Steps:

  • In a medium sized bowl mix together the flour, salt, and baking powder.
  • In a separate, larger bowl mix together the maple syrup, apple sauce, non-dairy milk, and vanilla.
  • Once the wet ingredients are well incorporated, add the dry ingredients and mix well until combined.
  • Cook according to your waffle iron's directions. We cooked ours on medium heat for about 5 minutes.

1 3/4 cups all-purpose flour
3 tablespoons granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs, yolks and whites separated
1/2 cup oil
1 3/4 cups milk

Steps:

  • Preheat you waffle iron as directed.
  • In a medium mixing bowl, add the flour, sugar, baking powder, and salt. Use a whisk to combine. Make a small well in the center of the dry ingredients.
  • In a second medium bowl, use a hand mixer to beat the egg whites until they form stiff peaks.
  • Add the egg yolks, oil, and milk to the well and use the whisk to slowly combine the wet and dry ingredients. Stir well until very few lumps remain.
  • Fold in the beaten egg whites, taking care not to over mix.
  • Pour the batter into your waffle iron according to manufacturer's directions.
  • When the waffle is done cooking, carefully place it on a wire rack to cool, taking care not to stack the waffles on top of each other. Repeat with remaining batter.
  • Serve waffles hot with your favorite topping such as buttermilk syrup, fruit, or whipped cream.

2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs, separated
2 tablespoons sugar
1/2 teaspoon vanilla extract
4 tablespoons unsalted butter, melted
2 cups milk
non-stick cooking spray

Steps:

  • Preheat the waffle iron according to the manufacturer's instructions. In 1 medium bowl sift together flour, baking powder, and salt. Set aside. In a second bowl use the wooden spoon to beat together the egg yolks and sugar until sugar is completely dissolved and eggs have turned a pale yellow. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine. Combine the egg-milk mixture with the flour mixture and whisk just until blended. Do not over mix. In third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Using the rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix! Coat the waffle iron with non-stick cooking spray and pour enough batter in iron to just cover waffle grid. Close and cook as per manufacturer's instructions until golden brown, about 2 to 3 minutes. Serve immediately.

Steps:

  • Start the night before. Mix dry ingredients and sift. Add remaining ingredients except for eggs. Cover the bowl with plastic wrap and leave out overnight. Room temperature.
  • Come morning, beat in egg yolks to yeast mixture. Beat egg whites with whisk until stiff peaks are made. Fold the egg whites into the mixture with a spoon. Cook for 3 minutes in preheated deep waffle iron.

  • Add Sugar to Egg Yolks. First in a large bowl, put our egg yolks in there, I usually will take two large bowls, crack and separate my eggs, and put the yolks in one bowl and the whites in the other bowl.
  • Add Rest of Liquid Ingredients. Now we add our melted butter, vanilla extract, and our milk. Then using a mixer or whisk, mix it in well.
  • Add Dry Ingredients. Now we add our dry ingredients. I like to use a sifter, but it is not absolutely necessary. First add the flour, then the salt and baking powder.
  • Mix in the Dry Ingredients. Next we use a whisk to mix in the dry ingredients. We don't want to use a mixer at this point, because we don't want to over mix the batter.
  • Whisk the Egg Whites. Now lets whisk our egg whites, until they form nice looking peaks, pretty much just lots of bubbles. I have a whisk attachment for my hand mixer, which works great, or you can use a traditional whisk or fork and beat the whites really well.
  • Fold in the Egg Whites. Next, we just fold in the egg whites. Use a spatula ideally, in the picture I used my whisk, I was too lazy to grab the spatula.
  • Pour Batter Into Waffle Iron. Now just use your favorite waffle iron and complete your waffles. Mine is pretty fancy, it cost close to 80 dollars, but I figured it was worth it, since I make waffles a lot.
  • Toppings. Now for this waffle, I just used the classic maple sugar and powdered sugar. There are all kinds of topping choices that you can use - strawberries, whipped cream, blueberries, chocolate chips, raspberries, blackberries, Nutella, bananas, etc.
