Provided by Betty Crocker Kitchens

Categories     Entree

Time 1h15m

Yield 4

Number Of Ingredients 9

1 tablespoon olive or canola oil
4 medium onions (about 1 1/2 lb), sliced (8 cups)
1 carton (32 oz) reduced-sodium beef broth (4 cups)
1/4 teaspoon dried thyme leaves
1/4 teaspoon pepper
1 dried bay leaf
2 teaspoons reduced-sodium soy sauce
8 slices (1/2 inch thick) baguette French bread
1/4 cup shredded fresh Parmesan cheese (1 oz)

Steps:

  • In 4-quart nonstick Dutch oven, heat oil over medium heat. Add onions; cook uncovered 10 minutes, stirring frequently. Reduce heat to medium-low. Cook 35 to 40 minutes longer, stirring frequently, until onions are light golden brown (onions will shrink during cooking).
  • Stir in broth, thyme, pepper, bay leaf and soy sauce. Heat to boiling. Reduce heat to low; cover and simmer 15 minutes. Remove bay leaf.
  • Meanwhile, set oven control to broil. Place baguette slices on ungreased cookie sheet. Sprinkle cheese evenly on slices. Broil with tops 4 to 6 inches from heat 30 to 60 seconds or until cheese is melted. Watch carefully so cheese does not burn.
  • To serve, ladle soup into bowls. Serve with baguette slices.

FRENCH ONION SOUP

French Onion Soup image

French onion soup gets its rich flavor and color from the cooking of the onions. While they simmer, the flavors become intense, making this soup a savory delight. French onion soup is a perfect comfort-food dinner, served with a side of bread for dipping and topped with a decadent layer of cheese.

Provided by By Betty Crocker Kitchens

Categories     Entree

Time 1h30m

Yield 4

Number Of Ingredients 10

4 medium onions
2 tablespoons butter or margarine
2 cans (10.5 oz each) condensed beef broth
1 1/2 cups water
1/8 teaspoon pepper
1/8 teaspoon dried thyme leaves
1 dried bay leaf
4 oz Gruyère, Swiss or mozzarella cheese
4 slices (3/4 to 1 inch thick) French bread
1/4 cup grated Parmesan cheese

Steps:

  • Peel and cut the onions into slices to measure 4 cups. In a 4-quart nonstick Dutch oven, melt the butter over medium-high heat. Stir in onions to coat with butter. Cook uncovered 10 minutes, stirring every 3 to 4 minutes.
  • Reduce heat to medium-low. Cook uncovered 35 to 40 minutes longer, stirring well every 5 minutes, until onions are deep golden brown (onions will shrink during cooking).
  • Stir in broth, water, pepper, thyme and bay leaf. Heat to boiling over high heat. Once mixture is boiling, reduce heat just enough so mixture bubbles gently. Cover with lid; simmer 15 minutes. Meanwhile, shred the Gruyère cheese by rubbing it across the largest holes of a grater to measure 1 cup; set aside.
  • You may need to move the oven rack so it is near the broiler. Set the oven control to broil. On a cookie sheet, place the bread slices. Broil with tops about 5 inches from heat 1 to 2 minutes or until golden brown. Turn bread over; broil 1 to 2 minutes longer until golden brown. Place toasted bread in 4 ovenproof bowls or individual ceramic casseroles (do not use glass, which cannot withstand heat of broiler and may break).
  • Remove bay leaf from soup. Ladle soup into bowls. Top with Gruyère cheese. Sprinkle with Parmesan cheese. Place bowls in pan with shallow sides.
  • Broil soup bowls with tops about 5 inches from heat 1 to 2 minutes or just until cheese is melted and golden brown. Watch carefully so cheese does not burn. Serve with additional French bread if desired.

CLASSIC FRENCH ONION SOUP

Classic French Onion Soup image

Mama loves this soup. What's not to love? It's a hearty bowl of sweet, brown, caramelized onions in a rich beef broth, enriched with a dose of sherry and topped with deliciously nutty, golden brown, melted Gruyère cheese. Why does Gruyère taste so good? Aged, low-moisture cheeses such as Gruyère and Parmigiano-Reggiano have a stronger protein structure than younger, softer cheeses like fontina or fresh mozzarella, and require higher temperatures to melt. The higher heat, combined with less moisture, causes the protein to actually break down, bringing out their nutty flavor.

