Italian Minestrone Soup Recipe (Trieste Style) image

Recipe for minestrone Triestino, or minestrone from Trieste, also known as 'jota', is a traditional dish in Italy's north-eastern region of Friuli-Venezia Giulia, in particular in the cities of Trieste and Gorizia.

2 oz double smoked bacon ((diced))
1 yellow onion ((chopped))
1/2 lb (about 5 1/2 cups) Swiss chard ((leaves and stems, roughly chopped))
1/2 lb (two small or one large) zucchini ((cut into thick slices))
5 oz (2 packed cups) spinach ((roughly chopped))
3 oz (about 1 cup) chopped green beans ((fresh or frozen and defrosted))
2 carrots ((cut into thick slices))
1 celery rib ((cut into thick slices))
2 tomatoes ((peeled and sliced))
2 large potatoes ((peeled and cut into quarters))
6 1/2 cups beef or vegetable broth
3 Tbsp butter
2 tomatoes ((peeled and minced))
5 oz (1 1/2 cups) durum wheat semolina pasta
3 Tbsp olive oil ((for frying))
4 Tbsp Grana Padano cheese ((or Parmigiano Reggiano, grated))
1 Tbsp chopped fresh Italian parsley
Sea salt ((to taste))
Black pepper ((to taste))

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Add the chopped onion and bacon, and cook until the onion is translucent, about 4 minutes.
  • Add the Swiss chard, zucchini, spinach, celery, green beans, potatoes, carrots and the 2 sliced tomatoes. Continue cooking for another 15 minutes, stirring every now and then.
  • Add the broth. Season with salt and pepper to taste and cook, covered, for an hour and 15 minutes.
  • Remove the potatoes from the pot, mash, mix with the minced tomatoes and return back to the pot.
  • Add the pasta and cook for about 5-7 minutes, or until the pasta is cooked. The time will depend on the kind of pasta you are using.
  • Add the chopped parsley, butter and 4 tablespoons of Grana Padano or Parmigiano Reggiano cheese. Mix well and serve.

4 tablespoons extra-virgin olive oil, divided
1 medium yellow onion, chopped
2 medium carrots, peeled and chopped
2 medium ribs celery, chopped
1/4 cup tomato paste
2 cups chopped seasonal vegetables (potatoes, yellow squash, zucchini, butternut squash, green beans or peas all work)
4 cloves garlic, pressed or minced
½ teaspoon dried oregano
½ teaspoon dried thyme
1 large can (28 ounces) diced tomatoes, with their liquid (or 2 small 15-ounce cans)
4 cups (32 ounces) vegetable broth
2 cups water
1 teaspoon fine sea salt
2 bay leaves
Pinch of red pepper flakes
Freshly ground black pepper
1 cup whole grain orecchiette, elbow or small shell pasta
1 can (15 ounces) Great Northern beans or cannellini beans, rinsed and drained, or 1 1/2 cups cooked beans
2 cups baby spinach, chopped kale or chopped collard greens
2 teaspoons lemon juice
Freshly grated Parmesan cheese, for garnishing (optional)

Steps:

  • Warm 3 tablespoons of the olive oil in a large Dutch oven or stockpot over medium heat. Once the oil is shimmering, add the chopped onion, carrot, celery, tomato paste and a pinch of salt. Cook, stirring often, until the vegetables have softened and the onions are turning translucent, about 7 to 10 minutes.
  • Add the seasonal vegetables, garlic, oregano and thyme. Cook until fragrant while stirring frequently, about 2 minutes.
  • Pour in the diced tomatoes and their juices, broth and water. Add the salt, bay leaves and red pepper flakes. Season generously with freshly ground black pepper.
  • Raise heat to medium-high and bring the mixture to a boil, then partially cover the pot with the lid, leaving about a 1" gap for steam to escape. Reduce heat as necessary to maintain a gentle simmer.
  • Cook for 15 minutes, then remove the lid and add the pasta, beans and greens. Continue simmering, uncovered, for 20 minutes or until the the pasta is cooked al dente and the greens are tender.
  • Remove the pot from the heat, then remove the bay leaves. Stir in the lemon juice and remaining tablespoon of olive oil. Taste and season with more salt (I usually add about 1/4 teaspoon more) and pepper until the flavors really sing. Garnish bowls of soup with grated Parmesan, if you'd like.

2 cloves garlic (, crushed)
3 tomatoes (, peeled and cut into medium cubes)
2 celery stalks (, diced)
1 zucchini (, cut into medium cubes)

½ lb green beans (, cut into pieces)
½ lb peas
6 oz. dry white beans
4 oz. pasta or rice ((optional))

Steps:

  • The night before, soak the white beans in plenty of cold water.
  • Bring a large volume of water to a boil, and cook the beans for about 45 minutes.
  • In a pot, sweat the onion and garlic in hot olive oil, then add the tomatoes, and after a few minutes the other vegetables and pre-cooked white beans.
  • Then moisten with the water and cook over medium heat, covered 30 minutes. Uncover, add the pasta and cook 10 to 15 minutes. Reduce over low heat if necessary.
  • When ready to serve, drizzle a little olive oil, sprinkle with grated parmesan and add some basil leaves.

