CLEAN EATING ZUCCHINI COTTAGE CHEESE FRITTERS
These healthy zucchini cottage cheese fritters are one of the only two zucchini recipes I can get my fussy kids to eat.

Steps:
- Grate your Zucchinis. Sprinkle salt over them and and place in a strainer for a couple minutes. Press down on them to release as much excess liquid as possible
- Beat your eggs lightly in a large mixing bowl. Add all remaining ingredients: Zucchini, spring onion, cottage cheese, garlic, pepper, flour and baking powder. Mix until combined
- Heat a frypan at medium heat. Add a little oil. Spoon 1 - 2 tablespoons of batter per fritter into the pan* SEE NOTE. Cook for two minutes then flip and cook the other side for two minutes until golden. Remove from pan and transfer to a wire wrack while you cook remaining batter
- Serve

- Combine zucchini and salt in a bowl and stir to combine. Set aside for 10 minutes. Pour mixture onto a clean dish towel or cheesecloth and squeeze to drain completely.
- Whisk egg in a bowl and add flour, Parmesan cheese, salt, and pepper. Stir in drained zucchini and mix well.
- Heat oil in a medium-sized pan over medium-high heat. Add batter by the tablespoon. Cook fritters until golden brown on both sides, about 5 minutes per batch. Transfer to a serving plate and sprinkle with Parmesan cheese and salt. Serve immediately with sour cream.

- Mix all ingredients just until blended.
- Heat enough oil in a pan to cover bottom.
- Drop a spoonful of fritter batter into hot oil and cook until golden brown and crisp.
- Remove from oil and drain on paper towels.
- Sprinkle lightly with salt.

- Place half the cheese in a bowl. Add zucchini, shallots, eggs, dill and flour. Stir until well combined. Season with salt and freshly ground black pepper.
- Heat a large non-stick frying pan over medium heat. Add ½ tsp of the oil and swirl to cover the base of the pan. Form 4 fritters with 2 1/2 tbs of mixture each. Cook over medium heat for 2 mins on each side or until golden and cooked through. Transfer fritters to a warm platter, then repeat the process with remaining mixture to form a total of 12 fritters.
- Serve the warm fritters with a dollop of extra cottage cheese on top and drizzle with sweet chilli sauce.
