The Classic Burger image

Sink your teeth into a delicious restaurant-style, hamburger recipe made from lean beef. Skip the prepackaged patties and take the extra time to craft up your own, and that little extra effort will be worth it. To make cheeseburgers, about 1 minute before burgers are done, top with sliced cheese; continue cooking until cheese begins to melt. Notes: If you want absolute bacteria safety, you need to cook your burgers to 160°. This recipe will keep them moist.

1 pound ground lean (7% fat) beef
1 large egg
1/2 cup minced onion
1/4 cup fine dried bread crumbs
1 tablespoon Worcestershire
1 or 2 cloves garlic, peeled and minced
About 1/2 teaspoon salt
About 1/4 teaspoon pepper
4 hamburger buns (4 in. wide), split
About 1/4 cup mayonnaise
About 1/4 cup ketchup
4 iceberg lettuce leaves, rinsed and crisped
1 firm-ripe tomato, cored and thinly sliced
4 thin slices red onion

Steps:

  • In a bowl, mix ground beef, egg, onion, bread crumbs, Worcestershire, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper until well blended. Divide mixture into four equal portions and shape each into a patty about 4 inches wide.
  • Lay burgers on an oiled barbecue grill over a solid bed of hot coals or high heat on a gas grill (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill. Cook burgers, turning once, until browned on both sides and no longer pink inside (cut to test), 7 to 8 minutes total. Remove from grill.
  • Lay buns, cut side down, on grill and cook until lightly toasted, 30 seconds to 1 minute.
  • Spread mayonnaise and ketchup on bun bottoms. Add lettuce, tomato, burger, onion, and salt and pepper to taste. Set bun tops in place.

  • Mix beef, onion and Worcestershire in a bowl just until combined.
  • Gently shape into 4 patties, about ¾" thick. Using your thumb, create an indent in the center of each burger.
  • Refrigerate at least 20 minutes before cooking.

1 onion (finely chopped)
1 garlic clove (crushed)
500 g beef mince
large handful fresh parsley (finely chopped)
1/2 cup fresh breadcrumbs
1 egg (beaten)
1-2 teaspoons salt (to taste)
black pepper (to taste)
4 slices American/Processed cheese
8 slices bacon (cooked to your preference)
fresh lettuce
ripe tomatoes (sliced)
4 tsp mayonnaise
4 butter-toasted bread rolls

Steps:

  • Fry the onion in a large frying pan in a splash of olive oil until golden brown. Add the garlic and fry for another 30 seconds then remove from the heat. Allow to cool to room temperature.
  • Mix the cooled onions with the beef, parsley, breadcrumbs, egg, salt and pepper. To test the seasoning, fry a teaspoon-full of the mixture in the pan you cooked the onions in. Adjust the seasoning to taste.
  • Divide the mixture into 5-6 (depending on how you big you want the patties), and form patties with wet hands.
  • Place on a tray lined with baking paper and place in the fridge to chill for 30 minutes.
  • When the patties have rested, heat a large cast iron pan/griddle pan until hot then cook the burgers until charred and cooked to your preference. (You can also cook the burgers on a braai/barbecue.)
  • Remove from the heat, top with the cheese and cover with foil for 2 minutes.
  • Top the buns with a generous spoonful of mayo, lettuce, tomato, the patty with cheese and finally bacon.
  • Serve immediately.

1 1/2 teaspoons ground black pepper
1 teaspoon salt
2 teaspoon paprika
1/2 teaspoon brown sugar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper
6 buns (, toasted, if desired)
6 slices cheddar cheese (, or your favorite cheese)
6 Lettuce leaves
1 Beefsteak tomato (, sliced)
1/2 of a Red or white onion (, thinly sliced)
6 Pickle slices

Steps:

  • Make burger seasoning by combining all spices in a bowl. Set aside.
  • Divide ground chuck into 6 equal portions and gently from into 1/2 inch thick patties that are wider than the burger buns (as they will shrink). Use your thumb to press an indentation into the center of each patty. Cover and set aside.
  • Preheat grill to medium high heat. Just before cooking, sprinkle seasoning over the patties, then place on hot grill, indent-side up. Close grill lid and cook for 3-4 minutes, until the bottom of the burger is seared and juices are accumulating on top of the burger. Flip and cook an additional 3-4 minutes or until the beef reaches 160 degrees F.
  • Place cheese on burgers during the last minute of cooking. Remove to a plate and allow to rest for a few minutes before serving in a bun, with toppings.

2 teaspoons salt
1/4 teaspoon freshly ground black pepper
3 ounces cheddar or Monterey Jack cheese, sliced 1/4 inch thick
4 hamburger buns
2 tomatoes (12 ounces), sliced
8 leaves Bibb lettuce (1 small head)
1 small red onion, sliced

Steps:

  • Heat a grill or grill pan to medium high. Season meat with salt and pepper, mix very lightly, and shape into four patties. Grill hamburgers 4 to 6 minutes per side for rare and 9 to 11 minutes for well done. If making cheeseburgers, lay cheese slices on top of the hamburgers after they have been flipped.
  • Serve immediately on buns (toasted, if desired), topped with tomatoes, lettuce, and onion slices.

  • In a large bowl, combine the ground chuck and sirloin and mix gently but thoroughly. Divide into eight equal portions and shape them into burger patties (see opposite for tips). Season both sides with salt and pepper and refrigerate for 30 minutes.
  • Heat a large skillet over medium heat. Split and toast the buns in the pan until toasty and golden brown. Set aside.
  • Remove the burgers from the fridge and place a thumbprint in the center of each patty. Smear 1 teaspoon of the mustard on both sides of each patty (best burger crust ever). Melt the butter in the preheated pan and, working in batches, fry the burgers for 3 to 4 minutes on each side, until a dark brown crust begins to form. The result: perfectly juicy medium-cooked burgers. For folks who prefer their burgers a little more well done, fry for 5 to 6 minutes per side.

  • Heat a barbecue to medium-high heat. Drizzle onion slices with oil, season to taste and grill, turning occasionally, until browned and tender (8-10 minutes). Transfer to a bowl, separate into rings and add vinegar and sugar, season to taste and mix well.
  • Divide mince into 4 and gently form into patties about 1.5cm thick, rotating, cupping and patting the meat so it comes together, but doesn't get too compressed. Make an indentation in the centre of each patty with your thumb (to prevent the patty forming a dome when it cooks).
  • Season patties on one side to taste and barbecue, seasoned-side down, until well browned (2-3 minutes). Turn, top with cheese and grill until cooked to your liking (3-4 minutes for medium).
  • Meanwhile, toast cut sides of buns on the barbecue, spread bases with mustard and top with patties, tomato, lettuce and onion, sandwich with tops and serve.
