24 chicken wings
1/2 cup butter
1 cup hot sauce
Vegetable oil, for frying
8 ounces ranch style dressing
1/4 cup crumbled blue cheese
1/4 teaspoon cayenne pepper

Steps:

  • Cut the tips off the wings and discard. Cut remaining chicken wings in half at the joint. Deep fry wings in about 2 inches of oil in skillet until done. Drain on paper towels. Melt butter and hot sauce together. Dip fried wings into the sauce. Serve with a spicy blue cheese dip or dressing and celery sticks.
  • SPICY BLUE CHEESE SAUCE: In a small bowl mix together all ingredients. Serve with chicken wings.

These are the Ultimate Blue Cheese Buffalo Wings with a chunky blue cheese dip. This is truly the ultimate snack for the upcoming Big Game! Plus, these wings are baked, not fried and they're super crispy!

2 pounds chicken wings
½ teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
¼ cup Lighthouse Chunky Blue Cheese Dressing
¼ cup buffalo sauce
1 cup Lighthouse Chunky Blue Cheese Dressing
½ cup whipped cream cheese
1 cup provolone (shredded)
½ cup blue cheese (crumbled)

Steps:

  • Preheat your oven to 425 F degrees. Line a baking sheet with parchment paper.
  • Wash and pat dry the chicken wings and place them in a large bowl. Season them with salt and pepper and toss well.
  • Arrange the wings in a single layer on the prepared baking pan. Bake for 20 minutes then brush them generously with Litehouse Chunky Blue Cheese Dressing. It's not necessary to brush them on both sides, also it's not necessary to turn the wings over, they will be crispy on both sides.
  • Place the wings in the oven for another 20 minutes or until they are dark golden brown, you'll notice the skin will be very crispy.
  • Transfer the wings to a large bowl and pour the buffalo sauce over them, then toss well. Make sure you do this while they are still warm.
  • While the wings are in the oven you can start preparing the dip by dumping all the dip ingredients together into a medium size bowl and stirring everything together.
  • Transfer the dip to a smaller baking dish (make sure it's oven safe) and bake (in the preheated oven @ 425F) for 10 minutes or until the cheese is bubbly.
  • Serve the wings with dip, alongside veggies, such as carrots or celery sticks and tortilla chips.

In this crunchier take on the classic Buffalo wing recipe the wings are marinated in hot sauce prior to being dredged in spiced flour and deep-fried. An extra coating of flour gives them a beautiful uniform, golden brown appearance and the wonderful crunch evocative of Southern-style friend chicken. This recipe also calls for you to make your own blue cheese dipper sauce, which is quite simple - and fun to experiment with. Try substituting gorgonzola or any other blue cheese you like (Roquefort, Maytag, stilton) and you will be surprised at the results!

30 chicken wings, small wing joint removed
2 cups hot sauce
1/4 teaspoon Worcestershire sauce
Vegetable oil, for frying
1 1/2 cups all-purpose flour
Kosher salt
Cayenne pepper
2 large eggs
1/4 cup whole milk
Oil, for deep-frying
1 cup sour cream
1/2 cup mayonnaise
1 lemon, juiced
1 tablespoon white vinegar
1/4 cup chopped parsley leaves
1 teaspoon minced shallots
1/2 teaspoon minced garlic
1/4 pound blue cheese, crumbled
Celery sticks, for serving

Steps:

  • To make the wings: Place the wings in a glass or other non-reactive bowl and add 1 cup of the hot sauce and Worcestershire. Mix thoroughly, being sure all the wings are coated, cover and refrigerate for a minimum of 30 minutes.
  • Pour the oil for frying in a large pot to a depth of 2 inches and heat over medium heat to 375 degrees F.
  • Place the flour in a separate mixing bowl and season with kosher salt and cayenne pepper to taste. In a separate bowl, prepare an egg wash by whisking together the eggs and milk until well blended. Working with all 3 bowls (wings, flour mixture and egg wash): first dredge each wing in the flour mixture, then dip the wing in the egg wash; and finally dredge the wing completely in the flour mixture, coating it evenly. Deep-fry the wings for 12 to 15 minutes or until the batter achieves a crisp, uniform texture. When cooked through, set aside to drain on paper towels or the nonprinted side of a paper grocery bag.
  • To make the dressing: in a mixing bowl and using a wire whisk, combine the sour cream, mayonnaise, lemon juice, vinegar, parsley, shallots, and garlic, blending until smooth. Gently stir in the crumbled cheese until completely mixed in.
  • To serve, place the fried wings in a large bowl and drench with the remaining 1 cup hot sauce (or less, to taste). Serve with the blue cheese dipping sauce and celery sticks on the side -- and plenty of napkins!

