A crispy thin layer of sweetened cornmeal crust surrounds a juicy hot dog that can be dipped in a little mustard or ketchup for a healthy take on a State Fair classic.

1 cup white whole wheat flour
1 cup yellow cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground mustard
6 tablespoons butter
1/2 cup non-fat milk
1/4 cup honey
7 lean beef hot dog franks, cut in half
14 wooden sticks
mustard & ketchup, for serving

Steps:

  • Preheat oven to 400°F. Line a large baking sheet with parchment paper and set aside.
  • In a large bowl, whisk together the flour, cornmeal, baking powder, salt and ground mustard. Cut in the butter with a pastry blender or two forks until mixture resembles coarse crumbs. Stir in the milk and honey with a wooden spoon or your hands until well combined.
  • Place dough on a lightly floured piece of parchment paper. Sprinkle some more flour over the dough and top with another piece of parchment paper. Roll dough to 1/4-inch thickness.
  • Push a wooden stick up the center of the cut end of each hot dog half. Place the dog on the dough and cut a square that is big enough to wrap around it. Form dough around each dog sealing both ends and any open areas. Place corn dogs on the prepared baking sheet and bake for 15-20 minutes or until they start to brown. Serve with mustard and ketchup for dipping.

1 quart oil for deep frying
1 cup all-purpose flour
⅔ cup yellow cornmeal
¼ cup white sugar
1 ½ teaspoons baking powder
1 teaspoon salt
2 tablespoons bacon drippings
1 egg, beaten
1 ¼ cups buttermilk
½ teaspoon baking soda
2 pounds hot dogs
wooden sticks

Steps:

  • Heat oil in a deep fryer to 365 degrees F (185 degrees C).
  • In a large bowl, stir together the flour, cornmeal, sugar, baking powder and salt. Stir in melted bacon drippings. Make a well in the center, and pour in the egg, buttermilk, and baking soda. Mix until everything is smooth and well blended.
  • Pat the hot dogs dry with paper towels so that the batter will stick. Insert wooden sticks into the ends. Dip the hot dogs in the batter one at a time, shaking off the excess. Deep fry a few at a time in the hot oil until they are as brown as you like them. Drain on paper towels or serve on paper plates.

1/2 cup yellow cornmeal
1/2 cup all-purpose flour
2 tsp baking powder
1/8 tsp salt
1/8 tsp black pepper
2 Tbsp sugar
1 egg
1/2 cup milk
Vegetable oil, for frying
8 wooden skewers

Steps:

  • In a large bowl, whisk together the cornmeal, flour, baking powder, salt and pepper.
  • In a small bowl, whisk together the egg and milk.
  • Pour the wet ingredients into the cornmeal mixture, whisking until batter is well incorporated.
  • Transfer batter to a shallow pie plate or tall thin glass for easy dipping.
  • Remove hot dogs from package and pat dry with a paper towel. Insert wooden skewer into each hotdog, at least half way through.
  • Heat oil over medium-high heat until it reaches 360ºF.
  • Line a plate with paper towels.
  • Working in small batches, dip and roll each hot dog in the batter until it's completely coated. Shake off any excess batter and lower it into the hot oil.
  • Fry the corn dog until lightly browned, about 3 minutes.
  • Transfer it to the paper towel-lined plate and let drain.
  • Repeat the process for the remaining hot dogs.

1 cup yellow cornmeal
1 cup all-purpose flour
¼ teaspoon salt
⅛ teaspoon black pepper
¼ cup white sugar
4 teaspoons baking powder
1 egg
1 cup milk
1 quart vegetable oil for frying
2 (16 ounce) packages beef frankfurters
16 wooden skewers

Steps:

  • In a medium bowl, combine cornmeal, flour, salt, pepper, sugar and baking powder. Stir in eggs and milk.
  • Preheat oil in a deep saucepan over medium heat. Insert wooden skewers into frankfurters. Roll frankfurters in batter until well coated.
  • Fry 2 or 3 corn dogs at a time until lightly browned, about 3 minutes. Drain on paper towels.

I like to make these before we go to festivals and carnivals, that way we can spend our money on other things! *** If you have a recipe for baked donuts, you can use it with this machine!!

1 egg, beaten
1/4 c milk
1/4 c cornmeal
1/4 tsp salt
1/2 c whole wheat flour (i use all- purpose white flour)
1/2 tsp baking powder
1 Tbsp sugar

Steps:

  • 1. In a mixing bowl, combine all the ingredients and mix well. Cut hot dogs into the correct size to fit the Corn Dog maker cavity. Insert a wooden skewer into each hot dog, to make a "handle". With a tablespoon fill the corn dog maker about 2/3 full and lay hot dog while on the stick into the corn dog cavity. Add more batter on top of the hot dog and close the top securely. Do Not overfill the cavities with the batter as the filling will rise during the baking process. Bake until the hot dog is lightly brown, for a crunchier coating leave in longer.
  • 2. *** The maker does not give a time for cooking. 5-10 minutes is plenty... Do Not open machine for the first 2 minutes!!!

2 c. Yellow Corn Meal
2 whole Eggs, Slightly Beaten
6 c. Water, More If Needed To Thin Batter
Hot Dogs
Cheese, Cut Into 1/2-inch X 3 Inch Sticks
Chopsticks
Canola Oil, For Frying
Spicy Mustard, For Serving

Steps:

  • **USE CAUTION WHEN FRYING WITH OIL. KEEP POT ON THE BACK BURNER TO PROTECT SMALL KIDDOS**In a large bowl, combine pancake mix and cornmeal. Stir to combine. Add eggs and water, adding more water as needed for the batter to become slightly thick (but not overly gloopy.) Start out by adding 4 cups, then work your way up to 6 cups or more.Heat canola oil over medium-high heat. Drop in a bit of batter to see if it's ready: the batter should immediately start to sizzle but should not immediately brown/burn. Insert sticks into hot dogs so that they're 2/3 of the way through. Do the same with the cheese sticks.Dip the hot dogs into the batter and allow excess to drip off for a couple of seconds. Carefully drop into the oil (stick and all) and use tongs or a spoon to make sure it doesn't hit the bottom of the pan and stick. Flip it here and there to ensure even browning, and remove it from the oil when the outside is deep golden brown, about 2 to 3 minutes. Repeat with cheese, allowing it to get as golden as possible so that cheese will melt completely.Serve with spicy mustard.
