Easy Garlic Mayonnaise Aoli Sauce image

I got this from easyFrenchfood.com. I like it because it is simple and easy to make, and goes well with all kinds of vegetables.

Number Of Ingredients 6

1 garlic clove (and certainly more if you wish)
2 pinches salt
2 egg yolks
1 tablespoon lemon juice
1/2 cup olive oil
1/2 cup vegetable oil (or other combination of oils)

Steps:

  • Cut the ends off of the garlic, peel it, and either chop it or put it through a garlic press. Put the garlic in a mortar and pestle with the salt and grind it into a paste.
  • In a heavy mixing bowl, whisk (you can use an electric whisk) the egg yolks, lemon juice, and garlic mixture together until well combined, about one minute.
  • Start adding the olive oil, drop by drop, whisking all the while. You can add it a bit faster as you go along, but as with mayonnaise, the key to success is going very slowly at the start. When you are done adding the oil you can adjust the seasoning as suits your taste.

Aïoli is a Provencal garlic sauce (the name Aïoli is Provençal) used, like a mayonaise, on a variety of dishes, but delicious in fish stews, soups, fresh vegetables and roasted vegetables.

12 garlic cloves, peeled
1/2 liter olive oil
1 egg yolk, raw
1 egg yolk, cooked
2 tablespoons fresh lemon juice, plus more
fresh lemon juice, to taste
salt

Steps:

  • In a mortar, crush the garlic into a fine paste with the salt.
  • Add the egg yolks and salt lightly again if needed.
  • Mix in the olive oil very slowly until you obtain a smooth paste and the mixture is glossy.
  • Add the lemon juice to taste and continue to mix to achieve a smooth emulsified sauce.
