SHEET PAN MINI MEATLOAF AND ROASTED POTATOES
This Sheet Pan Mini Meatloaf and Roasted Potatoes is an entire meal made with one pan and SIX ingredients! Naturally gluten free meatloaf topped with tangy BBQ sauce and served with roasted veggies.

Steps:
- Preheat oven to 400 degrees F and line a rimmed baking sheet with parchment paper
- In a clean medium sized bowl, add halved potatoes, green beans, oil, 1/2 teaspoon salt and 1/8 teaspoon pepper. Stir to coat well and place on one half of baking sheet
- Turn potatoes so they are cut side down on the pan.
- Fold the edge of a piece of foil to create a ledge and place it on the empty side of the pan.
- In a medium bowl, stir together beef, onion, 1/3 cup barbecue sauce, egg, 1/2 teaspoon salt and 1/8 teaspoon pepper.
- Shape into 4 mini rectangular meatloaves and line up on the foil on one side of the baking sheet. Divide remaining barbecue sauce between meatloaves and brush on top.
- Bake for 25-30 minutes or until potatoes are tender and the meatloaf reaches an internal temperature of at least 160 degrees F. Serve.

Steps:
- Preheat oven to 400°F. Reserve 1/4 cup of tomato sauce; set aside.
- Combine Ground Beef, remaining tomato sauce, bread crumbs, onion, egg, Worcestershire, thyme, salt and 1/4 teaspoon pepper in large bowl; mixing lightly but thoroughly. Shape beef mixture into 8 x 4 x 2-inch loaf on parchment-lined sheet pan.
- Toss potatoes with cooking spray, garlic salt and remaining 1/2 teaspoon pepper. Spread potatoes evenly around the meatloaf on the sheet pan.
- Place sheet pan on the center rack of oven, bake in preheated 400°F oven for 40 minutes. Meanwhile, combine reserved tomato sauce with brown sugar and mustard. Spread sauce evenly over top of meatloaf, stir potatoes and continue cooking another 20 minutes or until instant-read thermometer inserted into center of meatloaf registers 160°F.
- Remove meatloaf; let stand 10 minutes before slicing. Test potatoes for doneness and return to oven if needed while meatloaf rests. Cut meatloaf into slices. Serve with potatoes. Four-Pepper Meatloaf Variation: Prepare meatloaf as above, adding 1/3 cup finely chopped green bell pepper, 1/4 teaspoon ground red pepper and 1/4 teaspoon ground white pepper to ground beef mixture. Picadillo-Style Meatloaf Variation: Prepare meatloaf as above, omitting thyme and adding 1/3 cup finely chopped green bell pepper, 1/4 cup raisins, 1 teaspoon ground cumin and 1/2 teaspoon dried oregano to ground beef mixture.

CLAY POT MEATLOAF AND POTATOES
This is hubby's favorite meatloaf. It can be easily made into a one dish meal by adding some carrots. A clay pot with a lid is required. No liquid is added as it cooks in its own juices.

- Soak clay pot in a large bowl of water for about 15 minutes. Remove pot from water.
- Mix ground beef, bread crumbs, egg, milk, and 1/2 of the onion soup mix together in a large bowl. Form mixture into a loaf and place in the clay pot. Arrange potatoes around loaf and sprinkle remaining onion soup mix over potatoes. Scatter onions over potatoes and add rosemary sprigs. Place lid on the clay pot.
- Place clay pot in the cold oven. Heat oven to 350 degrees F (175 degrees C).
- Bake in the oven until meatloaf is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Steps:
- Peel and cube potatoes.
- Line the bottom of the crock pot with potatoes.
- In a large mixing bowl, beat eggs, ketchup and mustard together.
- Add ground beef, onion soup mix, and stuffing or bread crumbs to the egg mixture and mix all together well.
- Shape meat mixture into two loaves and place in crock pot on top of potatoes.
- Drizzle ketchup on the top of the loaves.
- Set crock pot to high for an hour or until you leave, then set to low for 8-10 hours.

- Mix together ground beef, crushed cornflakes, bread crumbs, onion, eggs, garlic powder, parsley, salt, and pepper until well combined. Shape mixture into a loaf.
- Place potatoes evenly around the bottom of a multi-functional pressure cooker (such as Instant Pot®). Pour chicken broth over top. Place the Instant Pot® rack over the potatoes.
- Place meatloaf on a small tray that will fit inside the Instant Pot® (or make one out of foil) and place that on the rack. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
