Categories     Breakfast     Dessert

Time 1h20m

Number Of Ingredients 12

2 cups (250 grams) all-purpose flour, spooned & leveled
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup (115 grams) unsalted butter (softened)
1/2 cup (100 grams) granulated sugar
1/4 cup (50 grams) light brown sugar (packed)
2 large eggs (at room temperature)
2 teaspoons pure vanilla extract
2 cups (440 grams) mashed banana
1/2 cup (80 grams) chopped walnuts (optional)

Steps:

  • Preheat the oven to 350°F (177°C). Spray a 9x5 loaf pan with nonstick cooking spray, line the pan with parchment paper, and set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using an electric mixer, mix together the butter, granulated sugar, and brown sugar for 4-5 minutes or until light and fluffy.
  • Mix in the eggs and vanilla, making sure to mix well after each addition. Stop and scrape down the sides of the bowl, then add the mashed banana and mix until fully combined.
  • Add the dry ingredients to the wet ingredients and mix until just combined, making sure not to overmix the batter. Gently stir in the chopped walnuts.
  • Scoop the batter into the prepared loaf pan and spread it around into one even layer.
  • Bake at 350°F (177°C) for 55-65 minutes or until a toothpick inserted into the center comes out clean. Tent with aluminum foil to prevent excess browning if needed.
  • Remove from the oven and allow to cool in the loaf pan for 20 minutes. Carefully remove the bread from the loaf pan and transfer to a wire rack to cool completely.

THE BEST BANANA BREAD

The Best Banana Bread image

We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

Provided by Food Network Kitchen

Time 1h30m

Yield 1 loaf

Number Of Ingredients 13

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

RIDICULOUSLY EASY BANANA BREAD

Ridiculously Easy Banana Bread image

Your bananas need to be ripe for the best, most flavorful homemade banana bread. It is even better if they are overripe, brown, and speckled. A note on pan size: We use an 8 ½-inch by 4 ½-inch loaf pan; if you only have a 9-inch by 5-inch pan, check for doneness 5 to 10 minutes earlier.

Provided by Adam and Joanne Gallagher

Categories     Dessert, Bread

Time 1h15m

Yield Makes 1 loaf, approximately 10 slices

Number Of Ingredients 11

1 ½ cups (195 grams) all-purpose flour
1 teaspoon baking soda
1/4 teaspoon fine sea salt
3/4 teaspoon ground cinnamon
3 medium bananas, heavily speckled and brown bananas are best, about 1 ½ cups mashed
8 tablespoons (115 grams or 1 stick) unsalted butter, melted and cooled
3/4 cup (150 grams) packed light brown sugar
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1/2 cup (50 grams) walnuts, toasted and chopped, optional
1/2 cup chocolate chips, optional

Steps:

  • Center a rack in the oven and heat to 350° Fahrenheit. Butter and flour an 8 ½-inch by 4 ½-inch loaf pan. Alternatively, grease the pan, and then line with a sheet of parchment paper (as shown in the video).
  • Place the pan on an insulated baking sheet or two regular baking sheets stacked on the other. This is optional but helps with even baking.
  • Whisk the flour, baking soda, salt, and cinnamon together, and set aside.
  • In the bottom of a medium bowl, mash bananas into a chunky paste.
  • Whisk the melted butter, brown sugar, eggs, and vanilla into the bananas until well blended.
  • Switch to a large rubber spatula, scrape the sides and bottom of the bowl, and then add the dry ingredients in three parts, stirring until the flour disappears and the batter is smooth. Fold in the nuts and chocolate chips.
  • Pour batter into the prepared pan and smooth the top. Bake 55 to 75 minutes, or until a knife inserted into the center of the bread comes out clean.
  • After 30 minutes in the oven, check the bread for color. If it looks like it is browning too quickly, loosely cover with aluminum foil.
  • Transfer to a wire rack to cool for 5 minutes. Unmold the bread cool completely.

CLASSIC BANANA BREAD

Classic banana bread image

Banana bread is a classic family favorite. Overly ripe bananas contributes to the intense banana-flavor and deliciously moist crumb.

Provided by Alida Ryder

Categories     Breakfast     Snack

Time 55m

Number Of Ingredients 9

½ cup (125g) butter (room temperature)
1 cup (200g) sugar
2 eggs
6 bananas (350g) very soft bananas (mashed)
1 teaspoon vanilla extract
2 cups (250g) flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tsp salt

Steps:

  • Pre-heat the oven to 180ºC/350°F and grease and line a standard size loaf tin (approximatley 20cmx12cm / 9" x 5") with baking paper.
  • In the bowl of a mixer, beat the butter and sugar together until light and creamy. Add the eggs one at a time, mixing well after each addition. Scrape down the bowl with a rubber spatula.
  • Beat in the bananas. At this point, your batter will split and look curdled. Don't be alarmed, the flour will fix that.
  • Add the dry ingredients then mix until just combined.
  • Transfer the batter to the prepared loaf tin and place in the oven.
  • Bake for 45 minutes or until a skewer inserted comes out clean. Cover with foil halfway to prevent over browning.
  • Remove from the oven and allow to cool before removing the banana bread from the tin.
  • Slice and serve.

  • Cut a piece of parchment paper so it fits like a sling into your loaf pan and overhangs over the longer sides of your pan. Spray your loaf pan with cooking spray and then place the parchment paper in so it sticks and then spray the top of the paper as well. (If you’re not sure what this step should look like, see photos in blog post for reference) If you don’t have parchment you can simply spray your loaf pan, or butter and flour it. Set aside.
  • Preheat oven to 350°. Lightly spoon flour into dry measuring cups; level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk.
