Quick Preserved Lemons in less than 24 hours image

A quick & easy method for making mock preserved lemons in 24 hours. No quick as good as the real thing but a great substitute.

1 large lemon
1 tsp. Kosher salt

Steps:

  • Peel the zest off 1 large lemon. Try not to get any of the white pith.
  • Juice the lemon and set the juice aside.
  • Cut the zest into narrow strips and place in a glass jar or bowl. Top with 1 tsp. (5 g) salt and the lemon juice.
  • Stir to dissolve some of the salt. If the juice does not cover the zest, add more lemon juice.
  • Let sit on the counter for 20 to 24 hours or longer.
  • After 24 hours, both the zest and the juice are ready for use.
  • Be careful about adding salt to any dish in which you use preserved lemons. They are pretty salty.

This is Paula Wolfert's original recipe from her 1973 book "Couscous and Other Good Food From Morocco," but I leave out the warm spices like cinnamon and cardamom so that the flavors are adaptable. The brightness of this pickle has lately elbowed its way out of Morocco's tagines. New York chefs add the minced peel to salads and garnish fried seafood with it; the cured-lemon flavor is particularly friendly to salmon, carrots, olives, parsley and potatoes. The lemony brine is great in a bloody mary.

9 organic lemons
Kosher salt
1 heaping teaspoon black peppercorns
2 bay leaves

Steps:

  • Scrub 3 to 5 organic lemons, enough to fit snugly in a medium jar with a tight-fitting lid (have 2 to 4 more ready on the side). Slice each lemon from the top to within 1/2 inch of the bottom, almost cutting them into quarters but leaving them attached at one end. Rub kosher salt over the cut surfaces, then reshape the fruit. Cover the bottom of the jar with more kosher salt. Fit all the cut lemons in, breaking them apart if necessary. Sprinkle salt on each layer.
  • Press the lemons down to release their juices. Add to the jar the peppercorns and bay leaves, then squeeze the additional lemons into the jar until juice covers everything.
  • Close the jar and let ripen at cool room temperature, shaking the jar every day for 3 to 4 weeks, or until the rinds are tender to the bite. Then store it in the refrigerator.
  • To use, remove a piece of lemon and rinse it. (Add more fresh lemons to the brine as you use them up.) The minced rind is added at the very end of cooking or used raw; the pulp can be added to a simmering pot.

The lemons have to be cured for at least 1 month but then they will keep for many months in the fridge, where their flavor intensifies over time. They are preserved whole but only the peel is used in cooking, the flesh is discarded. If possible, use organic lemons.

¼ cup kosher salt
1 cup lukewarm water, or as needed

Steps:

  • Scrub lemons thoroughly under cold running water. Cut each lemon into quarters, but do not cut all the way through the top, so that the lemon still holds together.
  • Rub lemons generously with salt inside and out and along all the cuts. Place them in a large sterilized jar with a tight-fitting lid. Add lukewarm water to cover; the lemons should be fully immersed. Screw on the lid and let cure for 1 month in a dark, dry, and cool place.

4 lemons, scrubbed and dried, plus the juice of 1 lemon, if necessary
40 grams kosher salt

Steps:

  • Trim the ends off the lemons. Slice each lemon into 8 wedges, removing any seeds as you go. Reserve as much of the juice as possible.
  • Layer the lemon wedges in a wide-mouthed 16-ounce canning jar, covering each layer with salt. Pack the jar as tightly as possible, pressing down to release the lemons' juice as you go and leaving about 1/4 inch of headspace in the jar.
  • Cover the wedges with the reserved lemon juice from the cutting board and the ends. If your lemons do not release a significant amount of juice, top off the jar with the juice of another lemon.
  • Stash in the refrigerator for 4 days, then flip the jar over and age another 4 days before sampling. The peel should be nice and soft. Rinse before using.

6 cups coarse salt
1 1/2 cups fresh lemon juice (from 9 to 11 lemons)

Steps:

  • Cut a 3-inch-long, 1/2-inch-deep slit around the equator of each lemon. Pack 1 to 2 teaspoons salt into each slit. Pour 1/2 of the remaining salt into an airtight glass jar that fits the lemons snugly.
  • Pack lemons in jar. Pour lemon juice and the remaining salt over lemons. (The jar should be full.)
  • Cover, and refrigerate for at least 1 month or up to 2 months.

8 lemons, scrubbed
1/2 cup salt
2 one-inch cinnamon sticks
1/2 teaspoon whole black peppercorns
6 fresh or dried bay leaves
4 cups freshly squeezed lemon juice (about 24 lemons), strained

Steps:

  • Thoroughly wash and dry lemons. Cut each lemon lengthwise into quarters, but only two-thirds of the way through, so one end remains intact. Rub the insides with 1 to 2 teaspoons salt. In 2 one-quart jars or 1 two-quart jar, layer lemons, remaining salt, cinnamon sticks, peppercorns, and bay leaves. Pack the lemons as tightly as possible. Pour the lemon juice over the lemons until they are submerged.
  • Close jar or jars tightly. Place in a warm spot to ripen for at least 1 week before using. Gently shake the jars daily to redistribute salt. Store in the refrigerator. To use preserved lemons, remove amount needed from jar, remove flesh, and discard; rinse rind under cold water to remove excess salt.