1/2 cup sour cream
1/2 cup crumbled blue cheese
1/4 cup mayonnaise
1 small clove garlic, chopped
1 tablespoon milk or buttermilk
Juice of 1/2 lemon
Kosher salt and freshly ground pepper
Vegetable or peanut oil, for frying
1 cup all-purpose flour
1 tablespoon paprika
3 pounds chicken wings, split at the joints, tips removed
1 1/2 cups Frank's RedHot sauce (or 3/4 cup other hot sauce)
1 stick unsalted butter
2 tablespoons honey

Steps:

  • Make the dip: Pulse the sour cream, blue cheese, mayonnaise, garlic, milk and lemon juice in a food processor until combined but still chunky. Season with salt and pepper. Cover and refrigerate until ready to serve.
  • Make the wings: Heat 1 inch of vegetable oil in a large deep skillet over high heat until a deep-fry thermometer registers 375 degrees F. Set a rack on a rimmed baking sheet.
  • Mix the flour and paprika in a shallow dish. Dredge the wings in the flour mixture to coat, tapping off the excess. Fry the wings in batches, turning as needed, until cooked through and deep golden brown, about 15 minutes. (Return the oil to 375 degrees F between batches.) Remove with tongs and transfer to the rack to drain.
  • Meanwhile, combine the hot sauce, butter and honey in a medium pot over medium heat until the butter melts. Continue to cook, stirring, until the sauce thickens slightly, about 10 minutes. Reserve one-quarter of the sauce for serving. Add the cooked wings to the pot and toss with the remaining sauce. Serve with the blue cheese dip and reserved sauce.

There are a lot of really good recipes with twists and turns, but when I want wings that have that classic, original restaurant-style flavor , I always turn to these. This is my own stand-by recipe. Enjoy!!

WINGS:
1 cup flour
1 tsp. salt
1/2 tsp. cayenne pepper
1/2 tsp. paprika
1/8 tsp. garlic powder
1 (20 ct.) bag party wings and drumettes, thawed
*oil for deep frying
1 stick butter
1/2 cup franks red hot sauce
2-3 cranks fresh ground pepper
1 pinch garlic powder
BLUE CHEESE DRESSING:
1 cup heavy mayo, i always use hellmann's
1 cup sour cream
4 oz. maytag blue cheese crumbled
2 Tbl. fresh lemon juice
1 dash tabasco
*fresh ground salt and black pepper to taste, not too much
*more blue cheese to garnish on top if desired
SERVE WITH:
celery sticks with tops
lots of napkins!

Steps:

  • 1. For wings: In a small bowl mix together the flour, salt, cayenne, paprika and garlic powder. Place chicken wings in a large glass dish or bowl and sprinkle flour mixture over them and toss until they are evenly coated. Cover dish or bowl and refrigerate for 1 hour. (This sets the flour.) Heat oil in a deep fryer or deep pan to 375 degrees. The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving. Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in large bowl, add hot sauce mixture and toss and stir together til coated. Pour onto large serving platter.
  • 2. For blue cheese dressing: In a medium bowl, whisk together ingredients, until the dressing is creamy but still slightly lumpy from the blue cheese. Garnish with extra crumbled blue cheese if desired.
  • 3. A higher quality can be subbed for the Maytag Blue if desired, such as Roquefort or Gorgonzola, but it isn't really necessary for this and Maytag is really quite good.
  • 4. Serve platter of wings, hot, with lots of napkins, blue cheese dressing for dipping, and celery sticks with the tops chilled in a glass or small vase with ice water.

This makes a great dip for buffalo wings! You can add in a couple teaspoons Worcestershire sauce also if desired.

1/2 cup buttermilk
1/2 cup mayonnaise (not salad dressing)
2 -3 fresh minced garlic cloves (I like lots!)
1/2-1 teaspoon onion salt
2 tablespoons olive oil
8 ounces blue cheese, crumbled

Steps:

  • In a bowl, mix sour cream, buttermilk, mayonnaise and onion salt until well blended; add oil, mix again.
  • Crumble blue cheese very finely, and add to buttermilk mixture; stir to mix well.
  • Chill for 4 hours or more (to blend flavors).
  • Serve with salads, as a fresh veggie dip, or spicy Buffalo-style chicken wings (my husband's favorite!).
  • Note: when this dressing is first made, it will appear very stiff, however it will thin out after it chills for several hours, and become just the right consistency for pouring.
