1 cup chilled Prosecco (Italian sparkling white wine)
2 tablespoons chilled vodka
1/3 cup frozen lemon sorbet
1/4 teaspoon chopped fresh mint leaves

Steps:

  • Pour the Prosecco and vodka into 2 Champagne flutes, dividing equally. Spoon a scoop of sorbet into each flute. Sprinkle with mint and serve immediately.

A classic Sgroppino is made with lemon sorbet and vodka, topped with sparkling wine. We've gone for a Bellini-style twist with a nectarine sorbet.

Number Of Ingredients 4

1.5 litres sparkling wine (2 bottles)
6 nectarines, skins scored
Juice of 1 lemon, or to taste
250 ml sugar syrup (see note)

Steps:

  • For sorbet, simmer nectarines in a large saucepan of water over medium-high heat until just tender (4-8 minutes; time depends on the firmness of nectarines). Drain, and when cool enough to handle, coarsely chop (discard stones), add lemon juice and stand for colour to seep from the skins and brighten the mixture to pink (4-5 minutes). Blend with sugar syrup until smooth, strain through a sieve (discard solids) and refrigerate to chill (1 hour). Churn in an ice-cream machine, then freeze in an airtight container until required.
  • Spoon small scoops of sorbet into coupes, top with sparkling wine and serve.