Preserved lemons have an intense flavor and their tender rind has an almost jam-like consistency.

4-6 lemons (depending on the size of the jar you choose)
4-6 tablespoons sea salt
Juice of 4 additional lemons

Steps:

  • Wash and scrub the lemons. *See Notes
  • The classic Moroccan way is to cut each lemon in quarters but not right through, so that the pieces are still attached to the stem end. Then, stuff each lemon with a tablespoon of salt and squeeze it closed. Put them in a sterilized preserving jar, pressing them down so that they are squashed together, and close the jar.
  • Leave the jar sitting on the counter top for 3 to 4 days, turning them upside down/right-side up at least once every day.
  • After 3-4 days open the jar and press the lemons down firmly, the lemons will be softened somewhat and will give up some of their juices.
  • Juice 4 fresh lemons and pour the juice over the top and smash down again so that the lemons are completely covered with juice.
  • Close the jar and leave in the refrigerator for at least a month, the longer they are left to ferment the better flavor will be.
  • Before using, rinse the lemon peel under cold water to get rid of the salt. If you will be using the pulp you may need to adjust the seasoning in the dish to allow for the saltiness of the pulp.

Moroccan Roasted Chicken With Preserved Lemons image

This recipe for whole chicken slow-roasted with Moroccan spices served with a savory onion sauce with preserved lemon and olives is great for a party.

1 whole chicken
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon ginger
1/2 teaspoon turmeric
1/4 teaspoon saffron threads , crumbled
1 small clove garlic, finely chopped or pressed
1 tablespoon chopped fresh cilantro
1 tablespoon olive oil
1 tablespoon lemon juice
For the Sauce:
2 large yellow or white onions
2 cloves garlic
1 teaspoon ginger
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground white pepper
1/4 teaspoon salt
1/2 teaspoon turmeric
2 tablespoons chopped fresh cilantro
1 cinnamon stick, optional
1 teaspoon smen, Moroccan preserved butter, optional
3 to 4 tablespoons vegetable oil
1/4 teaspoon saffron threads, crumbled
1​ preserved lemon , quartered , seeds removed
Handful red or green olives

Steps:

  • Make a spice rub for the chicken from the ginger, turmeric, garlic, cilantro, olive oil, and lemon juice.
  • Gently lift and loosen the skin of the chicken from the breast and leg meat, leaving the skin intact. Spoon most of the spice mixture under the skin, and rub the spices over the meat, taking care to reach the leg.
  • Turn the chicken over, and loosen the skin from the back of the chicken. Add the remaining spice rub to the back meat, reaching to the legs if possible.
  • Salt and pepper the cavity of the chicken, truss the legs and rub a little olive oil on the outside of the chicken. Transfer the chicken to a glass or plastic bowl, cover tightly, and refrigerate overnight.
  • Set aside the saffron. Slice the onions as thinly as possible. Place the onions, garlic, remaining spices, cilantro, oil and smen in a heavy-bottomed shallow stock pot or Dutch oven . Cover and cook over medium heat, stirring occasionally for an hour or until the onions are soft and can easily be mashed with a spoon or vegetable masher. Avoid burning the onions, and add a little oil or water if necessary to prevent the onions from sticking.
  • Mash the onions and continue cooking, uncovered, until the onions are reduced to a thick blended mass sitting in the oil. How long this takes will depend on how moist the onions were, how thinly you sliced them, and how wide your pot is.
  • When the onions are a unified mass, stir in the saffron and remove the onions from the heat. At this point, the sauce can be cooled and refrigerated overnight.
  • Transfer the chicken to an oiled shallow roasting pan, allow the chicken to sit at room temperature for 30 minutes. Preheat the oven 325 F/160 C.
  • Roast the chicken uncovered, basting occasionally and rotating the pan halfway through cooking, for 2 to 3 hours, or until the skin is golden brown and the leg can be moved easily in its joint.
  • Transfer the cooked chicken to a serving plate, or hold warm in the turned off oven.
  • Pour the juices from the roasting pan into the onion sauce mixture, stirring to blend. Add the preserved lemon and olives, 2 or 3 tablespoons of water as needed and simmer the sauce over medium heat for about 10 minutes, or until well-blended and the sauce is thick.
  • Pour the sauce onto the serving platter, spooning a little sauce and olives over the chicken. Garnish the chicken with some of the preserved lemons, and serve immediately with Moroccan bread ( khobz ) for scooping up the chicken and sauce.

  • Scrub six lemons with a vegetable brush and rinse in cold water. Dry well. Trim the nubs off both ends. Quarter each lemon lengthwise leaving them still connected at a base.
  • Put the salt into a bowl. Working with one at a time, hold the lemon over the bowl and fill it generously with salt. Every lemon should get about 2 tablespoons of salt. Put them cut side up in the jar. You should push down really hard to fit them in.
  • Juice the remaining 6 lemons and add the juice into the jar until the lemons are submerged. If it's not enough juice, you can either juice more lemons to fill the jar to the brim or use boiled water.
  • Seal the jar and store in a dark place (not in a fridge) for a month, turning and shaking it once a day for the first week (to redistribute the salt).
