CLASSIC SOUR CREAM COFFEE CAKE

- Heat oven to 350°F. Grease 12-cup fluted tube cake pan or 10-inch angel food (tube) cake pan.
- In small bowl, mix all Filling ingredients; set aside.
- In medium bowl, mix flour, baking powder, baking soda and salt; set aside. In large bowl, beat granulated sugar, 3/4 cup butter, 1 1/2 teaspoons vanilla and the eggs with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Beat in flour mixture alternately with sour cream on low speed.
- Spread 1/3 of the batter (about 2 cups) in pan; sprinkle with 1/3 of the Filling (about 6 tablespoons). Repeat twice.
- Bake about 1 hour or until toothpick inserted near center comes out clean. Cool 10 minutes; remove from pan to wire rack. Cool 10 minutes.
- Meanwhile, in 1 1/2-quart saucepan, heat 1/4 cup butter over medium heat until very light brown; remove from heat. Stir in powdered sugar and 1 teaspoon vanilla. Stir in milk, 1 tablespoon at a time, until glaze is smooth and thin enough to drizzle. Drizzle cake with glaze.

- Combine the flour, brown sugar, cinnamon, and salt in a small bowl and mix to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
- Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
- Whisk together the flour, baking powder, baking soda and salt in a small bowl.
- Beat the butter and granulated sugar together in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
- Spoon the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Sprinkle on the crumb topping.
- Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate and re-invert onto a rack to cool completely.

Original recipe from my grandmother Sallie Ayers Kelly. It is a depression-era or before recipe. One of the simplest cake recipes I have tried. Cool cake before frosting.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking pan.
- Stir buttermilk and baking soda together in a bowl until dissolved and foaming.
- Beat sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat the first egg into butter mixture until completely blended; beat in the second egg until incorporated.
- Whisk flour and cocoa powder together in a bowl. Beat flour mixture, alternating with buttermilk mixture, into creamed butter mixture using an electric mixer until batter is smooth. Pour batter into the prepared baking pan.
- Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 30 to 40 minutes. Cool cake for 30 minutes.

SOUR CREAM CAKE
Soft vanilla Sour Cream Cake made from scratch.

- Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
- In a large mixing bowl, add flour, baking powder, sugar and salt. In a separate bowl, add oil, vanilla and egg. Beat briefly with fork just to break up the egg yolk.
- Add to dry ingredients along with the sour cream and stir to combine. The cake batter will be very thick (see photo below) - this is ok.
- Transfer cake batter to your cake pan and gently smooth the top. Bake cake for approximately 35-40 minutes or until a skewer inserted in the middle comes out clean.
- Leave cake to cool slightly before carefully removing from cake pan and leaving on a wire rack to cool completely.
- To make the frosting, add butter to a large mixing bowl. Beat with an electric mixer on medium speed for 2 minutes or until smooth and creamy. Add vanilla and sugar and beat slowly until it starts to come together. Add sour cream and continue to beat until smooth.
- Cover top of cake with sour cream frosting and serve.

- Preheat oven to 350°F. Grease and flour 2 (9-inch) round cake pans. Cover bottoms of pans with wax paper. Grease and flour wax paper; set aside. - Allow eggs, butter, and sour cream to stand at room temperature for 30 minutes. Meanwhile, generously grease and flour a 10-inch fluted tube pan or tube pan. In a medium bowl, sift together flour, cocoa powder, and baking soda; set aside.
- Preheat oven to 325 degrees F. In a large mixing bowl, beat butter with a freestanding electric mixer on medium to high speed for 30 seconds. - Preheat the oven to 325 degrees. Grease a pan very well with butter and set aside. (A bundt, 9x13, or (2) 8-9" round pans will work well.) Combine cocoa and hot water in a large glass measuring cup or small bowl and whisk to combine. Place the butter and the sugar in a mixing bowl and beat until smooth and creamy. Add the cocoa mixture and stir to combine. Add the eggs and vanilla and stir again. Add the sour cream and stir once more.
- Add the dry ingredients to the wet mixture and mix well. Slowly add the boiling water while mixing. The batter will be very thin and watery. Pour into the prepared pan and bake for 25-42 minutes depending on pan. Test for doneness with a toothpick, the bundt cake took the full 42 minutes to bake. The cake should no longer look wet and should leave moist crumbs on the toothpick. Let the cake cool completely before icing.
- To make the icing, combine all ingredients in a heavy bottomed sauce pan over medium heat. Whisk while the mixture thickens and bring it almost to the boiling point. This should take about ten minutes. While the icing is hot, pour over the cake and spread it lightly across the surface. Let it cool enough to stop steaming before placing it in the refrigerator.
- Cover the cake and chill overnight before serving. It is delicious served warm (because some of us were impatient), however it is best served cold. Enjoy!
