BABA GHANOUSH
A roasted eggplant dip or spread. Delicious served with pita or vegetables, alongside hummus or on its own!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
- Place eggplant on baking sheet, and make holes in the skin with a fork. Roast it for 30 to 40 minutes, turning occasionally, or until soft. Remove from oven, and place into a large bowl of cold water. Remove from water, and peel skin off.
- Place eggplant, lemon juice, tahini, sesame seeds, and garlic in an electric blender, and puree. Season with salt and pepper to taste. Transfer eggplant mixture to a medium size mixing bowl, and slowly mix in olive oil. Refrigerate for 3 hours before serving.

- Preheat oven to 375F. Cut each eggplant in half vertically and place on sheet pan. Drizzle with about 1 tablespoon olive oil and season with salt and pepper. Roast for 40-45 minutes until very soft.
- Let eggplants cool before handling. Scoop eggplant flesh out of skins into bowl of a food processor. Add lemon juice, tahini, garlic, olive oil and salt and pepper. Process until smooth. Serve with pita bread or pita chips.
TRADITIONAL BABA GHANOUSH
A traditional recipe for this eggplant dip. It consists of baked eggplant with garlic, lemon juice, and tahini sauce. Dip into this with pita bread and you have yourself a delicious-and-light appetizer.

- Preheat oven to 400 degrees F (200 degrees C). Arrange oven racks so you have one low and one high in the oven.
- Cut a shallow slit along the side of the eggplant and place into a baking dish.
- Roast in preheated oven on the lower rack until the eggplant is completely shrunken and soft, about 40 minutes. Move dish to higher rack and continue baking until the skin is charred, about 5 minutes more. Let eggplant cool until cool enough to handle.
- Peel and discard skin from eggplant. Put eggplant into a bowl; add tahini, garlic, lemon juice, red pepper flakes, and salt. Stir until ingredients are evenly mixed. Drizzle olive oil over the baba ghanoush and garnish with parsley.

- Slit the eggplant and stuff it with garlic. I find this is the best way to induce the lovely garlic flavor into the eggplant.
- Roast the eggplant. You will find that roasting over an open flame will produce a smokier, richer flavor. Eggplant should take 15-20 min to roast it. Remember to keep turning it around to make sure it is cooked evenly. Place the roasted eggplant in a large bowl and cover with cling film. This will help in taking the skin off easily.
- Place the roasted eggplant pulp into a bowl with half of the smoky cooking liquid (sometimes I keep the cooking liquid aside to pour over at the end) Discard the skin and reserve the remaining cooking liquid. Use a fork and/or spoon to mash the eggplant. Add tahini, fresh lemon juice, roasted powdered cumin powder, salt, cayenne pepper and 1 tablespoon extra virgin olive oil to the mashed eggplant. Mix until well combined. Taste the dip. Add additional tahini, lemon juice, salt or cayenne pepper, according to your taste. Serve drizzled with olive oil and fresh parsley!

- 1. Char the eggplants. If using a grill, preheat the grill to medium. If using a gas burner, set the flame to medium. Place the whole eggplant on the grill or over the burner and cook, turning occasionally with tongs, until the flesh is extremely tender and skin is very charred, about 15–20 minutes. If using a broiler, place eggplant on a foil-lined baking sheet and broil until flesh is completely tender and skin is charred, about 20–30 minutes.
- 2. Let eggplant cool, about 15 minutes. Slice eggplant lengthwise and scoop out the eggplant flesh, discarding the skin.
- 3. Set a fine mesh strainer over a bowl and allow the eggplant flesh to drain in the strainer, at least 15 minutes.
- 4. Using a mortar or pestle (or a mixing bowl and fork), mash the eggplant flesh together with garlic, lemon juice, cumin, and paprika to form a chunky dip. (For a smoother baba ganoush, pulse eggplant flesh in a food processor.) Add the tahini and continue to mash or pulse until incorporated.