1 clove garlic (minced)
1 cup peas (fresh or frozen) (150 grams)
1 cup borlotti beans (frozen or fresh see also dried beans)* (150 grams)
1/2 head broccoli (break into florets, cut in half if large)
1 large potato (cubed)
1-2 medium carrots (sliced)
1 small stalk of celery (sliced or diced)
1 medium zucchini (chopped)
1 bunch baby spinach (if desired)
3/4 teaspoon basil
3/4 teaspoon oregano
1/2-1 teaspoon salt (or to taste)
1-2 dashes hot pepper flakes or black pepper (if desired)
1 cup tomato puree ((200 grams))
3-4 cups water ((945 grams))
1 cup dried small pasta

Steps:

  • Chop the vegetables into small to medium chunks.
  • In a large pot add the olive oil, minced garlic, vegetables, tomato puree, water (enough to cover the vegetables) and spices. Stir to combine.
  • Bring the mixture to a boil, then lower the heat and simmer (very low boil) for 20-25 minutes or until vegetables are almost tender (not mushy), stirring occasionally. The last 5 minutes, boil 2-3 cups of water in a medium pot. To the large pot add the boiled water (1/2 the amount or all depending on how thick you like it and be sure to taste for salt, add if needed) and 1 cup of small uncooked pasta.
  • Cook on a low boil, uncovered, stirring often until the pasta is al dente. Top with freshly grated parmesan cheese if desired and serve immediately. Enjoy!

2 carrots (, roughly chopped)
2-3 selery ribs (, roughly chopped)
½ cup diced pancetta ((optional))
1 ½ cup pumpkin or butternut squash (, cut in cubes)
1 large potato or 1 ½ cup potatoes (, cut in cubes)
1 large tomato chopped or 10 cherry tomatoes (, cut in quarters)
1 small savoy cabbage (, roughly chopped)
1 can ((14 oz) borlotti beans)
⅓ cup ditalini pasta or other small pasta shape
Extra virgin olive oil
1 bay leaf
2 rosemary sprigs
1 garlic clove ((optional))
Salt to taste

Steps:

  • In a large pot add a generous drizzle of extra virgin olive oil, roughly chopped onion, carrots, celery, garlic clove, and pancetta cubes. Sautee on medium heat for a few minutes stirring a couple of times in the process.
  • Add potatoes, butternut squash, tomatoes, bay leaf, rosemary sprigs and a couple of pinches of salt.
  • Give a nice stir and add enough water to cover all the veggies.Bring to a boil and simmer on low heat for 40 minutes. Add more liquid if needed.
  • Past this time veggies will become super soft and will "melt" one into another creating delicious creamy texture.
  • Once veggies are cooked add chopped savoy cabbage or other leafy greens and drained canned beans. Add more water if needed. Give a nice stir and cook for another 15 minutes.
  • As a last step, add pasta or rice. Let cook for 5-15 more minutes depending on how long pasta or rice will take to cook.
  • If you're not planning to serve minestrone right away, don't add pasta or rice immediately.Instead, bring the soup to a boil when you're ready to serve it and then add pasta or rice.
  • Minestrone is ready to serve when pasta (rice) is cooked. I takes about 5-6 minutes for ditalini pasta and about 15 minutes for rice.
  • Serve hot or warm generously topped with fresh grated Parmesan cheese.

4 garlic cloves (minced)

1 cup green beans (fresh or frozen, trimmed and cut into 1-inch pieces, if needed)
Salt and pepper
1 tsp paprika
1/2 tsp rosemary
1 15- oz can crushed tomatoes
6 cups broth (vegetable or chicken broth)
1- inch Parmesan cheese rind (optional)
1 bay leaf
2 to 3 springs fresh thyme
1 15- oz can kidney beans
Large handful chopped parsley
Handful fresh basil leaves
Grated Parmesan cheese (to serve (optional))
2 cups already cooked small pasta such as ditalini or elbow pasta

Steps:

  • In a large Dutch oven, heat the extra virgin olive oil over medium heat until shimmering but not smoking. Add onions, carrots and celery. Raise heat to medium-high, if you need to, and cook, tossing regularly, until the veggies soften a bit (about 5 minutes or so). Add the garlic and cook another minute, tossing regularly.
  • Add the zucchini or yellow squash and green beans. Season with paprika, rosemary, and a generous pinch of kosher salt and pepper. Toss to combine.
  • Now add the crushed tomatoes, broth, fresh thyme, bay leaf and Parmesan rind (if using.) Bring to a boil, then reduce the heat to a gentle simmer and partially cover the pot. Let simmer for about 20 minutes or so.
  • Uncover the pot and add the kidney beans. Cook for another 5 to 10 minutes.
  • Finally, Stir in the parsley and fresh basil. And, if serving immediately, stir in the cooked pasta and simmer ever so briefly till the pasta is warmed through; do not overcook. (See Cook's Tip #2)
  • Remove the cheese rind and bay leaf. Taste and adjust seasoning to your liking. Serve the minestrone hot in dinner bowls with a sprinkle of grated Parmesan (optional.)

1 (11.5 oz.) can tomato juice
4 cups chicken or vegetable broth
1 (19 oz.) can cannellini beans, rinsed and drained

1 (15 oz.) can garbanzo beans (chick peas), rinsed and drained
1/4 cup chopped fresh parsley
1 tbsp. dried oregano

Steps:

  • HEAT oil in large saucepan or Dutch oven over medium heat. Add celery, onion and garlic. Cook and stir until crisp-tender.
