HOT PINEAPPLE SALAD



Hot Pineapple Salad image

This is a great addition to any summer get-together! I got this recipe after watching Martha Stewart. It was a recipe from one of her guests, Clay Aiken from "American Idol." It is really a tasty dish!

Number Of Ingredients 6

1 (20 ounce) can pineapple chunks in juice
1 cup sugar
6 tablespoons self-rising flour
2 cups medium sharp cheddar, grated
32 Ritz crackers, crushed (1 sleeve)
1/2 cup unsalted butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine pineapple, sugar, flour and cheese.
  • Transfer to an 8-by-8-inch, 1 1/2 quart baking dish.
  • Top with crushed crackers and drizzle with melted butter.
  • Bake for 35 minutes.
  • Let stand 10 minutes before serving.

1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/4 cup lemon juice
2 cans (20 ounces) pineapple tidbits, drained
1-1/2 cups multicolored miniature marshmallows, divided
1 carton (8 ounces) frozen whipped topping, thawed
1/2 cup chopped nuts
1/3 cup maraschino cherries, chopped

Steps:

  • In a large bowl, beat the cream cheese, milk and lemon juice until smooth. Add pineapple and 1 cup marshmallows; fold in whipped topping. Sprinkle with the nuts, cherries and remaining marshmallows. Refrigerate leftovers.

4 cups torn arugula leaves
¼ fresh pineapple - peeled, cored, and chopped
¼ red onion, thinly sliced
¼ cup chopped fresh cilantro
3 tablespoons apple cider vinegar
1 tablespoon olive oil
2 teaspoons maple syrup
¼ teaspoon salt

Steps:

  • Mix arugula, pineapple, red onion, and cilantro in a salad bowl. Whisk apple cider vinegar, olive oil, maple syrup, and salt in a small bowl; pour dressing over salad and toss to coat.

"I came up with the recipe for this fun fruit salad several years ago," shares Jessie Craven of Odessa, Missouri. "It's a refreshing change of pace for me and my husband, who's diabetic.

1 can (20 ounces) unsweetened pineapple chunks
1/4 cup reduced-fat margarine
2 tablespoons lemon juice
1 tablespoon cornstarch
2 tablespoons water
Artificial sweetener equivalent to 2 tablespoons sugar
3 cups chopped apples
2 cups green grapes
2 teaspoon poppy seeds
3/4 cup chopped pecans, toasted

Steps:

  • Drain pineapple juice into a saucepan. Add margarine and lemon juice; cook over medium heat until margarine is melted. In a small bowl, combine cornstarch and water until smooth; stir into juice mixture. Bring to a boil; boil and stir for 2 minutes. Reduce heat; add sweetener. Cool to room temperature, about 30 minutes. In a large bowl, combine pineapple, apples, grapes and poppy seeds. Add the dressing; toss to coat Cover and chill for at least 1 hour. Just before serving, gently toss in pecans.

2 jalapeno chiles (ribs and seeds removed), thinly sliced crosswise
1 teaspoon red-wine vinegar
Coarse salt and ground pepper

Steps:

  • In a large skillet, heat oil over high. Working in 2 batches, cook pineapple and jalapenos on one side until lightly browned, 4 to 6 minutes; transfer to a bowl. Add vinegar, season with salt and pepper, and toss to combine.

1 package (3 ounces) lemon gelatin
1 cup heavy whipping cream
1/4 cup sugar
1 cup 4% cottage cheese

Steps:

  • Drain pineapple, reserving the juice in a small saucepan. Set pineapple aside. Add enough water to juice to make 1-1/3 cups; bring to a boil. Place gelatin in a bowl; add boiling liquid and stir to dissolve. Cool until slightly thickened. In a bowl, whip cream; gradually beat in sugar. Fold into the gelatin mixture. Stir in pineapple and cottage cheese; blend well. Pour into a 1-1/2-qt. serving bowl; chill at least 3 hours or overnight.