Yield serves 4 to 6

Number Of Ingredients 13

4 tablespoons (1/2 stick) unsalted butter
6 onions, preferably Vidalia, sliced
2 leeks, white and pale green parts, well washed (see page 232), halved lengthwise, and thinly sliced into half-moons
1 shallot, chopped
Coarse salt and freshly ground black pepper
1 teaspoon sugar
1 tablespoon all-purpose flour
1/2 cup dry sherry
6 cups beef stock (page 227) or low-fat, reduced-sodium beef broth
1 tablespoon chopped fresh thyme
1 baguette, sliced diagonally 1/2 inch thick
3 cups grated Gruyère cheese (about 12 ounces)
Snipped fresh chives, for garnish

Steps:

  • To caramelize the onions, in a large, heavy-bottomed Dutch oven, melt the butter over medium-low heat. Add the onions, leeks, and shallot. Season with salt and pepper, sprinkle with sugar, and cook, stirring as needed to keep the onions from sticking, until the onions are melting and soft, golden brown, and beginning to caramelize, 30 to 45 minutes.
  • To prepare the soup, sprinkle the flour over the onions, and stir to coat. Add the sherry, stock, and thyme and bring to a boil over high heat. Decrease the heat to low, and simmer, partially covered, for about 30 minutes. Taste and adjust for seasoning with salt and pepper.
  • Preheat the broiler. To serve, ladle hot soup into 6 ovenproof bowls. Arrange the bowls on a baking sheet. Place 1 or 2 slices of baguette over each bowl of soup. Top each bowl with 1/2 cup grated cheese so it covers the baguette slices. Broil until the cheese is melted and crusty brown around the edges. (Watch carefully so the bread doesn't burn.) Garnish with the chives. Serve immediately.
  • Sherry is a fortified wine from the town of Jerez de la Frontera, in the Andalusia region of Spain. Sherries can range in flavor from sweet to dry, and are served either at room temperature or chilled. Sherry is an excellent apéritif and adds a lively punch in cooking, where it is typically added as a finish for soups.

THE BEST FRENCH ONION SOUP

The Best French Onion Soup image

This bistro classic is deceptively easy to make. It just takes a little time and a few good ingredients. We found that yellow onions, also known as Spanish onions, work best for this recipe. They have a nice balance of sweetness and bitterness and caramelize perfectly. Just don't take them too dark -- a nice golden brown is perfect. Good beef broth also makes a big difference. If you can't make your own, look for a high-quality prepared variety.

Provided by Food Network Kitchen

Categories     appetizer

Time 1h55m

Yield 8 servings

Number Of Ingredients 9

6 tablespoons unsalted butter
8 medium yellow onions, thinly sliced (see Cook's Note)
3 bay leaves
3 to 4 sprigs fresh thyme
Kosher salt and freshly ground black pepper
2 cups dry white wine
8 cups low-sodium beef broth
8 slices French-style baguette (about the size of the top of the soup crocks)
4 cups coarsely shredded Gruyere (about 2 pounds)

Steps:

  • Melt the butter in a very large Dutch oven or pot over medium heat. Add the onions, bay leaves, thyme, 1 teaspoon salt, and a few grinds black pepper. Cook, stirring occasionally, until the onions are very soft and light golden-brown, about 1 hour. (The onions will begin to stick to the bottom of the pan and turn brown after about 30 minutes; just keep scraping them up and stirring them into the rest of the onions. If they are browning to quickly, lower the heat.)
  • Add the wine to the pot, bring to a simmer and cook until it has almost completely evaporated, about 4 minutes. Add the beef broth and 1 cup of water, bring to a simmer and cook until the flavors come together and the soup is rich, about 45 minutes. Remove the bay leaves. Season with 1/2 teaspoon salt and a few grinds of black pepper. Keep the soup warm on a low burner or cool completely and refrigerate to reheat later. (The soup can be refrigerated for up to 2 days or frozen for up to 1 month.)
  • Preheat the broiler. Place four soup crocks on a rimmed baking sheet and fill them about 3/4 of the way with hot soup. Float a slice of baguette on top of each and cover with 1/2 cup Gruyere. Broil until the Gruyere is golden brown (don't be alarmed if some soup bubbles out), 2 to 3 minutes.
