingredients into a blender or food processor and blend till smooth.
  • Season to taste with salt and pepper.
  • Put into a serving dish and chill and cover until required.

olive oil, for drizzling
freshly ground pepper, to taste
Crudité, for serving
cracker, for serving

Steps:

  • Combine the cheese and herbs in a food processor and pulse until very finely chopped. Add the wine and pulse until smooth, 30-45 seconds.
  • Scrape the cheese mixture into a serving dish, drizzle with olive oil, and sprinkle with pepper. Serve at room temperature with crudités and crackers.
  • Enjoy!
